1 1/4 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon fine sea salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup sparkling water
1/2 cup buttermilk
1 teaspoon pure vanilla extract
Zest of 1 large lemon
2 cups olive oil
2 cups vegetable oil
3 firm apples, such as Granny Smith

Steps:

  • In a medium bowl, mix together the flour, 1/4 cup sugar, the cinnamon, salt, baking powder and baking soda. Add the sparkling water, buttermilk and vanilla, and stir until the mixture forms a batter. Let rest for 15 minutes.
  • In a small bowl, whisk together the remaining 1/2 cup sugar and the lemon zest.
  • In a heavy 4 to 5-quart saucepan, heat the olive oil and vegetable oil over medium heat until a deep-fry thermometer registers 375 degrees F. (If you don't have a thermometer, a cube of bread should brown in about 3 minutes.)
  • Meanwhile, peel and core the apples, then cut into 1/2-inch-thick slices. Using paper towels, blot the apple slices dry.
  • Add the apple slices to the batter and toss until coated. Working in batches, fry the apples, turning occasionally, until golden brown, 2 to 3 minutes per batch. Drain on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.

1/4 cup plus 2 tablespoons granulated sugar

2 sweet apples, such as Rome, McIntosh, or Gala, peeled, cored, and cut into 1/4-inch pieces (about 3 cups)
Safflower oil, for frying
Confectioners' sugar, for dusting

Steps:

  • In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, butter, and vanilla. Gently fold milk mixture into flour mixture until just combined. Fold in apples.
  • Meanwhile, heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until a thermometer registers 350 degrees. Set a wire rack in a rimmed baking sheet.
  • Working in batches, drop heaping tablespoons of dough into oil. (A small ice cream scoop works especially well for creating uniform-size fritters.) Cook, turning once, until puffed and golden, 3 to 4 minutes. Transfer to rack with a slotted spoon. Let cool slightly, dust with confectioners' sugar, and serve.

Vegetable oil, for frying
4 apples, Red or Golden Delicious or, 2 of each
2 teaspoons lemon juice (1 wedge will do)
2 cups complete pancake mix, any brand
1 1/2 cups water
1/2 teaspoon ground nutmeg, or equivalent of freshly grated
1/2 cup confectioners' sugar

Steps:

  • Heat 1-inch vegetable oil on moderate to medium high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.
  • Core apples with an apple corer. Cut into 1/4-inch thick slices across, forming apple rings. Sprinkle sliced apples with the juice of a wedge of lemon to prevent browning.
  • Mix together pancake mix and water, season with nutmeg. Place confectioners' sugar in a sifter or a tea strainer. Place a piece of cardboard or brown paper sack on a work surface for draining fritters. Working in small batches of 5 to 6 slices, coat rings of apple in batter, and fry for 2 to 3 minutes, until evenly golden brown. Transfer to paper bag or towels to drain. When all the fritters are cooked, let oil cool before discarding.
  • Top fritters with confectioners' sugar and transfer to a serving platter.

My boyfriend and I came home one night after a long long long day of work and play. We were starving and oh no, there was NOTHING to eat. I had just been on this whole baking kick weeks prior so there was tons of flour and eggs left from it, so I (very tiredly) concocted this. Its so basic you probably have already made it yourself but its so yummy and hit the spot for both of us. You can serve it up with anything. I used crunchy peanut butter and honey on top and my boyfriend used apple custard. Of course you can top with maple syrup or any thing really... be creative. There is one ingredient, I bet that will surprise you. Enjoy.

1 red apple, cut, deseeded, and grated
1 eggs or 2 egg whites, lightly beaten
1/2 cup wholemeal flour (for hearty cakes or can use regular flour)
1/4 cup nonfat milk
1/2 teaspoon cinnamon (I probably used more, I LOVE cinnamon)
1 teaspoon sugar substitute (can use regular sugar, I suggest brown)
1/4 teaspoon vanilla essence
1/4 teaspoon grated nutmeg
1/4 teaspoon cumin (surprise, makes cakes warm)

Steps:

  • Mix all ingredients together well.
  • Use a 1/4 cup to scoop up mix and fry in butter, soy butter, oil, non-stick spray, etc. just like you would a pancake. I used avocado butter, but I live in New Zealand now where everything is avocado.
  • Keep finished cakes warm in oven on low till all mix is used.
  • Top with whatever you want. Eat. They go down best when you eat them with someone you love.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

This is one of our family favorites-there's nothing like the flavor of apple fritters to warm a gluten free persons heart! These must be cooked until browned to get the best flavor, you need that crunch and carmelization to really make this recipe. If you don't have buttermilk on hand, pour 2 Tbsp lemon juice or vinegar into your glass measuring cup and then add your milk of choice until you get 1 3/4 cups.

3/4 cup oat flour
1 tablespoon coconut flour (optional)
1 1/2 teaspoons baking powder

1 tablespoon honey or 1 tablespoon sugar

Steps:

  • Set griddle to 325 degrees. .
  • In a medium sized bowl mix the dry ingredients: flours, baking powder, baking soda, salt and cinnamon.
  • In a smaller bowl mix the wet ingredients: egg, buttermilk, oil and honey (or if using sugar put in with the dry ingredients).
  • Pour the wet ingredients into the bowl of dry ingredients and mix well. It will be a thin batter.
  • Oil the griddle and when oil is heated, pour pancakes onto griddle. Top with sliced apples and pecans, if using. With the back of spatula or your hand flatten the apples so they aren't poking out too tall- you want your batter to be able to touch the pan when you flip it, but also to be able to caramelize the apples. These are crumbly, so don't flip until the bottom is well browned.
  • Flip. Brown the other side then remove to a plate and keep warm. These are delicious with maple syrup and an extra special treat with whip cream too.

  • In a large bowl, combine dry ingredients: flour, baking powder, cinnamon, and salt. Add milk, maple syrup, and melted coconut oil and stir just until combined. Gently fold in chopped apples. Batter should be thick (like in the photo above) but if it is too thick to stir, just add a splash more milk.
  • Place a large non-stick pan over medium heat and add enough oil to lightly coat the bottom of the pan. When oil is melted and pan is hot, pour batter by the 1/4 cupfuls into the pan. If necessary, use your spatula or a spoon to gently spread dough into a round pancake, so it cooks evenly. Cook about 1-2 minutes per side. Turn down the heat and cover the pan with a lid, if pancakes are browning too fast or not cooking in the middle.
  • Remove when lightly browned and center is cooked. Continue to cook in batches until all the batter is used up, adding more oil to the pan when needed.
  • If desired, top pancakes with a dusting of powdered sugar or maple syrup. Makes 10-12 pancakes
