APPLE CRANBERRY STEEL CUT OATMEAL RECIPE
Perfectly sweet and tart- this is one bowl of oats that I actually enjoy and crave. The instructions are for steel cut oatmeal recipe, but I'll tell you how to use regular old fashioned oats in the notes. Enjoy!

Steps:
- To Toast Your Steel Cut Oats- optional, but adds some depth of flavor- heat up your dutch oven over medium heat and add a teaspoon of butter. When it sizzles, add the oats, and stir until lightly toasted with a pleasant toasty aroma. To Soak- Soaking enhances the nutrition profile, and makes oats easier to digest. It also saves a step the next morning. If you want to toast your oats, do that step first. All you have to do to soak is to add the oats, water, and lemon juice in your enamel or non-corrosive pan and let sit overnight.
- If desired, you can toast and/or soak your oats as directed above. Then add all remaining ingredients to your large dutch oven, and heat on medium high until boiling, stirring occasionally.
- Reduce heat to medium low and allow to simmer for 20-25 minutes, stirring more toward the end as it thickens up.
- Allow to cool before serving.
- I like to reheat the leftovers for a super fast breakfast the next day.

Steps:
- Combine first seven ingredients (flour through cinnamon) in large bowl.
- Add ½ cups applesauce and butter; cut in with pastry blender until mixture resembles coarse crumbs.
- Stir in cranberries and apple.
- In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
- Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
- Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
- Combine remaining applesauce and honey, and brush over top of dough.
- Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

- Bring water to a boil in a large pot. Stir oats into boiling water and cook at a boil until the mixture begins to thicken, about 5 minutes. Season oats mixture with salt; stir.
- Reduce heat to low and simmer oats until beginning to soften, about 20 minutes.
- Stir milk, brown sugar, melted butter, and cinnamon together in a bowl with a whisk until smooth; stir into the oats mixture. Continue cooking the oats until tender, 10 to 15 minutes more.

- In a medium Dutch oven or large saucepan (around 3.5 quarts), melt the butter over medium heat (if you’re not using butter, just warm the pan). Add the steel-cut oats and cook until fragrant, stirring often, about 2 minutes (this step enhances the flavor of the oats).
- Add the apple chunks, water and salt. Stir to combine, and raise the heat to high to bring the mixture to a simmer. Once simmering, reduce heat to medium-low and cook for about 35 minutes, until almost all of the liquid has been absorbed and the oats are nice and creamy. Stir every five minutes in the beginning, and more frequently as time goes on (you might need to dial down the heat as well).
- Remove from heat and let the oatmeal rest for 5 minutes before serving so it has more time to thicken up. Carefully taste (it’s hot!) and add maple syrup or honey if you’d like sweeter oatmeal (I used tart apples, so I added 1 tablespoon).
- Divide the mixture into individual bowls and serve with any toppings you’d like. If you’re saving extra portions for later, let them cool to room temperature, then cover and refrigerate for up to 4 days. Leftovers reheat well in the microwave, and would likely reheat well on the stove if you add some extra water to loosen them up.

- Spray a 2-quart or 4-quart slow cooker insert lightly with cooking spray. If you are using a larger volume slow cooker, be sure to double the recipe quantity as this quantity will not cook properly in a 6-quart slow cooker. Slow cookers that run HOT might cause the cooking liquid to evaporate more quickly. This may result in slightly thicker skin or crust developing on the surface of the oats (see notes below) or sides of the insert. When in doubt, reduce the cook time and adjust as necessary.
- Combine the steel cut oats, diced apple, cranberries, maple syrup, vanilla extract, cinnamon, cardamom, salt, and almond milk. Stir to mix thoroughly. Cover and cook on low heat for 6 hours (for firmer oats) to 8 hours (softer oats with the slightest chew), stirring once or twice if possible (if cooking overnight, you can skip this step). As the oats are cooking a thin, dark colored skin may form on top of the oats and they will look slightly dry at first glance. Don’t worry. Go ahead and stir the oats well until they are creamy and smooth, the skin will be absorbed and incorporated by stirring. If you prefer looser oats, stir in an additional ½ cup (120 mL) or more of almond milk. Serve hot and garnish with toppings as desired.
- Leftover oats can be stored in a container in the refrigerator. I always add a generous splash or milk or water before reheating – it loosens the oatmeal and improves the texture tremendously!
