1 round (16 oz) Brie cheese
2 cups old-fashioned oats
1/4 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups raw pecans
3/4 cup unsalted butter, softened
2 small to medium red apples, chopped
Crackers or toasted bread, as desired

Steps:

  • Heat oven to 350°F. Grease 10- to 12-inch round pie plate or baking dish with shortening or cooking spray.
  • Place round of Brie in middle of pie plate.
  • In medium bowl, mix oats, brown sugar, salt, cinnamon and pecans. Add butter, and use your hands to incorporate softened butter into dry mixture. (You just want everything to be moist.) Mix in apples.
  • Spread apple mixture over top of Brie and around sides.
  • Bake 20 to 25 minutes or until the crisp topping is browned. Serve hot with crackers or toasted bread.

1 6-8 oz Wheel of brie
2 medium sized Granny Smith (chopped)
1 tbsp Lemon Juice
¼ cup Granulated Sugar
½ cup AP Flour
½ cup Brown Sugar
½ tsp Ground Cinnamon
1 stick Unsalted Butter (cold, cut into chunks)
½ cup Rolled Oats
½ tsp kosher salt (or as per taste)

Steps:

  • Chop Granny Smith Apples into small chunks. Donot peel off the skin. Add the Apples in a bowl. Combine with Lemon juice and granulated sugar. Keep it aside.
  • Combine AP Flour, Brown Sugar, Ground Cinnamon, Cold Butter and Rolled Oats in a bowl. Combine until the butter mixes with the flour and resembles a bread-crumb like mixture. Keep it aside.
  • Place Brie in a parchment paper lined plate. Top with the apples and the crisp topping. Bake @350F or 180C for 30-40 minutes. Check if its done, by pressing the center with your finger. If it feels like it is going to break it, then its done.
  • Drizzle some honey on top and serve immediately.

about 45 pecan halves
1 SweeTango apple (peeled and cut into 1/2 inch dice)
2 Tbsp unsalted butter
2 Tbsp brown sugar
16 ounce wheel of Brie cheese
pure maple syrup (about 1 cup)

Steps:

  • set oven to 350F
  • Spread out the pecans in a single layer on a baking sheet and bake for about 12 minutes, stirring once or twice, until fragrant. Set aside.
  • Melt the butter in a small saucepan and add the brown sugar, stir until dissolved. Add the apples and cook, stirring often, for 5 minutes. Set aside.
  • Put the wheel of Brie in the center of your baking dish. Chop a few of the pecans for garnish, and arrange the others around the outer edge of the cheese, in 2 layers. Spoon the apples into the center, and arrange a few around the perimeter of the cheese. Top the apples with the chopped pecans.
  • Heat the maple syrup in a small sauce pan until boiling and boil for 5 minutes.
  • Drizzle the maple syrup over the apples, it will spill down the cheese and onto the sides.
  • Cover loosely with foil and bake for about 30 minutes, or until everything is hot and the cheese is molten.
  • Serve immediately with crackers or bread.

1 apple (diced)

  • Heat oven to temperature before adding the cheese. It's important the oven be fully preheated to 325°!
  • Dice the bacon and cook in an iron skillet or heavy frying pan over medium heat until crispy and golden brown.
  • Remove from the pan.
  • Drain bacon on paper towels and set aside.
  • Drain off all but about a teaspoon of the bacon drippings from the pan.
  • Melt butter in the same pan over medium - low heat and add the diced apples.

  • Preheat the oven to 400°F. Line a half sheet pan with parchment paper.
  • In a medium skillet, heat 2 tablespoons of the butter over medium heat. Add the apples and cook, stirring often, until softened and lightly caramelized, 10 to 12 minutes. Transfer the apples to a bowl and toss with the honey. Season with salt and pepper.In a small saucepan, melt the remaining 6 tablespoons butter.
