4 INGREDIENT LAYERED APRICOT ANGEL FOOD CAKE
Light and fluffy angel food cake layered with a creamy apricot filling

Steps:
- Prepare cake acoording to directions on box. Bake cakes in 2 9 inch loaf pans.
- While cakes are cooling, prepare filling.
- Beat cream cheese and 2/3 cup of the apricot jam until blended.
- Fold in whipped cream.
- When cakes are cool, slice in half.
- Spread 1/2 creamy filling on to one half of cake.
- Place the other half of cake on top, and spread the rest of the creamy filling on top.
- Gently smooth the other 1/3 cup apricot jam over the top.
- Refrigerate, covered, for at least 1 hour before serving.
PEACH ANGEL DESSERT
This light and lovely dessert is absolutely heavenly! Marge Hubrich of St. Cloud, Minnesota suggests, "Try this with fresh strawberries, raspberries or blueberries, too, using the corresponding flavor of gelatin. It's delicious with any of them."

- In a small saucepan, combine sugar and cornstarch. Gradually whisk in water and corn syrup until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Cool to room temperature, stirring several times., Cut angel food cake into nine slices. Line an ungreased 13-in. x 9-in. dish with the slices; set aside. In a large bowl, beat cream cheese and confectioners' sugar until smooth. Gradually beat in milk., Set aside 1/3 cup whipped topping for garnish. Fold remaining whipped topping into cream cheese mixture; spread over cake. Top with peaches. Pour gelatin mixture over peaches., Cover and refrigerate for at least 4 hours. Cut into squares. Top each piece with about 1 teaspoon of reserved whipped topping. Refrigerate leftovers.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or use parchment paper.
- In a medium bowl, cream together the 1/2 cup shortening, cream cheese and milk until well blended. Stir in the brown sugar and 1/4 cup of apricot preserves. Combine the flour, baking powder, cinnamon and salt; stir into the batter. Mix in the pecans last. Drop by rounded spoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
- To make the frosting, combine the confectioners' sugar, remaining apricot preserves and 1 tablespoon shortening; mix well. Frost cooled cookies and sprinkle with coconut if desired.

Steps:
- Combine lemon cake mix, apricot nectar, sugar and oil in large bowl.
- Beat for 3 minutes.
- Add 1 egg at a time, mix after each one.
- Pour mixture into greased and floured pan.
- (you can use either a bundt or rectangle 13" x 9" pan) Bake at 325* for 1 hour or until done.
- (check a few times toward the end, don't want it to dry out.) Cool right side up 5 minutes then remove from bundt pan or leave in rectangle pan.
- Mix 1 cup powdered sugar and enough lemon juice to make a glaze.
- Pour over still warm cake to make a glaze over top and let it drizzle down the sides.
