3/4 cup sugar
3/4 cup packed brown sugar
1/2 cup unsweetened applesauce
1/4 cup canola oil
3 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1-3/4 teaspoons apple pie spice
1 teaspoon baking soda
1/2 teaspoon salt
3 medium apples, peeled and finely chopped
1 cup chopped walnuts, toasted
GLAZE:
1-1/2 cups confectioners' sugar
1 teaspoon grated orange zest
2 to 3 tablespoons orange juice

Steps:

  • Preheat oven to 325°. Coat a 10-in. fluted tube pan with cooking spray; dust with flour, tapping out extra., Beat first six ingredients until well blended. In another bowl, whisk together flour, pie spice, baking soda and salt; gradually beat into sugar mixture. Fold in apples and walnuts. Transfer to prepared pan., Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 10 minutes before removing to a wire rack; cool slightly., Mix confectioners' sugar, orange zest and enough juice to reach a drizzling consistency. Spoon over warm cake.

1 cup granulated sugar
1 cup applesauce, chilled
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease an 8-inch square pan with butter or margarine and dust with flour to prevent the cake from sticking.
  • In a large bowl, beat the butter or margarine and sugar at medium speed until pale yellow and fluffy, about 1 to 2 minutes. (This process is called creaming the butter and sugar.)
  • Beat in the applesauce until combined. Stir in the flour, baking soda, ground cinnamon, and ground cloves.
  • Add in the raisins and walnuts.
  • Pour the batter into the greased or lined pan and bake for 40 minutes.
  • Let the cake cool in the pan, about 10 minutes, before slicing. Serve warm. Enjoy!

1 cup (2 sticks) unsalted butter, room temperature
2 cups packed light-brown sugar
1/4 cup honey
2 large eggs
2 cups Basic Applesauce, or store-bought chunky applesauce
Nonstick cooking spray
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
  • In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
  • Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
  • Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.

1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour

1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. ½ cup dates, pitted and chopped

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.

  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

1 cup applesauce
2 cups self-rising flour

1 cup chopped raisins
1 1/2 cups water
1/2 cup honey
1 1/2 tablespoons lemon juice

Steps:

  • Preheat the oven to 350 degrees. Spray an 8x8 pan.
  • Cream the butter in a large bowl; while still beating, stream in the honey. Mix in the applesauce.
  • Combine the dry ingredients and mix into the applesauce mixture and beat 30 seconds.
  • Fold in the nuts and raisins.
  • Bake 40 minutes or until the cake springs back in the center and a toothpick comes out clean. While the cake is baking, prepare the raisin glaze.
  • In a saucepan, combine the water and chopped raisins. Bring to a boil; add honey, reduce heat, and simmer 15 minutes. Remove from heat and add lemon juice. While cake is still warm, pierce cake with a fork (the end of a wooden spoon is too large). Spoon the glaze over the cake.

6 large eggs, room temperature, separated
1-1/4 cups sugar, divided
1/3 cup orange juice
2 tablespoons grated orange zest
1-3/4 cups all-purpose flour

ORANGE GLAZE:
1 cup water
1/2 unpeeled orange, finely chopped
1/4 cup sugar
1/2 cup confectioners' sugar
1 tablespoon butter

Steps:

  • In a large bowl, beat egg yolks until slightly thickened. Gradually add 3/4 cup sugar and beat until thick and lemon-colored. Blend in orange juice and zest. Sift together flour and salt; add to batter. Beat until smooth. In another bowl, beat egg whites until soft peaks form. While beating, add the remaining sugar, 1 tablespoons at a time. Beat until stiff. Fold 1/4 of the egg whites into the batter; then fold in remaining whites. Spoon into an ungreased 10-in. tube pan, smoothing top. Bake at 350° for 40 minutes or until tester inserted in the center of the cake comes out clean. Invert pan over a narrow-neck bottle to cool. , Meanwhile, for glaze, combine water, chopped orange and sugar in a small saucepan. Bring to a boil. Cook until very thick and almost all the water has evaporated. Remove from the heat and blend in confectioners' sugar and butter. Run a knife between the pan and cake. Turn out onto a platter. Spread warm glaze over the top and sides of cake.
