APPLE DUMPLINGS WITH RICH CINNAMON SAUCE
This dessert stands on its own, but a scoop of vanilla ice cream certainly wouldn't hurt.

- Adjust oven rack to lower-middle position and heat oven to 425 degrees.
- Mix 3 Tbs. of butter, 1/2 cup of brown sugar, 1 tsp. cinnamon and all the nuts in a small bowl. Spoon a portion of the mixture into each hollowed-out apple core.
- For boxed pie crusts, unroll one of the dough sheets onto a floured work surface. Pulling on sides of dough to straighten rounded edges, roll it into an approximate 12-inch square, then cut the dough into four 6-inch squares; brush the perimeter of each square with egg white. Set an apple half on each square. Bring up the 4 corners of dough around the apple and pinch edges to seal. Place on a large (at least 18- by 12-inch) parchment-covered baking dish. Brush dumpling tops and sides with egg white; sprinkle with sugar. Repeat process with remaining apples and dough.
- Bake dumplings until pastry sets and starts to turn golden brown, about 10 minutes. Reduce heat to 375 and bake until golden brown, about 20 minutes longer.
- While apples bake, bring 1 cup water, the remaining 2 Tbs. butter, 1/2 cup brown sugar and 1 tsp. cinnamon to boil in asmall saucepan over medium heat. Dissolve cornstarch in 2 tsps. water; whisk into hot syrup for a smooth sauce. Cover, keep warm.
- For each serving, spoon a portion of sauce on a dessert plate. Set apple dumpling over warm sauce; serve immediately.

The apple is filled with date butter and served with vanilla ice cream and cinnamon-rum sauce in this version of a beloved dessert.

- To make the dough: Combine the flour, salt, and sugar in a food processor. Add the butter and pulse to incorporate, mixing to a crumb texture. Or, to make by hand, in a medium bowl, combine the flour, salt, and sugar. Cut in the butter with a pastry blender or 2 knives until the mixture resembles coarse corn meal. Slowly stir in the water until the dough comes together. Cover and refrigerate for at least 1 hour. To make the date butter: Place the dates in a blender or food processor and pulse 2 or 3 times. Add the butter, sugar, and cinnamon and puree, scraping down the sides of the container several times. Preheat the oven to 375 F. Line a baking sheet with parchment paper or grease it. Add the lemon juice to a bowl of cold water and add the apples to prevent any discoloration. Divide the chilled dough in half and roll each out on a lightly floured board. Roll it into a 1/8-inch-thick square. Trim the edges to square the pastry off, then cut each square into fourths, each about 7 inches square. Reserve the trimmings for decoration. From each corner, cut into the dough about 1-1/2 inches toward the center, so the dough can be folded up pinwheel style. Drain the apple halves and pat them dry with paper towels. Place an apple half, cut-side up, on each square. Fill the center of each apple with 1-1/2 tablespoons of the date butter. Pull up alternate corners, pinwheel style, and seal at the top. From the trimmings of the dough, cut 8 triangular pieces and pinch one end of each to form leaf shapes. In a small bowl, whisk the egg yolks and cream together. Combine the sugar and cinnamon. Brush the entire surface of the dumplings with the egg mixture and place a dough leaf on top of each. Brush each leaf with the egg wash. Sprinkle the dumplings with the cinnamon sugar. Transfer the dumplings to the prepared pan and bake for 20 to 30 minutes, or until the pastry is golden and the apples are tender when pierced with a knife. The dumplings can be made ahead and reheated in a preheated 350 F oven for 10 to 12 minutes. To make the sauce: In a small saucepan, whisk together the brown sugar, cornstarch, and water. Add the cinnamon sticks and place over medium heat. Bring the mixture to a boil, then lower heat and simmer for 5 minutes, or until thickened. Remove from heat and stir in butter and rum. Set aside and keep warm. To serve: Place a dumpling on ne side of each dessert plate. Stand the cinnamon stick pieces against the dumplings. Ladle the sauce over the top of the dumplings and around the plates. Dust each plate with confectioner's sugar and garnish with a scoop of ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. - In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
- Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.
- Gently stretch out the biscuits one at a time until they're large enough to fit 1 tablespoon apple mixture. Be careful not to stretch them too thin, you don't want the dough to break.
- Add 1 heaping tablespoon apple mixture to the center of each stretched-out biscuit. Gently tuck the dough around the mixture to seal each dumpling into a ball shape.
- Line up the dumplings with the seal facing down. Use a sharp knife to slice a tiny slit into the top of each dumpling to allow them to vent while cooking.
- Bake in the preheated oven until nearly golden brown, 15 to 25 minutes.
- While dumplings are baking, melt butter for sauce in a medium saucepan over medium-low. Slowly sprinkle flour into the butter, whisking the entire time. Add water and stir to combine. Remove from heat. Whisk in sugar and vanilla extract.
- Remove dumplings from the oven and pour sauce on top. Continue to bake until the edges of the corner dumplings start to brown and pull away from the sides of the pan, 5 to 6 minutes more.

- Mix flour and salt. Cut in shortening until mixture is crumbly. Add enough water to make dough. Divide dough into 6 equal parts. Keep covered while making filling.
- Peel and slice apples. Sprinkle with cinnamon and sugar. Set aside.
- Put syrup ingredients in medium saucepan. Boil for 3 minutes.
- Roll each pastry piece into a circle. Place apples in center of each circle. Wet edges of pastry and bring up edges around the apples. Pinch to seal.

- Bake at 425° about 5 minutes or until crust just starts to brown. Reduce temperature to 350° and bake 30 minutes or until crust is golden brown.

- Cut two pieces of parchment paper to 16 by 11 inches. Set aside.
- Make the dough: In a medium bowl, whisk together flour, baking powder, salt, and sugar; sprinkle butter cubes and shortening over top of flour mixture. Using your fingers, work butter and shortening into the flour, smearing as you go, until mixture resembles cornmeal with some pea-size pieces of butter remaining. Add milk and stir, using a fork, until dough begins to hold together.
- Turn dough out onto one of the pieces of parchment paper; knead until dough feels cohesive, about 3 times. Shape dough into a rectangle and cover with second piece of parchment paper. Roll dough between parchment paper into a 16-by-11-inch rectangle. Carefully transfer to refrigerator; let chill for 30 minutes.
- Preheat oven to 425 degrees.
- Make the sauce: Meanwhile, place a medium saucepan over high heat. Add cider, rum, and brown sugar. Let simmer for 5 minutes. Remove from heat and set aside.
- Make the apples: In a small bowl, stir together brown sugar and cinnamon; set aside. Peel and core apples; trim if necessary to make each about 3 inches.
- Using a ruler and a sharp knife, trim chilled dough into a 10-by-15-inch rectangle. Cut into six 5-inch squares. Set one apple in the center of each square; fill centers of apples with brown sugar mixture. Bring corners of dough up together around apples to make four points, gently sealing at top and along seams so that the pastry fits snugly.
- Place each dumpling in a large baking dish. Pour sauce around dumplings and transfer to oven; bake for 10 minutes. Reduce oven temperature to 375 degrees and bake until dumplings are golden brown and sauce is bubbling, 25 to 30 minutes more. Serve warm in bowls with extra sauce.
