1 package (6 ounces) apricot or orange gelatin
2 cups boiling water
1 can (20 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
1 can (15 ounces) apricot halves, drained and chopped
1/2 cup chopped walnuts
1 carton (8 ounces) frozen whipped topping, thawed
Additional chopped walnuts, optional

Steps:

  • In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice. Add pineapple to gelatin and set aside. In a bowl, beat cream cheese and pineapple juice until smooth. Stir in gelatin mixture; chill until partially set, stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. pour into a 13x9-in. dish. Sprinkle with walnuts if desired. Chill until firm.

  • In a large bowl, add yogurt to gelatin; stir 2 minutes to completely dissolve. Gently stir in whipped topping, then marshmallows and apricots. Refrigerate until firm, at least 4 hours.

1 can (8 ounces) unsweetened crushed pineapple
2 packages (3 ounces each) apricot or peach gelatin
1 package (8 ounces) reduced-fat cream cheese
3/4 cup grated carrots
1 carton (8 ounces) frozen fat-free whipped topping, thawed

Steps:

  • Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. Set pineapple aside. Pour juice mixture into a small saucepan. Bring to a boil; remove from heat. Dissolve gelatin in juice mixture. Cool for 10 minutes. , In a large bowl, beat cream cheese until creamy. Gradually add gelatin mixture, beating until smooth. Refrigerate until slightly thickened, 30-40 minutes., Fold in pineapple and carrots, then whipped topping. Transfer to an 8-cup ring mold coated with cooking spray. Refrigerate until set. Unmold onto a serving platter.

This yummy salad has fruit and vegetables both in it and is topped with a delicious sour cream/cream cheese mixture with cinnamon in it. Make ahead so it can set and pull it out at meal time.

1 (6 ounce) box orange gelatin (I prefer Jello)
1 7/8 cups water
1/8 cup Grand Marnier
8 ounces dried apricots, chopped
1/4 cup dried cranberries (Craisins)
1 (16 ounce) can mandarin oranges, with juice
1/2 cup carrot, curls
2 oranges, juice of
1/2 cup cold water
1 (8 ounce) package cream cheese
1 (8 ounce) container sour cream
1/2 cup sugar
1 tablespoon cinnamon
1 tablespoon dry coconut powder

Steps:

  • Bring the water and grand marnier to a boil and pour over the gelatin in a large bowl. Stir till gelatin dissolves.
  • Add the dried apricots and cranberries and let sit and cool for about 5-10 minutes.
  • Using a potato peeler, make thin strips using one or two carrots so that you have 1/2 cup of carrot curls.
  • Add the can of mandarin oranges with juice, the carrot strips, juice of two oranges and 1/2 C cold water.
  • Stir, let set in a bowl or mold of choice in the refrigerator.
  • Blend the topping ingredients well.
  • After jello has set, spread on top. Serve and enjoy!

The secret ingredient is baby food. This looks so pretty on the table. The color is fabulous. It's also great for Thanksgiving.

1 (6 ounce) package orange flavored Jell-O® mix
1 (20 ounce) can crushed pineapple with juice
½ cup white sugar
1 (8 ounce) package cream cheese, softened
2 cups frozen whipped topping, thawed
1 cup chopped pecans
1 (4 ounce) jar apricot baby food

Steps:

  • Mix orange-flavored gelatin with pineapple in a small saucepan. Cook over low heat until gelatin is completely dissolved. Remove from heat and stir in sugar. Cool completely.
  • In a medium mixing bowl, using a mixer on medium speed, beat gelatin mixture, baby food, cream cheese and whipped topping. Blend well. Stir in nuts. Spoon into serving bowl, cover, and refrigerate at least four hours.

One-Hour Apricot and Almond Galette image

A luxurious almond cream makes this one-hour summer stone fruit dessert taste like an all-day labor of love.

1/2 cup almonds, preferably blanched
1/3 cup sugar, plus more for sprinkling
1 large egg
4 tablespoons unsalted butter, room temperature
1/2 teaspoon almond extract (optional)
1/2 teaspoon vanilla extract
Pinch of kosher salt
1 tablespoon all-purpose flour, plus more for surface
1 package frozen puff pastry, preferably all-butter, thawed
12 apricots (about 1 1/4 pounds), halved, pitted, or other stone fruit, quartered if large

Steps:

  • Place a rack in middle of oven; preheat to 425°F. Pulse almonds and 1/3 cup sugar in a food processor until very finely ground. Add egg and pulse to combine. Add butter, almond extract (if using), vanilla extract, salt, and 1 Tbsp. flour; pulse until almond cream is smooth.
  • Roll out pastry on a lightly floured surface just to smooth out any creases.
  • If you're using a package of pastry that has 2 sheets, stack and roll out to a 1/4"-1/8"-thick rectangle.
  • If your package contains a single 16x10" sheet of puff pastry, halve it crosswise and roll out one half on a lightly floured surface until rectangle is 1/4"-1/8" thick; save remaining half for another use. Transfer to a parchment-lined baking sheet. Fold over edges of pastry to make a 1/2" border around all sides. Prick surface all over with a fork (this keeps the pastry from rising too much when baked and helps it cook through). Spread almond cream over pastry, staying inside borders. (Chill dough in the freezer for a few minutes if it becomes too soft to work with.) Set apricots, cut sides up, on top of almond cream. Sprinkle lightly with sugar.
  • Bake galette until pastry is golden brown and puffed, 15-20 minutes. Reduce oven temperature to 325°F and continue to bake until pastry is deep golden brown and cooked through and apricots are softened and browned in spots, 15-20 minutes longer.
  • Do Ahead:
  • Almond cream can be made 3 days ahead. Cover and chill.

1 1/4 cups freshly squeezed orange juice

  • Pour the apricot mixture into four individual dishes and chill until set. to serve, pour a thin layer of cream over.
