This came from the Yankton, South Dakota Press and Dakotan newspaper. My DD does not like cinnamon rolls (my child?) so I thought this might be more like a caramel apple and less like cinnamon. It is very caramel-like and the apples are soft and fragrant. Worth the time to make the filling. If you have a kitchen aid mixer, follow your manufacturer directions to make the dough with the mixer!

2 large cooking apples, peeled, cored and chopped
2 tablespoons flour
3/4 cup sugar
1/4 cup butter
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
5 -5 1/2 cups flour, divided
1/2 cup sugar
2 (1/4 ounce) packages quick-rising yeast
1 teaspoon salt
1/2 cup milk
1/4 cup butter or 1/4 cup margarine
3 large eggs
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • To prepare apple filling:.
  • In medium saucepan, combine apples, flour sugar and butter.
  • Bring to a boil over medium high heat.
  • Cook 3 minutes.
  • Reduce heat to medium low and cook 10 minutes, stirring constantly until thick.
  • Stir in cinnamon and nutmeg.
  • Cool completely.
  • While filling cools, prepare dough.
  • In a large bowl, combine 1 cup flour, sugar, undissolved yeast and salt.
  • Heat 1/2 cup water with milk and butter until very warm (120-130°F).
  • Gradually add to dry ingredients.
  • Beat 2 minutes at medium speed, scraping bowl occasionally.
  • Add eggs and 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally.
  • Stir in enough remaining flour to make a soft dough.
  • Knead dough on lightly floured surface until smooth and elastic, 8-10 minutes.
  • Cover and let rest 10 minutes.
  • Divide dough into 2 equal parts.
  • Roll each part into a 12x8 inch rectangle.
  • Spread cooled apple filling evenly over dough.
  • Beginning at long end of each rectangle, roll up dough as tightly as you would for a jelly roll.
  • Pinch seams to seal.
  • Cut each roll into 12 equal pieces.
  • Place, cut sides up, in two greased 9 inch round pans.
  • Cover and let rise in warm, draft-free place until doubled in size, about 45 minutes.
  • While dough is rising, prepare cinnamon-sugar topping.
  • Stir together sugar, cinnamon, and nutmeg until well blended.
  • After dough has doubled in size, sprinkle rolls with cinnamon-sugar topping.
  • Bake in 375°F oven for 25-30 minutes or until done,.
  • Remove from pan, serve warm.

1 (12.4-oz.) can refrigerated cinnamon rolls with icing
1 cup small diced Granny Smith apples (peeled or unpeeled)
3 large eggs
1/4 cup heavy whipping cream
1 teaspoon ground cinnamon
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 375°F.
  • Pour the melted butter into a 9-inch round cake pan.
  • Separate the can of cinnamon roll dough into 8 rolls then cut each roll into 8 pieces. (Reserve the icing.) Alternately arrange the chopped cinnamon rolls and the chopped apples in an even layer in the baking dish.
  • In a medium bowl, whisk together the eggs, heavy whipping cream, cinnamon and vanilla extract. Pour the custard mixture over the cinnamon rolls and apples.
  • Bake for 15 to 20 minutes or until it is golden brown and the custard is cooked through. Remove the baking dish from the oven and let it cool for 10 minutes.
  • Drizzle it with the reserved icing then slice and serve.

Steps:

  • Preheat oven to 350º. Spray your casserole dish or skillet with cooking oil.
  • Separate the cinnamon rolls and cut each into 4-6 sections. Add them to the prepared dish or skillet. Then, cover with the apple pie filling, cutting any large apple chunks into bite sized pieces.

1 ½ teaspoons ground cinnamon

Steps:

  • For sauce, whisk together all ingredients in small saucepan over medium-low heat. Cook, stirring occasionally, for 15-20 minutes until sauce thickens.
  • For cinnamon rolls, preheat oven to 350 degrees F (175 degrees C). Lightly spray an 8-inch cake pan with non-stick cooking spray. Roll out pizza dough into 8 x 12-inch rectangle with the smallest length facing you.

1 can (12.4 oz.) refrigerated cinnamon rolls with icing, divided
1/4 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F.
  • Melt butter in medium nonstick skillet on medium heat. Add apples, 3 Tbsp. sugar and 1/2 tsp. cinnamon; mix lightly. Cook 6 min. or until apples are crisp-tender, stirring frequently. Remove from heat.
  • Mix cream cheese and milk with remaining sugar and cinnamon in medium bowl until blended. Add apples; mix well.
