1 unbaked 9-inch pie shell, frozen, preferably a name brand
3 large granny smith apples, peeled, cored, and thinly sliced
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon flour
1 cup flour
1 teaspoon cinnamon
1/2 cup packed light brown sugar
1/2 cup butter, softened

Steps:

  • Preheat oven at 375 degrees with a cookie sheet on the center rack. Mix peeled and sliced apples in a large bowl with sugar, salt, cinnamon, nutmeg, and flour.
  • Pour apple mixture into frozen pie crust.
  • Make the streusel crumb topping by mixing together with a fork in a medium bowl the flour, cinnamon, and light brown sugar. Then mix in the softened butter with a fork, stirring and blending until the mixture resembles crumbs.
  • Top the pie with the crumb topping, place on the cookie sheet in the preheated oven and bake for 40 - 45 minutes until the crust is a deep golden brown and the filling bubbles.
  • Remove from oven, cool 30 minutes and serve warm with ice cream and caramel ice cream topping drizzled over pie, if desired.

"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). 3 large fall apples (Cortland or McIntosh are both great)
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon pure vanilla extract
1/4 cup cold butter (4 tbls. or 1/4 cup)
1/2 cup flour
1/3 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon ground nutmeg (optional)

Steps:

  • Preheat oven to 350°.
  • Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
  • Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
  • Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
  • Serve and enjoy!

½ cup packed brown sugar
½ cup all-purpose flour
1 cup chopped pecans
9 apple - peeled, cored and sliced
¼ cup white sugar
1 tablespoon all-purpose flour

2 recipes unbaked pie shells

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Prepare the topping by combining the butter, brown sugar, flour and chopped pecans. Cut in all ingredients with pastry cutter until pea-sized. Set aside
  • Combine the apples, sugar, flour and cinnamon. Toss gently together and set aside.
  • Place apple mixture in unbaked pie shells. Heap the apples up high in each shell and fill completely. Sprinkle topping on top of each.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes. Do not allow topping to get too dark.

9-inch store-bought frozen deep-dish pie crust

Crumb Topping
2 tablespoons softened butter
1/3 cup flour
1/3 cup well packed brown sugar
Good sprinkling of cinnamon

Flour & Sugar Mixture
1/2 cup granulated sugar
1/4 cup well packed brown sugar
1/4 cup flour
1/2 teaspoon ground cinnamon (spread it around)
1/2 teaspoon ground nutmeg
Dash of salt

8 cups peeled and cored apples each cut into 6 slices (6-8 small apples)
2 tablespoons softened butter

Steps:

  • Transfer the pie crust from the tinfoil pan to the CENTER of a 10-inch glass pie dish. Set aside to thaw.
  • Make the crumb topping: In a bowl, mash butter, flour, brown sugar and cinnamon together to resemble crumbs and then set aside.
  • Make flour & sugar mix: In a bowl, stir ingredients together until all one color (beige) and set aside.
  • Prepare the apples: Into a bowl, peel, core and slice a few apple slices, stir and cover well with the flour & sugar mixture as you go. Once all are cut and covered, set the apple bowl aside.
  • Making the pie: Squoosh the pie crust thinly to fit the pan (you can use your fingers to do this), and then put the crust in the freezer for exactly 5 minutes. Meanwhile, heat oven to 425F degrees.
  • Put 2 tablespoons softened butter into a large skillet over medium heat. When butter melts, empty the bowl of sugared apples on top of the butter, and cook for exactly 5 minutes, stirring occasionally. Take pie crust from the freezer and put in the hot oven for the same 5 minutes you are cooking the apples.
  • When timer rings for the 5-minutes of the pie crust in the oven, remove pie crust from oven and pour apples from the skillet into the pie crust. Make sure apples form a flat surface as a base for the crumb topping. Pour crumb topping onto apples, making sure to cover all the apples, otherwise apples may burn.
  • Return the pie to the oven, and set the timer for EXACTLY 30 minutes.

FOR THE CRUST
1 1/3 c all purpose flour
3/8 tsp salt
1 tsp sugar
1/4 tsp baking soda
1/3 c cooking oil
2 Tbsp ice water
FOR THE FILLING
4 large tart apples, peeled, cored, sliced about 1/2 inch
1 Tbsp cooking oil
3 Tbsp apple juice
3/4 c sugar
2 Tbsp all purpose flour
1 pinch salt
1/2 tsp cinnamon
FOR THE TOPPING
1/4 c all purpose flour
1/4 c dark brown sugar
1/4 tsp cinnamon
4 tsp cooking oil
FOR THE GLAZE
1/2 c powdered sugar
1+ tsp water

Steps:

  • 1. In a medium bowl, mix the dry ingredients for the crust. Add the oil and use a pastry blender to work in. Add the ice water and stir with a fork just until the dough starts to come together.
  • 2. Press the dough pieces in to a 9 inch pie pan using your fingers. Cover the pie crust with non-stick foil (non-stick side touching dough). Fill the foil covered crust with dry beans or pie weights.
  • 3. Bake the crust in a 425 degree oven for 10 minutes. Reduce the heat to 375 degrees and bake 10 minutes longer. Remove from oven and cool a bit before carefully removing the foil and beans.
  • 4. While the crust is baking, prepare the apples. In a large fry pan heat the 1 Tbsp oil (med/hi heat) and saute the apple slices for about 7 minutes. Stir often. Add the apple juice and cook 1 -2 more minutes and remove from heat. Fold in the sugar and other dry ingredients, which have been pre-mixed. Set aside.
  • 5. For the streusel topping, mix the ingredients and set aside.
  • 6. Assemble the pie by filling the cooled pie crust with the apple filling and using a fork to distribute the apples evenly. Sprinkle the streusel topping evenly over the apples. Cover the crust with a pie shield to protect from burning.
  • 7. Bake pie in a 375 degree oven for 35 minutes. Reduce the heat to 325 degrees and bake an additional 20 minutes.
  • 8. Remove pie from oven and cool on a rack for 20-30 minutes. Prepare the glaze by adding enough cold water to the powdered sugar to achieve just the right consistency to drizzle over the baked pie.
  • 9. Cool pie completely (about 3 hours) before serving. This pie is perfect without whipped cream or ice cream.

6 tbsp margarine (or vegan butter)
1 pinch of sea salt
2 pounds apples ((about 5, peeled and cored))
1/2 cup brown sugar (or coconut sugar)
2 tbsp tapioca flour (or arrowroot flour or cornstarch)
1 tbsp lemon juice (or lime juice)
3/4 - 1 tbsp cinnamon
1/4 cup of raisins ((optional))
A few drops of rum extract ((optional))

Steps:

  • First, prepare the flax eggs by combining the ground flaxseed and water and set aside for five minutes.
  • Then, add al the ingredients for the pastry into a food processor and blend until it starts to clump and form a dough.If you don't have a food processor, simply add all ingredients for the pastry to a bowl and use your hands to knead the dough until it clumps together.If the dough appears too dry, add a tiny bit of cold water or more vegan butter.
  • Roll the dough into a ball, wrap it in clingfilm and place it into the fridge. Refrigerate for about 30 minutes.
  • Meanwhile, peel and core the apples and chop them into slices (approximately 0.2 inches / 0.5 cm thick). Add the apples and all other "Filling Ingredients" to a large pot and stir to combine over medium heat. Let simmer for about 2 minutes and turn off the heat. Taste it. If you think it's not sweet enough, add more sugar to taste.
  • Preheat the oven to 360 degrees F (180 degrees C) and brush an 8-inch pie pan (or a springform) with either coconut oil or margarine (or vegan butter). Set aside.
  • Remove the dough from the fridge and set around 1/3 of it aside to use as the streusel topping. Roll out the remaining dough and fit the pie crust to the bottom of the pan, large enough to go about 2-inches (5 cm) up the sides of the springform.Instead of rolling out the dough, you can place the dough ball in the pan and spread it out with your fingers.
  • Add the filling and crumble the streusel on top.

Steps:

  • Peel and core the apples. Use a sharp knife or mandolin to slice the apples into very thin, uniform pieces.

  • For crust:
  • Position rack in center of oven; preheat to 400°F. Place rimmed baking sheet in bottom of oven to catch spills. Place sheet of parchment paper on work surface; lightly flour parchment.   • Bake pie until topping is golden, about 40 minutes. Reduce oven temperature to 350°F. Bake until apples are tender when pierced with small sharp knife, covering pie loosely with foil if topping and crust are browning too quickly, about 1 hour longer. Cool pie on rack until slightly warm, at least 1 hour. Serve warm or at room temperature.
