This is a recipe my mum used to make, years later she made these every week for my husband who loved them. Now my daughter makes them for him. When we were young we knew them as Goofies! Easy and tasty! Any mixed fruit can be used, we often even put nuts in.

125 g butter
1/2 cup sugar
1 beaten egg
1 cup self raising flour
1 teaspoon vanilla essence
1 cup mixed fruit
1 -2 cup corn flakes

Steps:

  • Preheat oven to 180dg cel.
  • Cream butter and sugar and add the beaten egg.
  • Add flour, fruit and vanilla.
  • Roll into small balls and then roll to cover in cornflakes.
  • Put on lined baking tray and put in oven for 15-20 minutes or until Corn Flakes are golden and cookies have spread.

  • Bring sugar and corn syrup to a boil.

  • Stir in corn flakes.
  • Press into the bottom of a 9 X 13 inch dish.

1 cup packed brown sugar
1 cup vegetable oil
½ cup butter, softened
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
2 cups quick cooking oats
1 cup chopped pecans
1 cup flaked coconut
2 cups cornflakes cereal
1 teaspoon vanilla extract
½ teaspoon lemon extract
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (175 degrees C). Grease baking sheets.
  • Combine the sugars and eggs, beating well. Beat in the oil butter or margarine, flour, baking soda and baking powder. Stir in the vanilla, lemon extract and salt. Mix in the oats, nuts and coconuts. Last but not least stir in the corn flakes. Drop by teaspoons on greased cooking sheets.
  • Bake at 400 degrees F (205 degrees C) for 10 minutes.

½ cup margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda

1 cup rolled oats
1 cup semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
  • In a large bowl, mix together the canola oil, margarine, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, baking powder and salt; stir into the sugar mixture. Mix in the cornflakes cereal, oats, chocolate chips and walnuts. Drop by heaping teaspoonfuls onto the prepared cookie sheets.

125 g butter
1/2 cup brown sugar, firmly packed
1/2 cup caster sugar
1/2 cup desiccated coconut
3 cups corn flakes or 3 cups gluten-free corn flakes, lightly crushed
1 egg, lightly beaten
1/2 cup finely chopped mixed nuts

Steps:

  • Preheat oven to 180°C or 350°F
  • Melt the butter in a large pan. Then add sugars and cook, stirring, until combined. Remove from heat
  • Add all of the remaining ingredients and stir gently until combined
  • Place level tablespoons pf mixture, about 3cm apart , on lightly greased oven trays
  • Bake in a moderate oven (180C / 350F) about 15 minutes or until golden brown
  • Stand for 5 minutes before removing from trays to cool on a wire rack.

This wonderful recipe was in circulation when I was a kid in the 70s. Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)! I searched online (tried several recipes) and asked my friends and family off and on if they'd heard of it, for 10 years. I finally JUST found this online! They are SO GOOD! Bake them for your friends and family and share the recipe with the WORLD! Note, the number of cookies you get will vary - depending on how big you roll the balls.

1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes

1 cup quick-cooking oatmeal
4 cups flour, decrease to 3 1/2 cups for a chewier cookie
1 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 325.
  • Cream butter, sugars, vanilla and egg.
  • Add oil.
  • Mix in dry ingredients.
  • Form dough into walnut sized balls.
  • Place on cookie sheet and flatten with a fork dipped in water.
  • Bake for 10- 12 minutes.
  • Cool on pan for a minute or two, then transfer to a rack to cook.

4 egg whites
1 cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
3 cups corn flake cereal
1 cup sweetened flaked coconut
½ cup chopped walnuts

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line baking sheets with parchment paper sprayed with cooking spray.
  • Beat the egg whites in a bowl with an electric mixer until they form stiff peaks. Gradually beat in the sugar, adding about 2 tablespoons at a time. Beat in the salt and vanilla extract until the mixture is glossy and holds its shape. Gently and lightly use a rubber spatula to fold the corn flakes, coconut, and walnuts into the meringue. Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Drop the mixture by rounded tablespoons onto the prepared baking sheets.
  • Bake in the preheated oven until the cookies are very lightly browned and set, 20 to 30 minutes. Let cool completely before removing with a metal spatula; warm cookies are very fragile.
