APPLE AND CARROT CHRISTMAS PUDDING
This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It's wonderful served with rum or cranberry sauce. For variations, try lemon or chocolate sauce. You can also line the mold with pecan halves or cranberries before filling. Be creative and add Christmas decorations to the plate before serving. The sky is the limit.

- Combine the carrots, apples, raisins, and bread crumbs in a bowl. Sift together the flour, baking powder, cinnamon, baking soda, salt, nutmeg, and allspice in a separate small bowl. Cream together the butter, sugar, and eggs in a separate large bowl; stir in the flour mixture. Add the carrot mixture and mix well. Transfer mixture to a lightly-greased, 2-quart mold.
- Place a steamer rack in the bottom of a large, deep pot. Set the filled mold on top of the steamer rack. Pour enough water into the bottom of the pot to cover the bottom 2/3 of the mold. Bring to a boil over medium heat. Reduce heat to low; cover. Simmer for 2 hours 45 minutes, adding water occasionally to maintain the water level. Remove from water and allow to cool 10 minutes before turning out of mold onto a plate.

PLUM PUDDING

- Sift together the flour, salt, baking soda and spices. Mix together the rest of the ingredients, except the egg whites, adding just the yolks. Whip the egg whites until stiff and fold into the batter. Grease a pudding mold dredged with sugar and pour in batter. Cover the mold with its lid or cover tightly with foil. Steam for 3 to 4 hours, depending on the size of your mold. Serve hot with hard sauce. If you are not serving the pudding immediately, store in the refrigerator soaking in 1 ounce of brandy. Add 1 ounce each week.
- Serve with warmed Hard Sauce.
- Cream the butter in an electric mixer until pale in color. Add the sugar and mix well. Add the flavorings and mix in then adjust, to taste.

- Heat oven to 200C/fan 180C/gas 6. Using a sharp knife, score a line around the equator of each apple. Put them into a baking dish with a small splash of water in the bottom.
- In a bowl, combine the ginger, cinnamon, prunes and sugar. Stuff the mixture into the apples so that they are well packed. Top each with a knob of butter and bake for 35-40 mins, or until cooked through. To test, pierce with a sharp knife - it should slide straight through. The apples can be cooked up to a day ahead, then warmed through in the oven or microwave before eating.
- Remove from the oven and baste the apples with the liquid left in the dish. Serve hot or warm with the ice cream.

Steps:
- Pour milk over bread cubes.
- Beat egg yolks with 1/2 cup sugar, salt and nutmeg; add lemon rind, juice and melted butter.
- Pour mixture over bread and milk.
- Mix and pour into well-greased 9-x9-x2-inch baking dish.
- Place dish in a pan of hot water.
- Bake at 350 degrees for 45 minutes.
- Beat egg whites with cream of tartar until soft peaks form.
- Add 1/4 cup sugar and beat until stiff.
- Remove pudding from oven and spread meringue on top.
- Place peach halves over meringue, closse to rim.
- Bake at 375 degrees for 15 minutes to brown meringue.
- Serve warm.

- In a large bowl mix flour, 1 cup sugar, baking powder together and set aside. Mix egg and 3 tablespoons butter together and then combine with dry ingredients. Add peaches, mix well. Put in 8 x 8 glass dish and sprinkle with 1/4 cup sugar with 1 teaspoon cinnamon then dot with 2 tablespoons of butter.
- Bake at 350 for 30 minutes.

- Preheat oven to 350°F. Place bread on large rimmed baking sheet. Bake until almost firm, about 7 minutes. Cool on sheet. Whisk remaining ingredients in large bowl to blend. Stir in bread. Cover and chill until bread absorbs custard, at least 3 hours.
- Preheat oven to 400°F. Sauté bacon in large ovenproof skillet over medium-high heat until fat renders, about 7 minutes. Drain all but 2 tablespoons fat into small bowl. Add onions to bacon and fat in skillet and sauté until soft, about 10 minutes.

Add broth and bring to boil. Place skillet in oven and bake uncovered until apples and celery root are tender, about 20 minutes. Mix in whole prunes and 2 tablespoons of reserved bacon fat. Season to taste with salt and pepper. DO AHEAD Bread mixture and filling can be prepared 1 day ahead. Keep bread mixture refrigerated. Cover filling and refrigerate.
- Preheat oven to 325°F. Spread filling in 3 1/2-quart ovenproof casserole or 13x9x2-inch glass baking dish. Spoon bread mixture evenly over, covering completely. Bake pudding until puffed, golden brown, and firm to touch in center, about 45 minutes. Let stand 10 minutes before serving.
