Ingredients

2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

Preheat oven to 425 degrees F (220 degrees C).
In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

3/4 cup caramel topping
1 tablespoon dark rum or 1 teaspoon rum extract
1/4 teaspoon ground cinnamon
1 (15 ounce) box pillsbury refrigerated pie crusts, softened as directed on box
2 medium bananas, cut into 1/8-inch slices
1 1/4 cups milk
1 (3 1/2 ounce) box banana instant pudding, and pie filling mix
1 cup whipping cream
banana, slices if desired

Steps:

Heat oven to 450°F In small bowl, mix all sauce ingredients until well blended; set aside.
Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Bake 9 to 11 minutes or until golden brown. Cool completely, about 30 minutes.
In medium bowl, toss banana slices with 3 tablespoons of the sauce until coated. Layer bananas in bottom of cooled baked shell.
In large bowl, beat milk and pudding mix with wire whisk 2 minutes or until thickened. In small bowl, beat whipping cream with electric mixer on high until stiff peaks form. Fold into pudding until well combined. Spread evenly over bananas.
Refrigerate 2 to 4 hours or until firm.
Top individual servings of pie with additional banana slices and sauce. Store in refrigerator.

Place the oven rack on the lowest or second to lowest setting in the oven. It is best to bake the pie on a thin cookie sheet to prevent any overflow of filling from the pie onto the oven. I use an old thin cookie sheet. You may also use a sheet of foil to cover the bottom of the pie plate. Preheat oven to 375 degrees.
