Categories     Bread

Time 1h

Number Of Ingredients 16

2 medium apples (peeled and finely chopped (1/4-inch pieces or smaller))
1/3 cup brown sugar (packed)
1 tsp cornstarch
2 tsp ground cinnamon
1 1/2 cup all purpose flour
1/2 cup granulated sugar
1 3/4 tsp baking powder
1/4 tsp salt
pinch nutmeg
2 eggs
2 tsp vanilla extract
1/2 cup unsalted butter
1/2 cup sour cream
2 tbsp whole milk
1/2 cup powdered sugar
1-2 tbsp milk

Steps:

  • Preheat oven to 350 degrees. Spray a 9x5-inch loaf pan with baking spray or line with parchment paper, set aside.
  • In a medium size mixing bowl combine the chopped apple, brown sugar, cornstarch, and cinnamon. Toss to evenly coat the apples, set aside.
  • In a large mixing bowl (with a hand mixer) or the bowl of a stand mixer, mix the flour, sugar, baking powder, salt, and nutmeg on low. With mixing speed on low, gradually add the butter one tablespoon at a time. Continue mixing until crumbs form, about 2 minutes.
  • Add the eggs, vanilla, sour cream and milk. Beat on medium-high speed until light and fluffy, about 1-2 minutes, scraping the bottom of the bowl half way through.
  • Pour half of the batter into the prepared pan. Add half the apples mixture. Lightly pat the apples into the batter. Pour the remaining batter over top, then the remaining apples. Use a knife to swirl it together a bit.
  • Place in oven and bake for 45-60 minutes, or until the center is set. Baking time will vary, so watch it at the 45 minute mark & test for doneness. Remove from the oven and allow the bread to cool for 30 minutes in the pan before removing.

EASY MOIST APPLE FRITTER BREAD RECIPE WITH GOOEY SWIRLS OF CINNAMON APPLES AND DRIZZLED WITH GLAZE

Provided by Divas Can Cook

Time 1h

Number Of Ingredients 14

3 apples (peeled, cored and finely diced (I used granny smith and gala))
2/3 cup light brown sugar (packed)
3 1/2 teaspoons cinnamon (divided)
2/3 cup granulated sugar
1/2 cup butter (softened)
2 eggs
2 teaspoons vanilla extract
1/2 cup cinnamon applesauce
1 1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 cup buttermilk
2 tablespoons butter (thinly sliced)
1/2 cup powdered sugar
2-3 tablespoons heavy cream (may need more)

Steps:

  • Preheat oven 350 F.
  • Grease and flour a loaf pan. Set aside.
  • Mix together brown sugar and cinnamon. Set aside.
  • Sprinkle apples with 3 teaspoons of cinnamon sugar mixture. Set aside.
  • In a large bowl cream together butter and granulated sugar.
  • Add eggs and vanilla extract.
  • Fold in applesauce.
  • In a separate bowl stir together flour and baking powder.
  • Add flour mixture to the wet mixture JUST until combined.
  • Stir in buttermilk. (Batter will and should be slightly lumpy. Do not over stir)
  • Place half of the batter evenly into the loaf pan.
  • Spread on half of the apple mixture.
  • Sprinkle some cinnamon-sugar mixture over apples evenly just enough to cover. (FYI: You will have plenty of cinnamon-sugar mixture left over. Save it for another loaf)
  • Press apples into batter very slightly.
  • Lay a few pieces of thinly sliced butter on top.
  • Repeat layers. Remember to press the apples gently into the batter very slightly. (Sometimes I like to gently glide a knife down through the batter to blend the layers a bit.)
  • Bake on middle rack for 50-60 minutes.
  • Let loaf rest in pan for about 15 minutes before removing from pan to let cool off completely on a cooling rack.
  • While loaf is cooling combine powdered sugar with heavy cream until it is a glaze consistency.
  • Drizzle glaze over completely cooled bread and let the glaze sit to firm up.
  • Slice and serve!

Time 1h20m

Yield 12 serving(s)

Number Of Ingredients 22

1 cup sliced apple
1/3 cup sugar
1/4 teaspoon cinnamon
1 small pinch freshly grated nutmeg
2 tablespoons cornstarch
2 teaspoons water
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/3 cup butter
3/4 cup sugar
1/2 cup applesauce
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup Greek yogurt (you could use plain yogurt as well or sour cream)
2 cups powdered sugar
1 teaspoon vanilla
6 tablespoons milk

Steps:

  • For filling: Make your filling by combining apples, sugar, water, cinnamon and cornstarch in a small saucepan. Cook on low heat for 5 to 7 minutes, stirring constantly until the sauce is thickend and the apples are a bit soft. Set aside to cool. In a small bowl, mix the brown sugar and cinnamon together until well combined and set aside.
  • For Cake: Preheat oven to 350°. Grease and flour a 9×13 baking dish. Set aside.
  • Cream butter and sugar until light and fluffy, about 3 minutes. Add applesauce and vanilla and mix till combined. Add the eggs, one at a time, beating well after each addition.
  • Sift the dry ingredients together. Add the dry ingredients to the batter in three parts alternating with the yogurt in two parts, beginning and ending with the dry ingredients. Beat until just combined.
  • Spoon half of the batter into the prepared pan. Spoon the cooled apple mixture over the batter carefully and spread as evenly as possible. Sprinkle 2/3 of brown sugar cinnamon mixture over apples and cover with the rest of the batter. Sprinkle the rest of the brown sugar cinnamon mixture over the top.
  • Bake for 45-55 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • For Glaze: While the cake is baking, make the glaze. In a bowl, mix the powdered sugar, vanilla, and milk until the glaze is desired consistency. When the cake comes out of the oven, immediately but carefully pour onto hot cake. Try to pour as evenly as possible. You might have to pick up the cake and tilt it to spread the glaze evenly. I even poured some out that pooled at the corners and repoured that over the top. Let the cake sit for awhile for the glaze to set.

APPLE FRITTER BREAD

Apple Fritter Bread image

Easy Apple Fritter Bread ~ tart apples are swirled with brown sugar and spices in this classic loaf cake, topped with a sweet crackly glaze. This apple quick bread takes a cue from the down home deep fried apple fritters grandma made. Fall baking doesn't get any better than this!

Provided by Sue Moran

Categories     Dessert

Time 1h30m

Number Of Ingredients 14

2 large apples, cored and chopped, or about 2 and 1/2 cups chopped apples.
1/2 cup brown sugar, packed
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cup granulated sugar
1 cup (2 sticks) unsalted butter
3 large eggs
1 1/2 tsp vanilla extract
1 3/4 cups all purpose flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 cup half-and-half or whole milk
1 1/2 cups powdered sugar
5-6 Tbsp water

Steps:

  • Preheat oven to 350F. Butter the sides of a 9 inch loaf pan, and line with parchment paper.
  • Mix the chopped apples with the brown sugar, cinnamon, and nutmeg, and set aside.
  • In an electric mixer with a paddle attachment, cream together the butter and sugar until light and fluffy, about 5 minutes.
  • Add the eggs, one at a time, letting them get fully incorporated. If the mixture starts to look a little separated and weird here, don't worry! That's fine.
  • Add the vanilla extract, and mix to combine.
  • Add the flour, salt, and baking powder to the mixer, and slowly mix to combine. While it's mixing, slowly add the milk or half-and-half, and continue to mix until everything is just evenly incorporated.
  • Spread about half the batter into your prepared loaf pan. Top with about half the apple mixture, spreading it out in an even layer.
  • Spread the rest of the cake batter on top of the apples. With a chopstick, or skewer, lightly swirl the apple mixture into the batter, if you'd like. Or you can leave it in an even layer.
  • Top with the rest of the apple mixture, spreading out in an even layer.
  • Bake for 75-85 minutes. Towards the end of the baking time, check on your cake and tent loosely with tinfoil if the top is starting to get too brown.
  • Allow the cake to mostly cool, and remove it from the loaf pan, before adding the glaze.
  • To make the glaze, whisk together the powdered sugar and water. Drizzle over the cooled loaf cake and allow to set before slicing.

  • Prepare the dough by first heating the milk in a small saucepan until hot and bubbles appear around the edges of the pan, but do not bring to a boil. Add the butter to the hot milk and stir until completely melted, then allow to cool slightly.
  • In a large bowl, combine the flour, yeast, brown sugar and salt and mix well. Add the apple cider or water, beaten egg, and the warm milk/butter mixture. Stir until the dough forms into a ball and then knead for five minutes, until smooth. This can be done in a stand mixer using a dough hook.
  • Transfer the dough to a clean, oiled bowl and cover with plastic wrap. All to rise until doubled, about 1 hour.
  • While the dough is rising, prepare the apple filling by combining the diced apples, brown sugar, butter, lemon juice, vanilla, cinnamon and cornstarch in a large skillet and cooking over medium heat, stirring occasionally, until the apples soften and release their juices. The juices will thicken slightly from the cornstarch, but it will still be very syrupy.
