This wonderful sweet potato recipe tastes like a dessert. It's always a favorite.

3 sweet potatoes, peeled and quartered
½ cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 large cooking apples - peeled, cored and cut into 1/4 inch rings
¼ cup all-purpose flour
¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a small bowl, mix brown sugar, cinnamon and nutmeg.
  • Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
  • In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
  • Bake in the preheated oven 30 minutes, or until lightly browned.

2 medium apples, sliced (fuji, gala or honey crisp work great)
2 medium (8-9 oz. each) sweet potatoes, peeled and sliced into 1/8th-1/4-inch. rounds
3 Tbsp. ghee or butter, divided (for vegan-friendly, sub coconut oil)
1/4 cup water
2 tsp. cinnamon
Sea salt
Optional - 1/3 cup chopped pecans
Optional - 2 Tbsp. pure maple syrup

Steps:

  • Preheat oven to 375℉.
  • In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
  • Mix until apples and sweet potatoes are evenly coated.
  • Cover with foil and bake in the oven for 40 minutes.
  • After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
  • Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.
  • Optional - Drizzle with a little maple syrup and top with additional chopped pecans.

6 medium sweet potatoes or 6 medium yams
1/4 cup brown sugar, firmly packed
1/2 cup margarine or 1/2 cup butter
1 pinch nutmeg
1/2 teaspoon orange peel, grated
1 cup coarsely chopped apple, cored and peeled
1/4 cup toasted pecans, chopped
pecan halves

Steps:

  • heat oven to 375*F.
  • prick sweet potatoes with a fork to allow steam to escape. bake for 35 to 45 minutes or until fork tender.
  • cut thin lenghwise slice from top of each sweet potato; scoop out inside, leaving a thin shell. set shells aside.
  • in large mixer bowl place hot sweet potatoes and remaining ingredients, except apple, chopped pecan and pecan halves.
  • beat at medium speed, scraping bowl often until well mixed and no lumps remain.
  • by hand, stir in apple and chopped pecans.
  • place shells on a 15x10x1" baking pan. fill shells with sweet potato mixture.
  • if desired, garnish each potato with pecan halves.
  • bake for 15 to 20 minutes or until heated through.
  • Tip: if desired do not stuff shells. spoon hot sweet potato mixture into serving bowl. if desired toast pecan halves and use to garnish sweet potato mixture.

3 cups sliced peeled tart apples (about 2 large)
3/4 cup packed brown sugar
3/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
Dash pepper
1 tablespoon butter

Steps:

  • In a greased 1-1/2-qt. baking dish, layer half of the sweet potatoes and apples. In a small bowl, combine the brown sugar, nutmeg, allspice, salt and pepper; sprinkle half over apples. 6 medium sweet potatoes (about 8 ounces each)
1/2 cup butter, cubed
1/4 cup packed brown sugar
1/2 teaspoon grated orange zest
1 medium apple, chopped
1/4 cup chopped pecans

Steps:

  • Scrub potatoes; pierce several times with a fork. Place on a foil-lined 15x10x1-in. baking pan. Bake at 400° for 45-60 minutes or until tender. , When cool enough to handle, cut off a thin slice from the top of each potato; discard. Scoop out pulp, leaving 1/4-in. thick shells; transfer to a large bowl. Mash pulp with butter, adding brown sugar and orange zest. Fold in apple and pecans., Spoon into potato shells. 4 large sweet potatoes
2 tablespoons butter
1/4 cup brown sugar
1 cup grated apple
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon pepper
1/2 teaspoon salt
2 teaspoons lemon juice
1 cup chopped pecans, toasted, divided

Steps:

  • Wash and prick sweet potatoes. Microwave on high for about 15 minutes. More if needed, they need to be cooked through.
  • Let cool sweet potatoes cool.
  • Preheat oven to 350°F.
  • Cut a thin slice, about 1/2 inch from the top of each potato.
  • Carefully scoop out meat, being sure not to puncture or tear potato skin.
  • Combine potato meat, butter, brown sugar, apple, cinnamon, ginger, pepper, salt and lemon juice, mix well.
  • Carefully spoon mixture into shells, top each potato with 1/2 of the pecans.
  • Place potatoes in baking dish. Bake for about 25 minutes; stuffing must be hot and tender. Top with remaining pecans.
