Apples and cinnamon go together like peanut butter and jelly. It's no wonder my kids love this scrumptious cinnamon roll apple pie recipe that uses a shortcut ingredient to make a deliciously fun crust. -Barbara Curran, Lebanon, New Jersey

1 tube (12.4 ounces) refrigerated cinnamon rolls with icing
FILLING:
5 cups thinly sliced peeled tart apples (about 5 medium)
2 tablespoons lemon juice
3/4 cup sugar
1/4 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
TOPPING:
1/3 cup graham cracker crumbs
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
3 tablespoons cold butter

Steps:

  • Preheat oven to 400°. Refrigerate icing from cinnamon rolls. Separate cinnamon rolls; press onto bottom and up the sides of an ungreased 9-in. deep-dish pie plate. Bake 7-9 minutes or until set. Cool on a wire rack. Reduce oven setting to 350°., For filling, in a large bowl, toss apples with lemon juice. In a small bowl, mix sugar, flour, cinnamon and nutmeg. Add to apple mixture; toss to coat. Pour filling into prepared crust., For topping, in a small bowl, mix cracker crumbs, brown sugar and flour; cut in butter until crumbly. Sprinkle over filling. Bake 40-45 minutes or until filling is bubbly and topping is golden brown. Cover top loosely with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack., Just before serving, place reserved icing in a microwave-safe bowl; microwave, uncovered, 10 seconds or until softened. Drizzle over pie.

Very yummy, cake-like buns that are great for a summer's day picnic. The apples really make them moist and fruity. With some spices I could imagine them to be nice in winter time, too.

125 ml milk, plus
2 tablespoons milk, for coating
100 g soft butter
250 g flour
10 g active dry yeast
80 g sugar, plus
2 tablespoons sugar, for sprinkling
500 g apples (preferrably sour in taste-e.g.elstar)
1 pinch cinnamon

Steps:

  • For the yeast dough heat the milk in a small saucepan at low heat. Add 70 g of butter.
  • Combine flour, dry active yeast and 30 g sugar in a bowl and mix using a whisk. Add the lukewarm butter-milk-mixture. Using the dough hooks knead into a smooth dough (first on low power than on highest power). Takes approximately 5 minutes.
  • Cover and set aside for 40 mins to allow the dough to rise.
  • For the filling peel the apples and cut into pieces of 1/2 cm.
  • Melt 30 g butter in a saucepan. Add apples, 50 g sugar and cinnamon. Bring to a boil, cover and simmer for approximately 5 mins on low heat. Allow to cool.
  • Sprinkle the dough and your working surface with flour. Knead dough again and roll out into a rectangel of approximately 32 by 40 cm. Spread with the apple-mixture (if your apples are very moist, hold back any excess liquid). Be careful to leave a rim of 2 cm on the shorter sides.
  • Roll up the dough starting at the shorter side.
  • Slice the roll into 8 slices. Place them onto a lined baking sheet. Cover, place in warm surroundings and allow to rise for 15 minutes.
  • Spread the swirls with milk, sprinkle with sugar and bake in the preheated oven at 200 °C for 25 minutes.

30 mini apples
40 individually wrapped caramels, unwrapped
8 tablespoons milk
1 1/4 packages chocolate candy melts (recommended: Wilton Chocolate)
1/4 package vanilla flavored candy melts, color of your choice (recommended: Wilton Chocolate)

Steps:

  • Line a baking sheet with a silicone mat or parchment paper. Remove the stem from each apple and press a wooden stick into the top. Put the caramels and milk in a microwave safe bowl. Microwave for 4 minutes, stirring once. Add more time in 30 second increments, if needed.
  • Roll each apple quickly in the caramel sauce until well coated and shake to remove the excess. Arrange on the baking sheet to set. Cool for 30 minutes.
  • Melt the chocolate candy melts in a double boiler. Dip the cooled apples into the chocolate and return to the baking sheet. Cool for 30 to 45 minutes.
  • Fill a microwavable squeeze bottle halfway with colored vanilla flavored candy melts and microwave it in 30 second increments, squeezing the bottle to distribute the heat. Drizzle on the cooled apples and decorate with a bow when completed.

320ml milk (any milk will work), plus an extra splash
50g cold butter, cut into cubes
500g strong white bread flour, plus extra for dusting
7g sachet fast-action dried yeast
2 tbsp light brown soft sugar
vegetable oil, for proving
3 medium eating apples, peeled, cored and cut into 1cm cubes
knob of butter
2 tbsp light brown soft sugar
100g butter, softened
100g light brown soft sugar
2 tsp vanilla extract
1 tbsp cinnamon
150g soft cheese
150g icing sugar
large pinch of cinnamon
3 tbsp canned caramel

Steps:

  • Prepare the dough for the buns the day before you want to bake them, if you have time - this will develop a better flavour. Warm the milk in a pan until steaming but not boiling. Add the butter and swirl the pan for 1-2 mins until the butter has melted and the milk cooled slightly. It should be just warm.
  • Put the flour in a large bowl, or the bowl of a stand mixer. Add the yeast and sugar to one side of the bowl, then ½ tsp salt to the other. Whisk together, then pour in the warm buttery milk. Mix until the ingredients form a soft dough (it should be a little sticky), then tip onto a lightly floured work surface and knead by hand for 8-10 mins, or keep the stand mixer going for 5 mins or so. The dough will feel stretchy and soft when it's ready - you should be able to pull it apart without it breaking straightaway (this means the gluten has been developed). Lightly oil a bowl, add the dough and cover. Leave to rise at room temperature for a few hours, or until the dough has doubled in size. Or, chill overnight.
  • To make the apple filling, cook the apples, butter, sugar and 1 tbsp water in a pan for 5-10 mins until soft and sticky. Add a splash more water if the pan looks dry or the sugar starts to burn. Leave to cool.
  • If the dough has been chilled, take it out of the fridge 30 mins before shaping. For the cinnamon butter, mix the butter, sugar, vanilla and cinnamon together with a pinch of salt. Tip the dough onto a lightly floured surface, shape into a rough rectangle, then roll out until it's about 50 x 40cm. Spread the cinnamon butter over the dough and all the way out to the edges. Spoon over the apple filling.
  • Working from one of the longer sides, roll the dough up as tightly as you can into a sausage shape. Cut into 12 equal pieces. To easily do this, first cut the dough in half crosswise, then cut each half into three pieces, then halve each piece. Line a large round baking dish or cake tin (about 33cm) with baking parchment. Arrange the buns, cut-side up, in the dish or tin. Make sure the tails of the buns (where the dough opens) are tucked in towards the middle of the tin, so they don't unfurl when baked. Leave some space around each bun, as they will expand as they prove. Cover loosely and leave to rise for 30 mins-2 hrs (depending on how hot your kitchen is) until the buns are puffed up and touching at the sides. Heat the oven to 200C/180C fan/gas 6.
  • Bake for 35-40 mins until golden. Check the buns after 25 mins - if they still look a little doughy at the centre but the edges are burning, cover with foil and continue baking. Leave to cool in the tin while you make the icing.
  • Mix the soft cheese, icing sugar and cinnamon together. Spread over the buns while still slightly warm, so the icing drips into the swirls of the buns a little without melting completely. Loosen the caramel with a drop of milk, if needed, then drizzle over the icing. Leave to set for 30 mins before serving.

1/4 cup sugar
2 teaspoons cinnamon
1 package yellow cake mix
1 2/3 cups applesauce
3 eggs

Steps:

  • Blend the sugar and cinnamon.
  • Preheat oven to 350 degrees.
  • Grease a 10 inch tube pan and dust it with 1 T of the cinnamon sugar mixture.
  • Save remainder for cake.
  • Blend cake mix, applesauce and eggs until moistened.
  • Then beat as directed on cake mix package.
  • Reserve 1 1/2 cup batter.
  • Pour remaining batter into prepared tube pan.
  • Sprinkle batter in pan with remaining cinnamon sugar mixture.
  • Top with reserved batter.
  • Bake for 35-45 minutes or until cake tests done.
  • Cool cake in pan top side up for 15 minutes.
  • Invert on serving plate and serve.
