Tender apple slices and subtle flavors make this old-fashioned cake one of our favorites.

2-1/4 cups sugar, divided
1 cup canola oil
4 eggs
1/4 cup orange juice
2-1/2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
4 medium tart apples, peeled and cubed
2 teaspoons ground cinnamon
Whipped cream and additional cinnamon, optional

Steps:

  • In a large bowl, beat 2 cups sugar, oil, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Stir in apples. , Spread half of the batter into a greased 13x9-in. baking dish. Combine cinnamon and remaining sugar; sprinkle over batter. Carefully spread remaining batter over the top. , Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Garnish with whipped cream and additional cinnamon if desired.

Found this recipe the past weekend in the Sunday paper coupons. Made it last night for my family and my DIL raved about it. I even forgot to put in the rest of the brown sugar until I had the batter on top of the apples. I scooped it back off and added the sugar, but the recipe says to stir "just until moist". Oops. I will definitely be making this again and will follow directions exactly. Enjoy.

3/4 cup quick-cooking oats
3/4 cup warm apple juice (I used apple cider)
2 tablespoons oil (recipe calls for Enova Oil)
2 large egg whites
2 teaspoons vanilla extract
1 tablespoon margarine
cooking spray
1 cup packed brown sugar, divided
1 large granny smith apple, peeled and thinly sliced (about 1 1/2 cups)
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F.
  • Combine oats, apple juice and oil in a small bowl; let stand 10 minutes. Stir in egg whites and vanilla.
  • Pour margarine in the bottom of a 9-inch cake pan coated with cooking spray.
  • Sprinkle 1/4 cup brown sugar. Arrange apple slices spoke-like on top of brown sugar, working from the center of pan to edge.
  • Lightly spoon flour into dry measuring cups; level with a knife.
  • Combine 3/4 cup brown sugar, flour, baking soda, cinnamon, salt, and nutmeg in a large bowl, stir with a whisk. Add oat mixture; stir just until moist. Pour batter into prepared pan.
  • Bake at 350°F for 40 minutes, or until a wooden pick inserted in center comes out clean.
  • Cool in pan 10 minutes. Place a plate upside down on top of cake; invert onto plate. Cut into wedges. Makes 8 servings.

4 braeburn apples or 4 gala apples
1/3 cup dried currant
1/4 cup almonds, chopped
2 tablespoons brown sugar
2 teaspoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 lemon, juiced
salt, to taste
1/2 cup apple cider, divided
2 tablespoons unsalted butter, cut into 8 cubes
1/4 cup rolled oats
2 tablespoons all-purpose flour
2 tablespoons sugar
1 tablespoon unsalted butter, cold, cubed
1 tablespoon water
1/2 teaspoon ground cinnamon
1/4 teaspoon almond extract
1/4 cup plain yogurt, divided

Steps:

  • Preheat oven to 350F; lightly coat a 9" glass pie plate or square aking dish with nonstick spray.
  • Scoop the core and enough flesh out of each apple with a melon baller to hold about 1/4 c of filling.
  • Combine chopped apple, currants, almonds, brown sugar, 2 t. flour, 1/2 t. cinnamon, lemon juice and salt in a bowl. Stuff filling into apples and arrange in the prepared dish. Pour 1 T. cider into each cavity, then top with a cube of butter; add remaining cider and butter to tthe baking dish.
  • Blen doats, 2 T. Flour, sugar, 1 T. butter, water, 1/2 t. cinnamon, almond extract, and salt to taste in a bowl until crumbly using your fingers. Top each apple with a generous tablespoon of the mixture, packing so it sticks.
  • Bake applses 35-45 minutes, or until easily pierced with a knife, but not mushy. Let apples cool in the pan 10 minutes.
  • To serve, transfer apples to small plates, top with yogurt, and drizzle with pan juices.

These are the best baked apples I've ever had. They are almost like individual apple crisps, and of course they must be served with a good vanilla ice cream!

4 large apples, cored (McIntosh or Brayburns are good)
1/4 cup quick oats
1 tablespoon lemon juice
3/4 cup brown sugar
1 teaspoon cinnamon
4 tablespoons butter
1/4 cup chopped pecans (optional) or 1/4 cup walnuts (optional)

Steps:

  • Cut all ingredients together in a bowl except apples. Place apples in a glass baking dish.
  • Stuff each of them as full as you can get them with the oatmeal mixture, sprinkling the remainder over the tops.
  • Bake in a 425°F oven for 20 min or till very soft.
  • Serve while still warm with vanilla or caramel ice cream.

8 baking apples (2-3/4 lb.)
1 cup apple juice
1/4 cup packed brown sugar
1/2 tsp. ground cinnamon
1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1/4 cup raisins
1/4 cup chopped pecans, toasted

Steps:

  • Heat oven to 350°F.
  • Remove cores from apples to within 1/2 inch of bottoms of apples; pierce peels with small sharp knife. Stand apples in shallow baking dish.
  • Mix juice, sugar and cinnamon; pour over apples.
  • Bake 30 to 35 min. or until apples are tender, basting occasionally with juice mixture. Combine remaining ingredients; spoon into centers of apples. Let stand 1 min.
