This recipe is from the September/October 2009 Weight Watchers magazine. Now you can have your crisp and eat it too. :) This is Weight Watchers version of the all-American favorite. Less fat and calories, but still has all the taste of a great apple crisp. Points Value: 3 PLEASE NOTE: THIS IS 6 POINTS ON THE NEW WEIGHT WATCHERS SYSTEM

1/2 cup all-purpose flour, plus 2 Tbsp
1/2 cup old fashioned oats (not instant)
1/4 cup packed brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon
1 pinch salt
3 tablespoons light stick butter, diced
1 teaspoon water
1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1 pinch ground cloves
3 lbs golden delicious apples or 3 lbs jonathan apples, peeled and thinly sliced
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
  • To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
  • To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.

4 apples - peeled, cored and sliced
½ cup brown sugar
1 cup all-purpose flour
¾ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
1 egg, beaten
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a 9 inch square baking pan, mix sliced apples with brown sugar. In a large bowl, mix together flour, white sugar, cinnamon and salt. In a small bowl, beat together egg and melted butter. Stir into flour mixture. Spread evenly over apples.
  • Bake in preheated oven for 30 to 40 minutes, or until topping is golden and crisp.

4 large fresh apples, peeled, cored, cut into 1/8-inch slices (6 cups sliced apples)
2 teaspoons fresh lemon juice
3/4 cup packed light brown sugar, divided
6 teaspoons tapioca
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (fresh preferred) or 1/4 teaspoon freshly grated nutmeg (fresh preferred)
1/2 cup all-purpose flour
4 tablespoons regular butter, melted

Steps:

  • Preheat oven to 400ºF. Place rack in bottom third to middle of oven.
  • In a large bowl, toss together apple slices, lemon juice, 1/4 cup sugar, tapioca, cinnamon and nutmeg; let stand for about 30 minutes.
  • Spoon apple mixture into an ungreased 9-inch square baking dish, or glass or ceramic pie plate; cover loosely with aluminum foil and bake for 30 minutes.
  • Meanwhile, to make topping, in a small bowl, combine flour with remaining 1/2 cup of sugar; mix until completely blended. Add melted butter; work in thoroughly with fingertips.
  • After pie has baked for 30 minutes, remove from oven and discard foil. Sprinkle topping over apples and bake, uncovered, until apples bubble and topping turns golden, about 35 to 45 minutes. Cool at least 2 hours before serving. Slice into 8 pieces and serve. Yields 1 slice per serving.
  • You can use any apple you like, combine different ones too.

Served this for Thanksgiving this year and it was a hit. Warm soft fruit with a crispy crunchy topping. A perfect way to celebrate the best of fall's bounty in a comforting but enlightened dessert. The fruit should total about 3 pounds and you should feel free to use your favorite varieties of apples and pears. (Although the NI information presented here suggests 4 points, the recipe builder states 3 points.)

1/2 lemon, juice of
2 bartlet pears
3 granny smith apples
1 golden delicious apple
2 tablespoons whole wheat flour
3 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 dash nutmeg
1/2 cup whole wheat flour
6 tablespoons sugar
1/2 cup old fashioned oats (not instant)
1/4 teaspoon ginger
3/4 teaspoon cinnamon
3 tablespoons unsalted butter, cold
2 tablespoons pureed pear baby food

Steps:

  • Preheat oven to 375 degrees.
  • Prepare an 11 by 7 baking or casserole dish with a light coating of cooking spray.
  • Squeeze the juice of a half lemon in to a large bowl and add water. This will help keep the peel fruit from browning while you are peeling and cutting.
  • Peel and core the fruit. Slice into thinnish slices, suggestion is to cut the pears in eighths and the apples in tenths. As you are cutting place the fruit in the bowl of water and juice.
  • Mix together the remaining ingredients for the fruit layer in a small bowl. Drain the fruit and pour in the prepared baking pan. Toss together with the sugar and spice mixture.
  • In a medium bowl, combine the dry ingredients, flour through cinnamon.
  • Cut the butter into small cubes or slices into the bowl and mix with a fork breaking up the butter into small mini pea sized bits. (I find it easiest to do this by hand.) At the end, you will have a very fine crumb.
  • Add in the two tablespoons of pear puree and mix, the size of the crumbs will grow now with additional moisture.
  • Sprinkle the crumb coating across the top of the apples and pears.
  • Bake for 45 minutes until th fruit is bubbly and the top is crisped and browned. Actual cooking time will vary according to the thinness f the slices. Check about 5 minutes before the stated cooking time.
  • Serve warm or cold.
