This Apple Sponge Eve's Pudding is a delicious Traditional British Apple Sponge Dessert. Often made with Bramley Apples. Dessert Apples will work just as well. With no need for additional sugar.

3 large dessert Apples (approx. 500g of weight)
115 g butter (softened)
115 g caster sugar
2 medium eggs
¼ teaspoons Vanilla extract
115 g self raising flour

Steps:

  • Butter the sides and base of a medium-sized ovenproof dish measuring approx. 20cm/8" x 14cm/5.5" x 6cm/2.5" deep.
  • Preheat the oven to 170 deg fan assisted.
  • Peel and core the apples. Slice them into chunks. Gently stew with 2 tablespoons of water for a few moments until softened.
  • Pour the stewed apples into the prepared dish.
  • In a separate bowl, beat together the butter and sugar until light and fluffy. Scrape down the sides of the bowl as you go along.
  • Gradually add the eggs, one at a time, adding a little flour in between to help prevent curdling. Mix until well combined.
  • Add the vanilla extract and remaining flour. Mix until well combined. Do not over beat as you will over stretch the gluten in the flour.
  • Pour the cake batter evenly over the top of the stewed apples.
  • Bake in the centre of the oven for 40 mins. Or until baked. Testing the centre of the sponge in various places, with a skewer until it comes out clean.

6 large Bramley apples, finely sliced
200g unsalted butter
140g raisins
100g soft brown sugar
4 eggs
200g self-raising flour

Steps:

  • Heat oven to 180C/160C fan/gas 4. Peel, core and slice the apples. Grease a large serving dish, about 2.5 litre/3 litre with 25g/1oz of the butter and tip in the apple. Scatter the raisins over the top.
  • In a separate dish beat the remaining butter and sugar together for 10 mins until the butter turns pale and the sugar starts to dissolve. Beat in the eggs, then carefully fold in the flour with a large spoon. Spread the batter over the apples, then bake for 45 mins until golden. Serve with the custard, below.

Eve's pudding is a deliciously comforting combination of stewed apples and sponge. Serve with plenty of custard or cream.

2 large cooking apples (about 500g/1lb2oz in total)
1 tbsp lemon juice
20g/¾oz butter
2 tbsp caster sugar
75g/3oz butter
100g/3½oz caster sugar
100g/3½oz self-raising flour
2 free-range eggs, lightly beaten
1 tbsp boiling water
cream or custard

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Peel, core and roughly chop the apples. Add the apples to a saucepan with the lemon juice and 2 tablespoons water. Stir, cover and cook briskly for five minutes until the apples are soft.
  • Add the butter and caster sugar and stir. Then transfer to a 900ml/1½ pint capacity ceramic gratin dish, about 5cm/2in deep. Leave to cool while you prepare the topping.
  • For the topping, cream together the butter and caster sugar until fluffy and light.
  • Fold the flour and egg in alternate spoonfuls into the sugar mixture until blended, being careful to keep folding rather than stirring energetically - this will keep air in the mixture and fold in. Add a spoonful of boiling water to the mix.
  • Spoon the mixture over the apples. Cook in the oven for 30-35 minutes or until the topping is puffy and golden. Serve with cream or custard.

Try the famous and much-loved Apple Sponge Pudding (Eve's Pudding) recipe! This iconic British pudding consists of a sweet stewed apple base topped with a light and fluffy Victoria sponge.

6 (approx 750g) apples
50 g caster sugar (or brown sugar)
2 tbs water
125 g butter (softened to room temperature)
1/2 cup (110g) caster sugar
1 tsp vanilla extract
2 eggs
1 cup (150g) self raising flour
1/4 cup (60g) milk

Steps:

  • Preheat oven to 175 degrees celsius (fan-forced). Grease a 6 cup capacity baking dish and set aside.
  • Peel, core and chop the apples into chunks. Place into a saucepan over medium heat with the sugar (50g) and water. Cook for 8-10 minutes or until the apple has just started to soften.
  • Drain the excess liquid and then spoon the apple into the base of the prepared baking dish. Set aside.
  • To make the sponge pudding, cream the butter and sugar with hand-held beaters or a stand-mixer until pale and creamy.
  • Add the vanilla extract and one of the eggs and beat through. Add the remaining egg and beat to combine.
  • Sift in the self raising flour and beat on low speed until combined.
  • Slowly add the milk while beating on low speed. Once combined, spoon the sponge mixture over the top of the stewed apples.
  • Bake for 30 minutes or until golden on top and cooked through.
  • Serve immediately with ice-cream, cream or custard.
  • Preheat oven to 175 degrees celsius (fan-forced). Grease a 6 cup capacity baking dish and set aside.
  • Peel, core and chop the apples into chunks. Place the apple chunks into the Varoma dish and sprinkle the 50g of sugar over the top. Fill the Thermomix bowl with 500g water and cook for 10 minutes, Varoma temperature, Speed 2 or until the apple has just started to soften.
  • Drain any excess liquid from the apple chunks and then spoon into the base of the prepared baking dish. Set aside.
  • To make the sponge pudding, clean and dry the Thermomix bowl.
  • Place sugar and butter into the Thermomix bowl and and mix for 15 seconds, Speed 5.
  • Add the eggs and vanilla extract and mix for 15 seconds, Speed 5. Scrape down sides of mixing bowl with spatula, then mix for a further 10 seconds, Speed 5.
  • With the blades turning on Speed 2, slowly alternate adding the self-raising flour and the milk through the MC hole. Mix until combined and then spoon the sponge mixture over the top of the stewed apples.
  • Bake for 30 minutes or until golden on top and cooked through.
  • Serve immediately with ice-cream, cream or custard.
