- Heat oven to 350°F. Grease 10- to 12-inch round pie plate or baking dish with shortening or cooking spray.
- Place round of Brie in middle of pie plate.
- In medium bowl, mix oats, brown sugar, salt, cinnamon and pecans. Add butter, and use your hands to incorporate softened butter into dry mixture. (You just want everything to be moist.) Mix in apples.
- Spread apple mixture over top of Brie and around sides.
- Bake 20 to 25 minutes or until the crisp topping is browned. Serve hot with crackers or toasted bread.

- Chop Granny Smith Apples into small chunks. Donot peel off the skin. Add the Apples in a bowl. Combine with Lemon juice and granulated sugar. Keep it aside.
- Combine AP Flour, Brown Sugar, Ground Cinnamon, Cold Butter and Rolled Oats in a bowl. Combine until the butter mixes with the flour and resembles a bread-crumb like mixture. Keep it aside.
- Place Brie in a parchment paper lined plate. Top with the apples and the crisp topping. Bake @350F or 180C for 30-40 minutes. Check if its done, by pressing the center with your finger. If it feels like it is going to break it, then its done.
- Drizzle some honey on top and serve immediately.

- Spread out the pecans in a single layer on a baking sheet and bake for about 12 minutes, stirring once or twice, until fragrant. Set aside.
- Melt the butter in a small saucepan and add the brown sugar, stir until dissolved. Add the apples and cook, stirring often, for 5 minutes. Set aside.

- Mix all of the filling ingredients together in a large bowl, then spread into the baking pan.

- Heat oven to temperature before adding the cheese. It's important the oven be fully preheated to 325°!
- Dice the bacon and cook in an iron skillet or heavy frying pan over medium heat until crispy and golden brown.
- Remove from the pan.
- Drain bacon on paper towels and set aside.
- Drain off all but about a teaspoon of the bacon drippings from the pan.
- Melt butter in the same pan over medium - low heat and add the diced apples.
- Saute apples about 2 minutes and then add the cinnamon, salt, and brown sugar.
- Cook the apples mixture a few more minutes until tender.
- Remove from heat and keep warm.
- Place the brie wheel on parchment paper on a cookie sheet.
- Carefully slice a thin layer of rind from just the very top of the wheel.
- Bake in preheated 325° F oven for 8-10 minutes, or until the cheese is soft and melty.
- Remove from the oven.
- Slide baked cheese wheel on parchment paper onto your serving dish and spoon the apple mixture over the top of the brie. Add the bacon.
