VEGAN APPLESAUCE MUFFINS



Vegan Applesauce Muffins image

Quick and easy applesauce muffins to enjoy as a quick pre-workout snack or a perfect afternoon treat! You'll love the soft, moist texture and delicious cinnamon apple flavour of these yummy vegan muffins.

1 1/2 cup unsweetened applesauce (300 ml)
2/3 cup maple syrup, organic (160 ml)
1/3 cup refined coconut oil, melted (80 ml)
2 teaspoon vanila (10 ml)
1 1/2 cup whole wheat flour (230 g)
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2 tsp cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup quick oats (50 g)
1 granny smith apple, peeled, cored and diced (150 g)
2 tablespoon brown sugar (optional, for topping)

Steps:

  • Preheat oven to 350 F and prepare 12 pc muffin pan with muffin liners for later.
  • In a medium bowl combine all wet ingredients (applesauce, maple syrup, coconut oil and vanilla) and set aside. In a large bowl place all your dry ingredients (everything except diced apple) make a 'well' in the centre of the bowl and pour in your wet ingredients. Using a spatula fold the wet and dry ingredients together until well combined.
  • Add your diced apples and mix until fully incorporated.
  • Using a large spoon or ice cream scoop, evenly distribute muffin mix into prepared muffin tins.
  • For an optional crunchy top sprinkle brown sugar on to each muffin top before placing in the oven.
  • Place in a preheated oven and bake for 20 minutes, or until a toothpick can be inserted in the centre of the muffin and come out clean. When ready remove from the oven, lift out of the pan and place on the cooling rack for 10 minutes. Once muffins are cooled, enjoy!

Roasted Buttercup Squash Glazed With Balsamic Agave Nectar image

Not only healthy but delicious and a great accompaniment for a main meal or for your holiday table. I also love eating this on it's own as a light lunch in which case I sometimes omit the butter (good without it too).

1 buttercup squash (butternut will also work)
4 tablespoons agave nectar
3 tablespoons good quality balsamic vinegar
2 -4 tablespoons butter (melted)
fresh ground black pepper, to taste
sea salt, to taste

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Grease a roasting pan or cookie sheet (with rims) with oil spray or olive oil.
  • Cut top and bottom end from butternut squash. Place flat end (that you've cut) of squash on cutting board and cut in half top to bottom.
  • With a spoon, scrape seeds out as well as webby silk, making sure that inside of squash is clean and void of all seeds and silk. Cut the squash in half-moon slices about 1" wide, keeping cut slices to the same thickness.
  • Place squash on roasting pan on their sides (pulp side down). Spacing slices evenly.
  • Mix together Agave nectar, balsamic vinegar and melted butter. Brush buttercup slices evenly. Note that only about half or less of the amount will be used. Reserve remaining balsamic/agave nectar.
  • Roast squash for approximately 15 minutes. Turn slices over to opposite side. Brush with remaining balsamic agave nectar. Roast 15 - 20 minutes more or until squash pierces easily with fork and is cooked through.
  • Season with ground black pepper and sea salt to taste. Serve while hot.

Adapted from Recipe# 156338. Went to the pantry and saw that I was out of whole wheat flour. Then I felt creative and wanted to add other things... This was the result. I still was planning to play with the receipt a bit more and add whole wheat flour or something, but the family liked these so much and ate them so fast, I changed my mind. Instead of rice flour I would think another flour would work fine, such as all-purpose, whole wheat, whole wheat pastry or other. I made these small and got 18 muffins, but I like them small. Then I can have two. ;)

3 very ripe bananas
1/2 cup honey (I prefer the agave nectar) or 1/2 cup agave nectar (I prefer the agave nectar)
2 tablespoons canola oil
3 tablespoons flax seed meal
3/4 cup all-purpose flour
3/4 cup brown rice flour
1 teaspoon vanilla extract
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup rolled oats
1/3 cup applesauce
2/3 cup chopped walnuts
1/2 teaspoon cinnamon

Steps:

  • Preheat the oven to 350 degrees.
  • Mash the bananas and mix in the honey (or agave nectar), oil, applesauce and vanilla.
  • In a separate bowl mix together the flours, baking soda, salt, flax meal and cinnamon.
  • Mix together the wet and dry ingredients.
  • Fold in the nuts and oats.
  • Spoon into oiled muffin tins, filling about 2/3 full. Bake at 350 for 15-20 minutes. The flax meal makes these muffins turn out a very dark brown.

2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg, beaten
1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.
  • Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.

1 1/2 cups unsweetened applesauce
1 cup agave nectar
1 slightly beaten egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder

1 cup white flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon (or more to taste)

Steps:

  • Mix the applesauce, nectar, egg and butter together. Set aside.
  • In a separate bowl, mix together baking soda, baking powder, salt and flours.
  • Mix wet and dry ingredients all together. (Never over mix muffins.).
  • Pour into greased muffin tins, and bake in 350 degrees oven for approximately 30 minutes. Muffins are done when a toothpick stuck in the middle comes out clean.
  • Do not over fill muffin tins as these muffins tend to spread out instead of rising up.
