SWEET POTATO, BACON AND APPLE HASH
Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl, add the sweet potatoes, drizzle with olive oil and sprinkle with salt, to taste. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven and reserve.
- Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the sweet potatoes, and saute until the sweet potatoes are cooked through and starting to become crispy, about 7 to 8 minutes.
- Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.

APPLES, POTATOES, AND BACON
Steps:
- Put a pan of water on to boil. Scrub the potatoes and cut them into large pieces, drop them into the boiling water and cook for ten minutes, then drain. Roughly crush the juniper berries. Cut the apples into quarters and remove the cores.
- Warm the butter in a shallow pan with the olive oil, then add the crushed juniper berries, apples and drained potatoes. Keep the heat low to moderate and the pan partially covered with a lid. Baste from time to time. As the apples and potatoes edge towards tenderness, add the back bacon to the pan and let it cook in the appley butter. Season with salt, coarsely ground black pepper and half the chopped parsley.
- When the potatoes are golden and the apples soft, remove everything from the pan on to warm plates. Tip away any fat, but not any delicious crusty bits stuck to the pan, then spoon in the crème fraîche and mustard. Bring to the boil, stirring constantly, then spoon over the bacon and apples.
SAUTEED POTATOES WITH APPLES
Another gem from "Harlem Really Cooks", and is actually a side dish to recipe #298577. It's a refreshing change of pace for those who are tired of applesauce with their pork chops.

Steps:
- Fill large saucepan with cold water; place potatoes in water as you peel them.
- Bring to a boil over high heat; cook for 15 minutes.
- Remove from pan, drain and let cool; once cooled, cut into pieces and set aside.
- Combine the butter and oil in a large skillet over low heat. Once melted, add scallions and potatoes. Saute' until golden brown (approx 8 min.). Use your spatula to scrape up brown bits from potatoes.
- Add the apples; cover and cook for 2 minutes, shaking the pan constantly to prevent sticking and burning.
- Remove cover and stir, once again scraping the brown bits from the bottom of the pan. Cook for another 5 minutes, until potatoes and apples are tender.
- Add salt, pepper and place into serving bowl.
- Serve with pork chops and sauteed Swiss chard.

- In a large nonstick skillet, heat oil until hot but not smoking over medium-high heat. Add the apple, onion, and bacon and cook, stirring frequently, until the apple and onion are softened and the bacon is lightly crisped, about 7 minutes.
- Stir in the broth and potatoes and bring to boil. Reduce to a simmer, cover and cook until the potatoes are tender, about 10 minutes.
- Meanwhile, in a small bowl, stir together the vinegar, honey, mustard, cornstarch, salt, pepper and 2 tablespoons of water. Stir the vinegar mixture into the skillet, bring to a boil, and cook, stirring constantly, until the mixture is slightly thickened, about 1 minute. Stir in beets and dill weed and cook until the beets ae just warmed through, about 1 minute longer.

- 1. Heat oven to 425°. Place bacon on lined sheet pan. Place the bacon in the oven to cook.
- 2. While the bacon is cooking. Wash and diced potatoes into 1 to 2 inch chunks. I left the skins on. Peel and core the apples. Cut and dice them into one to two inch chunks as well. Place potatoes in a large pot with water and boil. Boil until they are halfway cooked through.
- 3. Add the apples to the water with the potatoes. Cook until potatoes are tender. Drain and set aside.
- 4. Remove bacon from oven drain on paper towel. Fry the onion in 1-2 tablespoons of butter until it is caramelized. Remove from pan and set aside.
- 5. Melt 5 tablespoons of butter in pan. Be careful not to brown it. Toss the potatoes and apples with the butter coating well. Salt and pepper the potatoes to your liking. Toss with the parsley and Thyme. Add in the onion and combine all together.
- 6. Pour into the large casserole dish. Top with crumbled bacon. Bake at 400° for about 20 to 30 minutes, or until top is lightly browned. Serve!
MAPLE SWEET POTATOES WITH APPLE AND BACON
This was in an email from Trader Joe's for the holidays. (Best little store ever!) I made it today for Thanksgiving and it's delicious! Putting on here to share and for safe keeping. One note: My sweet potatoes took quite a bit longer to roast and be tender so just check them and cook until they are done. I might have used too small a pan because I had to stir them and keep cooking past the time.

- Toss potatoes with oil and salt. Roast at 400' about 20 minutes or until tender.
- Cook bacon over medium heat in a large pot. Add onions once fat starts to render. Cook until bacon is crisp and onions are translucent.
- Add apples to pot and cook 2 more minutes (I cooked longer to caramelize the apples a bit).
- Add potatoes and cook approximately 5 minutes, or until soft (Again, I cooked longer to get a bit of caramelizing on the potatoes).
- Toss with maple syrup and serve.
- Note: I roasted the potatoes the night before and just put them in the fridge so I wouldn't tie up the oven for Thanksgiving dinner.

- For the bacon and herb salt, heat the oven to 200°C/180°C fan/gas 6. Line a roasting tray with foil, lay out the bacon rashers and cook for 20-25 minutes, turning once, until completely crisp. Five minutes before the end of cooking, sprinkle over the sage and rosemary leaves. Once everything is crisp, pat dry with kitchen paper and remove to a wire rack to cool.
- Put the crisp bacon, cooked and fresh herbs and salt into a food processor or mini chopper, and whizz (or pound with a pestle and mortar) to coarse crumbs. Put in an airtight container and set aside.
- Put the potatoes in a pan of well-salted boiling water and cook at a brisk boil for about 10 minutes until nearly cooked (you don’t want them too soft but the longer you dare leave them, the crisper they’ll be once roasted). Drain, leave to steam for a minute, then return to the pan. Add the flour and some salt and toss gently, trying not to break them up. Meanwhile, put the goose fat into your largest available roasting tin. Heat in the oven until the fat has melted and is starting to spit.
- Remove and carefully scatter the potatoes into the tin, tossing in the hot fat to coat. Roast for 50-60 minutes, turning occasionally. Add the apple wedges after 20 minutes. They’re ready when the potatoes are crisp and golden and the apples are caramelised and chewy. Scatter a little herb and bacon salt over the top just before serving (see tip).
