We like to venture out into the mountain range that surrounds our family cabin. These nuts never taste better than when we enjoy them together at the peak of an amazing hike. Number Of Ingredients 9

1 tablespoon sugar
1-1/2 teaspoons kosher salt
1 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 large egg white, room temperature
2-1/2 cups unblanched almonds

Steps:

  • Preheat oven to 325°. In a small bowl, combine the first 7 ingredients. In another small bowl, whisk egg white until foamy. Add almonds; toss to coat. Sprinkle with spice mixture; toss to coat. Spread in a single layer in a greased 15x10x1-in. baking pan. Bake for 30 minutes, stirring every 10 minutes. Spread on waxed paper to cool completely. Store in an airtight container.

CUMIN-AND-PAPRIKA-SPICED MARCONA ALMONDS



Cumin-and-Paprika-Spiced Marcona Almonds image

Almonds were brought to Spain by the Moors, and they've featured in Andalusian cuisine ever since. Typically they are used as a thickener for sauces and, most famously, as the base of ajo blanco. Whole Marcona almonds are roasted with sweet or hot smoked paprika-I prefer to use sweet paprika, introduce a little heat via cayenne, and round it out with cumin and salt. In the event of a crippling Marcona almond shortage, regular blanched almonds will do the trick.

Yield Makes 3 cups

Number Of Ingredients 6

1 egg white
1 1/2 teaspoons salt
1 teaspoon plus 1/8 teaspoon cumin, for dusting
1 teaspoon plus 1/8 teaspoon sweet or smoked Spanish paprika, for dusting
1/4 teaspoon cayenne
3 cups blanched Marcona almonds

Steps:

  • Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
  • In a bowl, whisk together the egg white, salt, 1 teaspoon of cumin, 1 teaspoon of paprika, and the cayenne. Add the almonds and toss to coat.
  • Spread the almonds out evenly on the prepared baking sheet and roast until golden brown, 20 to 25 minutes, shaking the pan halfway through. Transfer to a plate to cool for about 30 minutes.
  • In a small bowl, combine the remaining 1/8 teaspoon of cumin and the remaining 1/8 teaspoon of paprika. Sprinkle this mixture over the cooled nuts. Store in a sealed container for up to 2 weeks.

Hot and Spicy Almonds image

I adopted this recipe a while ago and have changed the amount of salt. The original recipe called for 1/2 cup which seemed far too much.

1/4 cup unsalted butter
2 tablespoons Worcestershire sauce
1 teaspoon cumin, Ground
1/2 teaspoon sugar
1 teaspoon garlic powder
1/2 teaspoon cayenne powder
3 cups natural almonds
sea salt, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Melt the butter in a medium-size saucepan.
  • Add worcestershire sauce, cumin, sugar, garlic powder and cayenne pepper.
  • Cook over low heat for 2 - 3 minutes.
  • Add the nuts and stir to coat evenly with seasonings.
  • Spread the nuts on an ungreased baking sheet and toast for 15 minutes, turning occasionally.
  • Remove from the oven and toss with sea salt.
  • Cool.

2 cups whole unsalted almonds
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
2 teaspoons olive oil
1/4 teaspoon hot pepper sauce

Steps:

  • Toast the almonds in a dry skillet over a medium heat, stirring frequently, until fragrant, about 3 minutes. Transfer the almonds to a bowl.
  • In a small bowl, stir together the cumin, garlic, cayenne pepper and salt. Heat the oil in the skillet over medium heat. Stir the spices into the oil and cook, stirring until warm, about 30 seconds. Add the almonds and cook, stirring frequently, until the nuts are warm and the spices are evenly distributed. Add the hot pepper sauce and stir to distribute. Remove the almonds from the pan and allow them to cool before serving.

1 lb marcona almonds (about 3 cups) or 1 lb raw whole almond (about 3 cups)

Steps:

  • Preheat oven to 275°F Coat a large rimmed baking sheet with cooking spray.
  • Whisk brown sugar, cumin, paprika, thyme, salt and cayenne in a large bowl.
  • Whisk egg white and water in a medium bowl until foamy.
  • Add almonds to egg mixture and stir to coat; pour through a sieve to drain off excess egg white.
  • Transfer the almonds to the bowl of spices; stir well to coat.
  • Spread evenly on the prepared baking sheet.
  • Bake the almonds for 30 minutes.
  • Stir, reduce the oven temperature to 200F and bake until almonds are dry and golden, about 30 minutes more.
  • Let cool before serving, 15 to 20 minutes.
  • Store in an airtight container for up to 1 week.
  • NOTE: Spanish Marcona almonds have recently become more popular and more available. They're a little flatter than ordinary almonds, with a richer flavor. Always skinned, most Marcona almonds have already been sauteed in oil and lightly salted when you get them. For this recipe, select unsalted and oil-free nuts if you can, though either will work well. You can find them in specialty stores.

1 teaspoon salt
1/2 teaspoon ground cumin
1 orange, juiced and zested
1/4 teaspoon paprika (choose a flavorful Spanish smoked hot or sweet)
2 cups blanched almonds (brown skins removed)

Steps:

  • Preheat oven to 350°F
  • Line a large baking sheet with parchment.
  • Whisk together egg white, orange juice, zest, salt, cumin, and paprika in a bowl, then add almonds and toss to coat.
  • Spread almonds evenly on baking sheet for 10 minutes. Remove from oven and mix the nuts around, return to oven for another 10 minutes or until golden.
  • Transfer nuts on parchment to a rack and cool completely (almonds will crisp as they cool).
  • Loosen nuts from parchment with a spatula and transfer to a bowl.
  • Note: These almonds can be made several days in advance and kept in an airtight container at room temperature.

Steps:

  • In a small heavy skillet melt the butter over moderately low heat, add the cumin, the chili powder, the cayenne, the salt, and the paprika, and cook the spices, stirring, for 30 seconds. Add the nuts and stir them to coat them well. Transfer the coated nuts to a baking pan large enough to hold them in one layer and toast them in a preheated 350°F. oven for 5 minutes. Let the nuts cool and transfer them to serving dish.
