APPLE CIDER DOUGHNUT WAFFLES
These are waffles worth waking up for -- packed with aromatic fall spices, sweet-tart from fresh apple cider, and finished with a crunchy crust of spiced sugar. Make them for breakfast or brunch, or serve them with ice cream for a perfect fall dessert!

Steps:
- Arrange a rack in the top position of the oven and preheat to 300 degrees F.
- For the spiced sugar: In a small bowl, stir together the granulated sugar, cinnamon and nutmeg to combine. Set aside.
- For the waffles: In a medium bowl, whisk the flour, brown sugar, baking powder, cinnamon, ginger, cloves, nutmeg and salt to combine.
- Add the cider, buttermilk, vanilla and eggs and whisk well to combine -- don't overmix.
- Preheat a waffle iron and spray it with nonstick spray. Scoop in enough batter to just cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. Close the lid and cook until the waffle is lightly golden brown but about 1 minute shy of being done and very crisp. (The timing will depend on your waffle iron; check after 3 to 4 minutes.)
- Open the waffle iron and use a pastry brush to lightly brush the waffle with some of the remaining melted butter. Sprinkle some of the spiced sugar over the surface and close the waffle iron. Continue to cook until the waffle is deeply brown and very crisp, 1 to 2 minutes more.
- Remove the waffle from the iron and repeat with the remaining batter. (You can hold the waffles on a rack on a baking sheet in the oven to keep them warm until ready to serve.) Serve immediately, warm.
APPLE CIDER SYRUP
Apple-licious! Easy-to-make breakfast or dessert syrup uses unfiltered apple juice and a few other common ingredients. This creamy syrup is full of rustic apple flavor and not too sweet with just a touch of tang.

- Melt butter in a saucepan over medium heat until it begins to bubble, about 1 minute. Add sugar and molasses; stir until sugar has absorbed molasses and butter, about 3 minutes. The mixture will be very dry. Add 2 cups apple cider. Mix well and bring to a slow boil. Add cinnamon stick and continue to simmer syrup for about 10 minutes.
- Whisk together 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl.
- Pour cornstarch mixture into syrup in the saucepan, whisking continuously until fully incorporated. Simmer until thickened, with a consistency similar to warm maple syrup, about 5 minutes. The syrup will thicken upon cooling.
- Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

- Prepare apples and syrup: Melt 6 tablespoons butter in a 12-in. nonstick frying pan over medium heat. Add honey, 2 teaspoons lemon juice, 1/4 teaspoons cinnamon, and apples. Cook, stirring occasionally, until apples are lightly glazed and have softened slightly, about 10 minutes.
- Meanwhile, in a medium saucepan, whisk together 3/4 teaspoons cinnamon, the sugar, and cornstarch. Add apple cider and 5 teaspoons lemon juice and whisk to combine. Bring to a boil over medium heat and cook, stirring often, 2 minutes. Remove from heat and whisk in 3 tablespoons butter.
- Make waffles: In a medium bowl, whisk together flour, baking powder, baking soda, salt, sugar, ginger, nutmeg, and cinnamon. In another medium bowl, whisk egg yolks until pale yellow; whisk in oil, buttermilk, and pumpkin.
- In bowl of a stand mixer fitted with the balloon whisk, beat egg whites until soft peaks form. Add egg yolk mixture to flour mixture, stirring to combine. Gently fold in egg whites just until blended.
- Preheat oven to 200°. Preheat a waffle iron and coat it with cooking-oil spray. Ladle 1 cup batter (or amount directed by waffle-iron maker) onto hot iron, spreading with a spatula, and cook until nicely browned, about 5 minutes. Transfer waffle directly to oven rack. Repeat with remaining batter. Meanwhile, reheat apples and syrup.
- Break waffles into sections, divide among 8 plates, and top with apples and syrup. Serve remaining syrup on the side.

APPLE WAFFLES WITH CINNAMON SYRUP
I first made these as "pancakes" for a brunch at work years ago. I have actually never made the "waffles" for my family, but each time prepare them in the form of "pancakes." It's a nice "apple-cinnamon roll" type meal for a weekend brunch. Also, when I prepare it, I seem to have way too much syrup, so I always cut the syrup recipe in half.

- Sift dry ingredients together; set aside.
- Combine egg yolks, milk and butter.
- Add liquid to dry ingredients and stir to blend.
- Fold in stifly beaten egg whites, then chopped apples.
- For syrup: Mix together all ingredients except milk.
- Bring to a full boil, then cook 2 minutes longer.
- Cool 5 minutes.
- Stir in milk and serve with Apple Waffles.
- (When reheating the syrup, use low heat so milk will not curdle).
