APPLE CRANBERRY PIE

2 1/2 cups all-purpose flour (see Cook's Note)
4 teaspoons sugar
1/4 teaspoon fine salt
14 tablespoons (1 3/4 sticks) cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 1/2 pounds baking apples like Golden Delicious, Cortland or Mutsu
2 tablespoons freshly squeezed lemon juice
2 cups (about 8 ounces) frozen cranberries, thawed and drained
3/4 cup sugar, plus more for sprinkling
4 tablespoons (1/2 stick) unsalted butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
2 tablespoons cornstarch
1 large egg, lightly beaten

Steps:

  • For the crust: Whisk the flour, sugar and salt together in a medium bowl. Using your fingers, work the butter into the dry ingredients until it resembles coarse cornmeal mixed with pea-sized bits of cold butter. (If the butter gets too soft, refrigerate the mixture for 10 minutes before proceeding.) Use a fork to stir in the egg and water mixture until the dough just comes together. (If the dough is dry, add up to 1 tablespoon more cold water.) Divide the dough into two equal-sized disks, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  • For the filling: Peel, halve and core the apples. Cut each half into 4 wedges and place in a bowl with the lemon juice and cranberries, tossing to combine. Add the sugar and toss again to combine evenly.
  • Melt the butter over medium-high heat in a large skillet. Add the apple mixture and cook, stirring occasionally, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover the pan and reduce the heat to medium-low, cooking until the apples soften and release most of their juices and the cranberries have burst, about 7 minutes.
  • Strain the apple mixture into a colander set over the bowl, shaking it to collect as much of the juice as possible. Pour the liquid back into the skillet, add the cinnamon and ginger, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes. Return the reduced juice and the apple mixture to the bowl and toss to recombine. Chill the filling until it cools completely, at least an hour and up to 2 days.
  • To assemble the pie: On a lightly floured surface, roll each disk into an 11- to 12-inch circle. Lay each dough circle between two pieces of parchment or wax paper on a baking sheet and refrigerate for at least 10 minutes.
  • Place a baking sheet on a rack positioned in the lower third of the oven and preheat to 375 degrees F. Line the bottom of a 9-inch pie dish with one of the dough discs and trim it to leave a 1/2-inch overhang on all sides. Stir the cornstarch into the filling and add it to the pan.
  • Use a chef's knife, pizza cutter or fluted dough cutter to cut the second round into 1/2-inch thick strips. Lay strips of dough, evenly spaced, across the entire pie. Weave more strips of dough perpendicular through the previous strips to make a lattice or basket weave design across the entire pie. Trim the excess ends from the strips of dough. Pinch the bottom crust edge and lattice edge together, and flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Refrigerate for at least 30 minutes.
  • Bake the pie on the preheated baking sheet until the crust is golden, 50 to 60 minutes. If the edges begin to brown too fast, cover them with strips of aluminum foil. Let the pie cool 1 hour before serving. Once completely cooled, the pie keeps well at room temperature (covered) for 24 hours, or refrigerated for up to 4 days.

Refrigerate while preparing filling., In a large bowl, combine the sugar and next 6 ingredients. Add apples and cranberries; toss gently. Spoon filling into prepared pie plate; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. , Bake for 10 minutes. Reduce heat to 350°; bake until crust is golden brown and filling is bubbly, 45-50 minutes longer.

4 cups peeled and sliced apples
2 cups cranberries
¾ cup white sugar
1 tablespoon cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Fit a pie crust into a 9-inch pie dish and arrange sliced apples into crust. Spread cranberries over apples. 1 (9 inch) pastry for double-crust deep dish pie (to fit bottom of a 9-inch deep-dish pie plate)
18% table cream or half-and-half cream
2 teaspoons sugar
6 large cooking apples, peeled, cored and thinly sliced
1 (16 ounce) can whole cranberry sauce (use Ocean Spray for best results)
1/2 cup brown sugar, packed (you may increase slightly if desired)

Steps:

  • Set oven to 350 degrees F (set oven rack to lowest position).

  • In a medium bowl combine the apples with whole cranberry sauce.
  • In a small bowl combine the brown sugar with flour, cinnamon and nutmeg.
  • Add the apple mixture; mix until completely combined.
  • Mix in nuts (if using).
  • Transfer to the crust-lined pie plate.
  • Cover with remaining pastry then crimp the edges.
  • Cut 2-3 slits in the top of the pastry.
  • Lightly brush whipping cream evenly over the pastry then sprinkle sugar over the top.
  • Place the pie onto a baking sheet to prevent any spills.
  • Bake for about 1 hour or until the crust is golden brown and the filling is bubbly.
  • CRUMB TOPPING:.
  • 1/2 cup all-purpose flour PLUS 2 tablespoons all-purpose flour/ 1/2 cup light brown, packed/ 1/3 cup white sugar/ 1 teaspoon cinnamon/ 1/2 cup cold butter cut into small cubes.
  • In a bowl combine the flour with both sugars and cinnamon, add in the butter, using fingers mix until it resembles coarse meal.
  • Sprinkle the mixture over the top of the filling then using hands press/pack down firmly (omit the whipping and 2 teaspoons sugar).

1 cup dried cranberries
1 tablespoon honey
2 tablespoons lemon juice
1/2 cup apple juice

Steps:

  • Preheat oven to 350°F.
  • Clean, core and peel 4 apples. Dice into bite sized pieces and add to a saucepan over medium heat.
  • Add juices, honey and cranberries and allow to simmer for 10 minutes until mushy.
  • In the meantime, clean, core and slice the rest of the apples. Then add to the saucepan and warm through. Approximately 5 minutes.
  • Pour into the bottom pie crust and place a second pie crust on top, brush with either water or an egg wash.

3 medium-size Granny Smith apples ((or other type of tart apple), peeled and cored)
1 tablespoon fresh lemon juice
1/4 cup (packed) brown sugar ((dark or light))
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 pinches ground cloves
1 tablespoon chilled butter (cut into small cubes)
1 bag (12 ounces) fresh cranberries
1 cup water
1-1/2 cups granulated sugar
1 whole lemon (juiced)
Apple pie filling (cooled)
Cranberry sauce (cooled)

Steps:

  • Peel the apples and cut the flesh away from the core. On a cutting board, lay the apples cut-side down and cut them into pieces that are about 1-inch square.
  • To a medium-size bowl, add the cut apples and lemon juice. Mix together so that all of the pieces of apple are coated with lemon juice.
  • To the bowl, add brown sugar, ground cinnamon, ground cloves, and ground nutmeg. Mix together until the pieces of apple are coated with the cinnamon and sugar mixture.
  • Transfer the apple mixture to a small to medium-size baking dish. Top with small cubes of butter. Cover the baking dish with an oven-proof lid or foil, and bake in a preheated oven (at 350 degrees F.) until the apples are cooked through (about 35 minutes).
  • After baking the apples, remove the lid on the baking dish and let the apples cool to room temperature.While the apples are baking, make the cranberry sauce.
  • Rinse the cranberries in a colander and set aside.
  • To a medium-size pot, add water, fresh lemon juice and sugar. Heat the pot on medium heat and stir.
  • Bring the mixture to a low boil. When the sugar dissolves, turn the heat down to low. To the pot, using a large spoon, carefully add the cranberries.
  • Stir and turn the heat up to medium heat. When the cranberries start to boil, turn the heat down to a low simmer and cover with a lid.
  • Let simmer for about 7 minutes or until the desired consistency is reached. As the cranberry sauce cools, it should set and thicken a bit. I like to cook the cranberry sauce up to the point to where it's still a little saucy because as it cools, it generally turns to a more "jellied" type consistency.
  • Let the cranberry sauce cool to room temperature.
  • Once the apple pie filling and cranberry sauce are cooled, transfer them to a medium-size mixing bowl. Using a spatula or a large spoon, mix together.
  • Serve chilled, warm or at room temperature. For holiday color, garnish with fresh mint leaves. Store leftovers in the refrigerator.

  • With pastry blender, cut in butter until crumbly Stir in pecans.

  • Cover edge of crust with strips of foil after 15-20 minutes of baking to prevent excessive browning.

I couple this with 1 quantity of my shortcrust pastry recipe #177343, will give instructions as a note at the end of the filling recipe. Times will not include for making the pie. I put this one by my dietician and she's o'kayed it for diabetics as the sugar is very minimal over one slice. Please note I use granny smith apples and the end result is a tarty tasting filling and not sweet or gelatinous like a lot of commercial products. As an extra I've been known to forget and overcook the filling and it has made great apple sauce but then again not sweet.

  • Peel, quarter and core apples, slice quarters.
  • Put sliced apple into a pot with cinnamon, cloves and lemon juice.
  • Cook over a medium heat until apples are tender (I don't like them mushy).
  • Leave to cool and remove whole cloves before using apple filling.

  • Roll out half of pastry on a floured surface and line 23cm pie plate.
  • Fill with apple filling. Brush rim of pastry with a little milk.
  • Roll other half of pastry out and cover the top of the pie.
  • You could decorate the edge of the pie with the tines of a fork.
  • Trim excess pastry from the edge of the plate.
  • Brush milk over the top of the pie. Decorate the top with excess pastry if you want (I usually cut out leave shapes). Cut a few small slits in the pastry to let steam escape.
  • Sprinkle top with 1 teaspoon of sugar.
  • Put into a preheated 180 degree celsius oven for 25 - 30 minutes until pastry is golden.
  • Enjoy warm with cream and or icecream or even cold by itself.

One of the best fruit pies I have eaten in a long time. This is a Canadian Living recipe that I had wanted to try for a while but it was a matter of having all of the ingredients on hand, which I finally did. The pie itself bakes very quickly as the filling is precooked.

2 cups cranberries
1 1/2 cups granulated sugar
1/4 cup water
1 teaspoon ground cinnamon

1 cup seedless raisin
2 tablespoons cornstarch

Steps:

  • On a lightly-floured surface, roll out half of the pastry and line a 9" pie plate.
  • In a saucepan, combine the cranberries, sugar, 2 tablespoons of the water, cinnamon and salt.

  • Stir in the apple slices and raisins.
