APPLE WALNUT SNACK CAKE
Our state has many outstanding apple orchards. I've tried many apple recipes and this is one of my favorites. It's great for company.

Steps:
- In a bowl, combine the eggs, sugar, milk and vanilla. Combine the flour, cinnamon, baking powder and salt; add to egg mixture and mix well. Stir in the apples and walnuts. Transfer to a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. Cut into squares. Serve with whipped topping if desired.

- In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, cinnamon, salt and nutmeg; gradually add to creamed mixture and mix well. Fold in the apples, toffee bits and walnuts. , Transfer to a greased 13x9-in. baking dish. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Serve with ice cream if desired.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Grease and flour a tube pan or large bunt pan
- 3. In a large bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy. Beat in eggs one at a time. Stir in vanilla.
- 4. In another bowl mix flour, baking soda, spices and salt together thoroughly.
- 5. Combine wet and dry ingredients. Bake for 45 minutes or until tooth pick comes out clean. Cool for 10 minutes then turn onto a wire wrack to complete cooling process.
FRESH APPLE SPICE CAKE
Steps:
- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

- Heat oven to 150C/130C fan/gas 2. Line two 20cm cake tins. Put the flour, cinnamon and bicarbonate of soda in a big bowl, then stir in the sugars, making sure there are no lumps of sugar. Add the oil, eggs and apples, and beat everything together. Fold in the walnuts then divide the mixture between the tins and bake for 45 mins or until a skewer comes out clean. Allow to cool for a few mins in the tin then remove and cool completely on a wire rack.
- For the icing, beat all the ingredients together then chill until the mixture is thick but spreadable. Spread half the icing on top of one cake, sandwich with the other and spread the remaining icing on top

- Butter a 9x5x3-inch pan.
- Preheat oven to 350 degrees F (175 degrees C).
- Cream butter, add sugar slowly, and continue to beat until light and lemon-colored.
- Beat in eggs.
- Sift flour with salt, baking soda, and baking powder.
- Add to the butter mixture alternately with the buttermilk, beginning and ending with the dry ingredients.
- Stir in the apples, nuts, and vanilla.

- Preheat oven to 350F degrees.
- Spread pie filling in bottom of ungreased 13x9 pan.
- Combine flour, baking soda& salt; sprinkle over pie filling.
- In a separate bowl, combine eggs, vanilla, oil& 1/2 cup of the walnuts; mix well.
- Pour over ingredients in pan; stir only until blended,& smooth batter evenly.
- Bake 40-50 minutes or until cake springs back when lightly touched in center.
- While cake is baking, combine topping ingredients in a sauce pan.
- Cook over medium heat, stirring constantly until mixture comes to a boil; remove from heat.
- When cake is done, remove from oven& immediately prick with a fork all over.
- Pour hot topping over hot cake, sprinkle with remaining walnuts.
- Serve warm.
