APPLE CRANBERRY PHYLLO TURNOVERS

Apple Cranberry Phyllo Turnovers image

Provided by Ellie Krieger

Categories     dessert

Time 55m

Yield 8 servings (serving size 1 turnover)

Number Of Ingredients 10

4 Granny Smith apples, peeled, cored and cut into 1/4-inch slices (about 1 1/2 pounds)
1/3 cup dried cranberries
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1 pinch ground nutmeg
1 teaspoon cornstarch dissolved in 1 tablespoon cold water
6 sheets phyllo dough, thawed
3 tablespoons canola oil
4 ladyfinger cookies, crushed, divided
Cooking spray

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large nonstick pan cook the apples, cranberries, sugar, cinnamon and nutmeg over medium heat stirring occasionally until the fruit is tender, about 10 minutes. Stir in the cornstarch mixture and cook for another 2 to 3 minutes, until the juices in the pan thicken. Set aside to cool.
  • Lay a sheet of phyllo onto a large cutting board and brush the dough with oil. Top with a second sheet and brush with oil. Sprinkle half the crushed cookies on top. Add another sheet of phyllo and brush with oil. Cut the phyllo into 4 long pieces. Put a small mound of the apple mixture about 1-inch from the bottom of 1 section and fold the phyllo over the mixture into a triangle-shaped pocket. Continue to fold to maintain the triangle shape so a turnover is formed. Repeat with the other 3 sections. Repeat the whole process again with 3 more sheets of phyllo so that you wind up with 8 turnovers. Be sure to reserve a little oil to brush the top of each turnover.
  • Spray a baking sheet with cooking spray, place the turnovers on the sheet, brush the tops with the remaining oil and bake for 20 to 25 minutes or until nicely browned. Serve warm.

APPLE TURNOVERS

Apple Turnovers image

Provided by Ina Garten Bio & Top Recipes

Time 40m

Yield 8 servings

Number Of Ingredients 11

1 teaspoon grated orange zest
3 tablespoons freshly squeezed orange juice
1 1/4 pounds tart apples, such as Empire or Granny Smith (3 apples)
3 tablespoons dried cherries
3 tablespoons sugar, plus extra to sprinkle on top
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch kosher salt
1 package (17.3 ounces, 2 sheets) frozen puff pastry, defrosted
1 egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the orange zest and orange juice in a bowl. Peel, quarter, and core the apples and then cut them in 3/4-inch dice. Immediately toss the apples with the zest and juice to prevent them from turning brown. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.
  • Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square. Cut each sheet into 4 smaller squares and keep chilled until ready to use.
  • Brush the edges of each square with the egg wash and neatly place about 1/3 cup of the apple mixture on half of the square. Fold the pastry diagonally over the apple mixture and seal by pressing the edges with a fork. Transfer to a sheet pan lined with parchment paper. Brush the top with egg wash, sprinkle with sugar, make 2 small slits, and bake for 20 minutes, until browned and puffed. Serve warm or at room temperature.

APPLE TURNOVERS

Apple Turnovers image

Not sure how to make apple turnovers? Give this traditional recipe a try. It makes a dessert that's both tender and flaky, with apple pie-like filling and a thin, white glaze. I freeze the extra turnovers and warm them up in the microwave. They're great with coffee. -Dorothy Bayes, Sardis, Ohio

APPLE TURNOVERS USING PHYLLO DOUGH RECIPE - (3.8/5)

Apple Turnovers using Phyllo Dough Recipe - (3.8/5) image

Provided by MJH

Number Of Ingredients 12

Apple filling Ingredients:
4-5 medium apples(I usually use granny smith),diced, quite small
1-2 TBS butter (you can use a bit more or you can omit altogether)
2 tsp lemon/orange peel
1/4 cup -1/3 cup sugar (depending how tart your apples are...)
1 tsp vanilla extract
1 TBS cornstarch
1/4 tsp - 1 tsp cinnamon, or to taste
You will also need:
1/2 pack of phyllo sheets
1/2 stick of butter (more or less), melted
powdered sugar for dusting

Steps:

  • Peel and dice apples. In a medium saucepan, add apples,sugar,vanilla,orange/lemon peel, cinnamon and cornstarch. Heat on med-low stirring every so often . Cook for about 5 minutes or until the apple mixture thickens. Remove from heat. Set aside to cool. Remove phyllo dough from package and have a damp towel ready so you can keep the phyllo sheets covered as you work. They tend to dry out very quickly. Melt butter. Using a pastry brush, brush one phyllo sheet. Fold in half(vertical)and brush again. Fold again to form a long strip. Brush again with butter. On one edge, add about 1 1/2 TBS of apple filling. Roll in the form of a triangle...just like you would fold a flag. Brush the outside of the triangle phyllo turnover with extra butter. Place apple turnovers onto a cookie sheet... I like to use parchment paper. Bake in preheated oven at 375 deg F...for 15 minutes or until nicely golden brown. Check after about 10 minutes so that they won't burn. Oven temps vary. Let cool and sprinkle with powdered sugar.

APPLES IN PHYLLO

Apples in Phyllo image

This is the BEST (non-chocolate) dessert I have ever made. I must credit the idea for the recipe to my boss's husband, Harold. When I made these for the family at Christmas time, I had a hard time convincing everyone that I actually made them and didn't buy them from a pastry shop (and I'm known for my desserts)! Please try them...they are EXCELLENT!

Provided by MMers

Categories     Dessert

Time 48m

Yield 18 bundles

Number Of Ingredients 11

18 sheets phyllo dough (1 box contains 20)
3/4 lb butter, melted
1 1/2 cups ground walnuts
7 medium granny smith apples, peeled, cored and chopped
1/3 cup lemon juice
3/4 cup dried cranberries
5/8 cup brown sugar
5/8 cup maple syrup
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon mace

Steps:

  • Mix apples with lemon juice to prevent browning.
  • Mix in remaining ingredients below apples.
  • Follow directions on phyllo package to keep sheets from drying out.
  • Cut phyllo sheets in half lengthwise (not crosswise).
  • Working quickly, place one cut sheet of phyllo on damp towel (short end towards you) and brush sparingly with melted butter.
  • Sprinkle with 2 teaspoons walnut crumbs.
  • Place another half sheet over the first, brush with melted butter.
  • Place 1/2 cup of filling on short end of phyllo approximately 2 inches from edge.
  • Add some of the juice from the filling as you make each bundle (don't worry if it leaks a little as you roll).
  • Fold end over filling, roll once then fold in both sides by one half inch.
  • Roll to other end.
  • Press side seams and place on a baking sheet which has been sprayed with Pam.
  • Cover with damp towel.
  • Repeat with remaining phyllo dough and filling.
  • One large baking sheet should hold 9 bundles.
  • Once tray is full, brush each bundle with melted butter and bake in preheated 400 degree oven for about 24 minutes.
  • Make second tray while first one is baking.
  • As soon as bundles are done, remove from oven and tilt baking sheet.
  • Brush the run-off juice over each bundle while still warm.

APPLE TURNOVERS

Apple turnovers image

Treat family and friends to these moreish apple turnovers. With an apple and cinnamon filling encased in puff pastry, they're delicious served with ice cream

Provided by Katie Hiscock

Time 1h10m

Number Of Ingredients 8

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

APPLE STRUDEL TURNOVERS

Apple Strudel Turnovers image

The pastry chefs at Spago make fresh strudel dough, but we call for packaged phyllo here. For the breadcrumbs, finely grind crustless white sandwich bread in a processor, then toast the crumbs in a 350°F oven until dry, about 10 minutes. You'll need two 14-cube ice-cube trays for the filling.

Provided by Sherry Yard

Yield Makes 8 to 10 servings

Number Of Ingredients 13

2 1/4 pounds Braeburn or Fuji apples (about 6 medium), peeled, cored, cut into 1/2-inch cubes
1/3 cup fresh lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground white pepper
1 1/4 cups (2 1/2 sticks) unsalted butter
1/3 cup water
2 tablespoons (packed) golden brown sugar
2 tablespoons mild-flavored (light) molasses
28 13x9-inch fresh phyllo pastry sheets or frozen, thawed (about 3/4 pound)
1 1/4 cups lightly toasted fresh breadcrumbs
Vanilla ice cream

Steps:

  • Mix apple cubes and lemon juice in medium bowl. Mix 1 cup sugar, cinnamon, ginger, and white pepper in small bowl to blend. Melt 1/4 cup butter in heavy large skillet over medium-high heat and stir constantly until butter browns, about 3 minutes. Add 1/3 cup water, then sugar mixture and cook until syrup turns deep amber color, stirring constantly, about 4 minutes. Mix in brown sugar and stir until dissolved. Add apple cubes with lemon juice; cook until juices are thick and spoon leaves path when drawn across bottom of pan, about 13 minutes. Add molasses and stir to blend. Divide apple mixture equally between two 14-cube ice-cube trays. Freeze until frozen, at least 4 hours. (Frozen apple cubes can be prepared 1 month ahead. Cover; keep frozen.)
  • Melt remaining 1 cup butter in heavy small saucepan over medium-low heat. Stack 14 phyllo sheets on work surface. Trim phyllo stack to form 13x8-inch rectangle. Cut stack in half lengthwise, forming two 13x4-inch stacks; place on top of each other. Cover with plastic wrap, then damp kitchen towel. Repeat with remaining 14 phyllo sheets, forming second stack. Place 1 phyllo strip on work surface. Brush lightly with melted butter. Sprinkle with 1 teaspoon breadcrumbs. Top with second phyllo strip. Brush lightly with melted butter; sprinkle with 1 teaspoon breadcrumbs. Remove 1 frozen apple cube from ice-cube tray; return remaining cubes to freezer. Place frozen apple cube on lower short end of prepared phyllo strip. Turn bottom right corner of strip over apple cube so that bottom edge lines up with left side. Continue folding up phyllo, flag-style, creating triangle and enclosing apple cube. Brush triangle with melted butter; place on rimmed baking sheet and transfer to freezer. Repeat with remaining pastry strips and apple cubes. (Turnovers can be made 2 weeks ahead. Cover; keep frozen.)
  • Preheat oven to 400°F. Bake strudel turnovers on rimmed baking sheets until golden brown, about 13 minutes. Serve strudel turnovers warm with vanilla ice cream.
