APPLE PEAR AND BRANDY CIDER

A simple holiday favorite, this is my go-to beverage recipe for holiday gatherings.

Number Of Ingredients 10

2 1/4 cups unfiltered organic apple cider or juice
2 1/4 cups unfiltered organic pear cider or juice
1/2 cup brandy (or more if you like)
1 ripe pear (peeled and cored)
2 tablespoons whipping cream
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup whipped cream

Steps:

  • In a large blender, puree the apple cider, pear cider, brandy, pear, whipping cream, cinnamon, vanilla extract, nutmeg, and ginger until smooth and frothy.
  • Empty the mixture into a small saucepan and bring to a simmer over low heat. Remove from heat and allow to cool for 10 minutes before ladling the brandy cider into mugs. Add a dollop of whipped cream and serve.

Steps:

  • Gather the ingredients.
  • Heat up the apple cider in a small saucepan and warm up an Irish coffee glass or mug.
  • Coat the bottom of the glass with honey and add the whiskey or apple brandy.
  • Fill with hot apple cider. Stir well .
  • Garnish with the lemon wedge, cinnamon stick, and cloves. Serve and enjoy.

½ gallon fresh apple cider
1 cup apple brandy
¼ cup brown sugar
1 tablespoon brown sugar
¼ cup honey
1 teaspoon ground cinnamon
¾ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground black pepper
1 pinch salt
10 thin strips orange zest
10 small cinnamon sticks

Steps:

  • Combine apple cider, apple brandy, 1/4 cup plus 1 tablespoon brown sugar, honey, cinnamon, ginger, nutmeg, cloves, pepper, and salt in a pot over medium-high heat. Simmer until flavors combine, about 10 minutes.
  • Pour apple cider mixture into heat-proof mugs. Twist orange zest strips between your fingers to release the essential oils; drop 1 into each mug. Add 1 cinnamon stick to each mug.

4 ounces (1/2 cup) apple brandy, preferably Applejack
1 ounce (2 tablespoons) dry vermouth
A few dashes bitters
Orange twists, for garnish

Steps:

  • Combine apple cider with apple brandy, dry vermouth, and bitters. Divide between 2 ice-filled glasses, and garnish each with an orange twist.

A galette is the perfect dessert for anyone who thinks the crust-to-fruit ratio of the average pie is way off. In a galette, the fruit filling is thinner, so you have more flaky pastry to every bite. It also means a galette cooks a bit faster and can be sliced while warm, a boon for the impatient. Don't be alarmed if your galette leaks as they most often do. The final product never seems to suffer.

1 cup/130 grams all-purpose flour, plus more for the work surface
1/2 cup/60 grams whole-wheat flour
2 tablespoons granulated sugar
3/4 teaspoon kosher salt
10 tablespoons/140 grams cold unsalted butter (1 1/4 sticks), cut into pieces
4 tablespoons/60 milliliters ice water
1 large egg, lightly beaten, for brushing
Sanding sugar, for sprinkling (optional)
1 to 2 crisp apples, such as Pink Lady (12 ounces/340 grams), peeled, cored and very thinly sliced
1 to 2 just ripe Bartlett pears (12 ounces/340 grams), cored and very thinly sliced
1/3 cup/75 grams packed dark brown sugar
1 tablespoon cornstarch
3/4 teaspoon freshly grated lemon zest
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, cut into pieces
2 cups/480 milliliters apple cider
1/3 cup/75 grams packed dark brown sugar
2 tablespoons unsalted butter
1/2 teaspoon kosher salt
2 tablespoons heavy cream

Steps:

  • In the bowl of a food processor, combine flours, sugar and salt. Add the butter and pulse until the mixture resembles coarse sand with some larger pieces. Add the ice water and pulse just until the mixture is evenly moistened. Tip the mixture out onto a piece of plastic wrap. Use the edges of the plastic to pack the dough into a disc. Wrap and refrigerate for at least 1 hour and up to 3 days.
  • Heat the oven to 400 degrees. In a large bowl, toss together apples, pears, sugar, cornstarch, lemon zest and cinnamon. On a lightly floured piece of parchment, roll the dough out into a 12-inch circle. Top the dough with the prepared fruit in concentric circles leaving a 1 1/2-inch border. Lift and press the edges up over the fruit, folding as necessary. Using the parchment paper, transfer the galette to a rimmed baking sheet. Chill for 10 minutes.
  • Brush the border of the pastry with the beaten egg and sprinkle with sanding sugar, if using. Dot the fruit with the butter. Bake until the filling is tender and the crust is deep golden brown, about 45 minutes. Some of the juices may leak out, but that's O.K.
  • Meanwhile, make the caramel: Bring apple cider to a boil over medium-high heat in a small saucepan. Continue to cook the cider until it has reduced to 1 cup liquid, about 13 to 14 minutes. Then add brown sugar, butter, and salt and stir to combine. Reduce heat to maintain a simmer, and continue to cook the mixture, whisking often, until it has become syrupy and thickened slightly, about 13 to 15 minutes. Whisk in the cream and set aside to cool slightly. (The caramel will thicken as it cools.)
  • Remove tart from the oven, and let it cool slightly on the pan on a rack. Transfer the galette to a serving plate and drizzle with caramel. Serve warm or at room temperature with any remaining caramel.
