TOFU NOODLE BOWL
Fresh ginger gives this soup its big, bright flavor. If you can't find udon noodles, feel free to use any thick wheat noodle, such as linguine.

Steps:
- Cook noodles according to package directions. Drain and divide among 4 large bowls.
- Put broth, dashi powder, mirin, and ginger in an 8-qt. pot and bring to a boil over high heat. Reduce heat to a simmer; add carrots, 1/2 cup green onion, and the tofu. Cook until tofu is heated through, about 3 minutes. Add cabbage and bean sprouts and cook until just wilted, about 2 minutes. Divide among the bowls and garnish with green onion.
- *Find fresh udon in refrigerated section, and dashi (Japanese soup stock) powder and mirin in Asian-foods aisle of most grocery stores.

SUNSET MAGAZINE NOODLE BOWL
My mom used to make this when I was younger. I haven't made it before but I remember it being delicious.

Steps:
- In a 4 to 5 quart pan bring 3 quarts water to boiling on high heat. Add vermicelli and cook, uncovered until tender to bite.
- Drain and cover pasta with cold water. When cool, drain pasta and divide into 4 to 6 serving portions.
- In the same pan combine broth, soy sauce, peanut butter, sugar, vinegar and chili oil, and stirring occasionally with a whisk, bring to a boil on high heat.
- Add sesame oil and pour broth into a soup bowls. While broth is very hot invite each person to add a portion of pasta and desired condiments to soup bowl.
- Condiments: hard cooked eggs, sliced; cooked ham cut into strips; tiny cooked shrimp; large carrot shredded, cucumber thin sliced, edible pea pods; green onions; water chestnuts; and BBQ pork (purchased from chinese food takeout store).

SPICY STEAK NOODLE BOWL WITH SESAME SOY DRESSING
Steps:
- Heat a medium skillet over medium-high heat. Rub the steak with 1 tablespoon of the sesame oil and sprinkle generously with salt. Cook the steak until browned and medium-rare, 3 to 4 minutes per side. Remove to a plate, cover with foil and let rest for 5 minutes.
- Meanwhile, whisk together the garlic, soy sauce, vinegar, gochujang and the remaining 1 teaspoon sesame oil in a small bowl.
- Arrange the cabbage, spring onions, noodles and peanuts in two serving bowls.
- Thinly slice the steak against the grain and divide between the bowls. Pour the sesame dressing over the top and garnish with cilantro leaves.
SUNNY'S SUNSET PARK NOODLE BOWL
Steps:
- For the beef: In a large pot on medium-high heat, add the oil. When it begins to glisten, add the beef, red chile flakes, salt and onions all at once. Cook, stirring constantly, until the beef is done, 5 to 8 minutes. Remove to a plate, leaving the bits and fat in the pot.
- For the soup: Add the stock, beer and gochujang to the pot and stir to combine. Heat until the mixture begins to simmer, then add the ramen noodles. Cook until the noodles are tender but not mushy, about 3 minutes.
- Pour the soup into 4 wide bowls. Mound on equal amounts of ramen noodles and beef. Top each with an egg and scallions. Serve with a lime wedge for spritzing.
ONE POT NO-BAKE LASAGNA FROM SUNSET MAGAZINE
This looks like it could satisfy a lasagne craving at the drop of a hat. I'm going to try baking it, just to see what happens, and will report back then.

- Remove and discard sausage casings.
- In a 4- to 5-quart nonstick pan over high heat, combine sausages, onion, and garlic. With a spoon, break meat into small pieces and stir often until mixture is browned, about 15 minutes.
- Meanwhile, break the lasagna into 2- to 3-inch pieces.
- To pan, add broth, 2 cups water, tomatoes (with juice), tomato sauce, basil, oregano, and lasagna. Boil, stirring often, until pasta is tender to bite, about 15 minutes.
- Ladle into wide bowls and sprinkle with cheese and parsley.

CHICKEN DAN-DAN NOODLES
This recipe came from Sunset Magazine, March 2016. My husband and I had a great time making this for dinner - messed up the whole kitchen, but the end result was well worth it ! With a little better planning I bet we can be a little neater next time, because we Will be making this one again.

Steps:
- Bring a large pot of water to boil and add noodles, stir to separate and cook until tender, 5 to 8 minutes or according to package instructions. Drain and rinse with cold water.
- Meanwhile, thoroughly mix ginger, garlic, cornstarch, soy sauce, and chicken in a bowl.
- In another bowl, whisk together broth, peanut butter, vinegar, chili garlic sauce,chili oil and sesame oil.
- Heat a large, not nonstick, frying pan over high heat and swirl in canola oil. Add green onions and chicken mixture, stirring to break up the meat, until chicken is lightly browned and no longer pink, 4 to 5 minutes. Add bell peppers and stir for 1 minute. Add the chicken broth mixture, stir until slightly thickened, 2 minutes.
- Add snow peas and noodles to pan. With tongs, toss just until the snow peas are brighter green and noodles are well combined and heated through, 1 to 2 minutes. Add 1/4 cup peanuts and toss. Top with more green onions and remaining peanuts and serve with more green onions and remaining peanuts and serve with more chili garlic sauce and chili oil.
- Note: we did not add the peanuts to the dish while cooking, instead added the chopped peanuts to the plated dish along with the green onions at the table as desired.

- Boil soba in boiling water for 5-8 minutes; drain and rinse with cold water and then drain again.
- While noodles are cooking, mix together wasabi and 1 tablespoon cold water in a small bowl or cup.
- Let stand 5 minutes and then add the soy sauce and lemon juice and set aside.
- In a large salad bowl toss together the spinach, noodles, green onions, shrimp, ginger and dressing.

KOREAN BEEF SALAD
I got this from a Sunset magazine about 15 years ago and having lost it and found it several times, I'm finally putting it in here for sanity's sake! The recipe calls for sliced deli roast beef, but I've used leftover steak or roast and it's great. The veggies can be played with too--cucumbers, sliced bell peppers, halved cherry tomatoes, bean sprouts have all worked well. It's very refreshing and no cooking! Prep time doesn't include the marinating time. (I've marinated it for about an hour, and that's still enough time)

- Mix first six ingredients in large bowl until sugar dissolves. Add beef and toss to coat. Marinate for up to four hours.
