These were a big hit for christmas. I don't recall how many they made I'm thinking 40. These are moist little morsels of nuts flavored with apple and buttershots liqueur. These are better as they sit in an air tight container.

1 cup powdered sugar
3 tablespoons Karo light corn syrup
12 ounces vanilla wafers
1 cup almonds, toasted
1/4 cup butterscotch schnapps
1/4 cup apple Schnapps
1/4 cup sugar
1/2 tablespoon cinnamon, for rolling

Steps:

  • Place nut and wafers into a food processor and process till fine.
  • Add rest of ingredients and process till all well combined.
  • Shape into 1 inch balls pressing to mold them.
  • Roll in cinnamon and sugar.

These cookies are so easy to make because there is no baking. I always include these on my Christmas cookie tray that I take to work, and they are one of the first to disappear.

1 cup sugar
1/2 cup brown sugar
1 cup light corn syrup
1 1/2 cups peanut butter
2 teaspoons vanilla
5 -6 cups Special K cereal
milk chocolate star

Steps:

  • In a saucepan, combine sugar, brown sugar, and corn syrup. Bring to a boil; add peanut butter and vanilla.
  • Put Special K cereal in a large mixing bowl. Pour peanut butter mixture quickly over cereal, stirring to mix well.
  • Drop mixture by the Tablespoonful onto waxed paper. Press a milk chocolate star immediately in the center of each cookie. Caution: mixture will be very hot!

1/2 cup milk
1/4 cup cocoa
2 tablespoons butter
1/2 cup crunchy peanut butter or 1/2 cup smooth peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats

Steps:

  • Mix sugar, milk and cocoa, together, on medium heat.
  • Stir often, (I use a whisk).
  • Once the mixture starts boiling keep stirring and let boil for 2 to 3 min.
  • Then remove from heat add butter, and peanut butter, mix well add vanilla and oats stir and drop by spoonfulls on waxed paper.
