A family who usually passes up molded salads will hunt for this fruity apricot aspic recipe at our covered dish buffet. Not only is this aspic delicious, it adds color to any meal.

Number Of Ingredients 6

2 cans (16 ounces each) apricot halves
Pinch salt
2 packages (3 ounces each) orange gelatin
1 can (6 ounces) frozen orange juice concentrate, thawed
1 tablespoon lemon juice
1 cup lemon-lime soda

Steps:

  • Drain apricots, reserving 1-1/2 cups juice; set apricots aside. In a small saucepan over medium heat, bring apricot juice and salt to a boil. Remove from the heat; add gelatin and stir until dissolved. , In a blender, process apricots, orange juice concentrate and lemon juice until smooth. Add to gelatin mixture along with soda; mix well. Pour into a 6-cup mold that has been sprayed with cooking spray. Chill until firm.

3 ounces fresh goat cheese
2 teaspoons minced fresh basil
2 teaspoons minced fresh chives
2 teaspoons 2% milk
4 fresh apricots, sliced
1/8 teaspoon salt
Dash pepper
2 tablespoons balsamic glaze

Steps:

  • Place goat cheese, minced basil, chives and milk in a mini food processor; process until smooth. Arrange apricot slices on a serving platter. Drop goat cheese mixture by teaspoonfuls over top. Sprinkle with salt and pepper; drizzle with balsamic glaze. Garnish with additional basil leaves. Serve immediately.

I found this recipe in a Southern Living Magazine about 20 years ago. It was for apple fried pies but my mother and I modified it for dried apricots. I don't make these often because it is time consuming to roll out each individual fried pie.

Number Of Ingredients 6

6 ounces dried apricots
1/3 cup sugar
1/2 teaspoon salt
1 cup water, cold
4 cups flour, all-purpose
1 cup shortening

Steps:

  • Place apricots in a medium saucepan; add water to cover.
  • Cover pan and cook over low heat 15 minutes or until tender.
  • Mash appricots, and add sugar; set aside.
  • Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal.
  • Sprinkle cold water (1 Tablespoon at a time) evenly over surface; stir with a fork until dry ingredients are moistened.
  • Shape into a ball and chill.
  • Divide dough in half.
  • Roll one portion to 1/8" thickness on a lightly foured surface; cut into 3 1/2-inch circles.
  • Spoon aout 1 teaspoon apricot filling on half of each pastry circle, moisten edges and fry.

This has always been my favorite salad. It's kind of like eating seafood cocktail, but better with the creaminess of mayonnaise. I usually use canned seafood for this, well drained, but it's great with fresh if you have it. Great in the summer. Try it! Passive cook time is chill time.

1 (1/16 ounce) package lemon Jell-O gelatin
2 cups tomato juice, heated till hot
0.333 (1/4 ounce) package unflavored gelatin
2 tablespoons lemon juice
1 tablespoon vinegar
2 tablespoons Worcestershire sauce
1 teaspoon horseradish
1 cup celery, chopped
1 cup scallion, chopped
1/2 cup green bell pepper, chopped
1 cup crabmeat (may used canned)
1 cup baby shrimp (may use canned)
1 cup mayonnaise, for frosting (to your taste)

Steps:

  • Dissolve lemon jello in hot tomato juice.
  • Dissolve 1/3 package unflavored gelatin in 1 tablespoon cold water.
  • Mix gelatin, vinegar, lemon juice, horseradish and worcestershire with the tomato juice mixture and let stand until it begins to thicken. (Just let it cool down.).
  • Add celery, scallions, green bell pepper, crab and shrimp.
  • Pour into 9X13 glass dish.
  • Chill until set, overnight is best.
  • Before serving, "frost" with mayonnaise, or serve the mayo alongside.
  • Enjoy!
