APPLE MUSTARD MARINADE

Steps:
- In a small jar, shake to combine all the marinade ingredients.
- Skin chicken and cut in half.
- Place in a zip top bag.
- Pour marinade over chicken.
- Let the chicken marinade for 4 hours.
- Pre heat oven to 400 degrees.
- Line a baking pan with foil and place a rack on top.
- Pour marinade into a small saucepan.
- Cook on medium heat for 20 minutes covered.
- Place chicken on prepared baking pan and into the oven.
- Baste chicken after 20 minutes, again at 30 minutes and again before the chicken is done.
- Bake chicken a total of 40 minutes.

APPLE BUTTER MUSTARD GLAZE

- Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
- Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

Steps:
- Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.
- Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 mins until the sauce has reduced by about a third and the pork is cooked through. Serve with veg and mashed potatoes.

PORK MEDALLIONS IN APPLE MUSTARD SAUCE
This is out of TOH Healthy Cooking magazine. It is from Tahnia Fox. This cooks up very quickly and is a nice, different way to have pork. I didn't have apple juice so I used peach juice and it worked just fine.

Steps:
- In a small bowl, combine chicken broth, apple juice concentrate, and mustard.
- Set aside.
- Sprinkle pork chops with salt and pepper.
- In a large nonstick skillet, heat oil.
- Brown chops in the oil.
- Remove and set aside.
- Add the garlic to the pan.
- Saute 1 minute.
- Add reserved broth mixture, stirring to loosen the browned bits from the pan.
- Bring to a boil.
- Reduce heat and simmer uncovered for 6-8 minutes or until liquid is reduced to about 1/3 cup.
- Return pork to pan.
- Cover and let cook over low heat for 3-4 minutes or till meat is cooked through.
- Combine cornstarch and cold water and mix until smooth.
- Add to the pan.
- Bring to a boil.
- Cook and stir for 2 minutes or til thickened.
- Sprinkle with parsley and serve.

- Core and cut apples into cubes. Peel and roughly chop onion and garlic. Add cubed apples, chopped onion and garlic, grainy mustard, mustard, honey, apple juice, melted butter, and bay leaf to a blender. Season with salt and pepper. Blend to a smooth sauce.
- Put the pork in a large bowl and add the apple-mustard sauce, then cover with plastic wrap. Let marinate in the fridge for approx. 24 hrs.
- Transfer pork into an ovenproof pot and roast for approx. 5 – 6 hrs at 85ºC/185 °F, or until the meat is very tender. Remove from the oven and enjoy!
