1 (4 pound) boneless pork shoulder roast
salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
2 shallots, sliced
1 rib celery, chopped
½ cup apple cider vinegar
2 ½ cups apple cider
4 cloves garlic, peeled
1 bay leaf
1 ½ teaspoons Dijon mustard
1 pinch cayenne pepper, or more to taste
2 tablespoons cold butter, cut into small pieces
1 tablespoon chopped fresh herbs (Italian parsley, sage, or thyme)

Steps:

  • Season pork with salt and black pepper. Heat oil in a large skillet over high heat. Sear pork on all sides in the hot oil until browned, about 3 minutes per side. Transfer pork to the slow cooker.
  • Reduce stovetop temperature to medium; cook and stir shallots and celery in the skillet until they begin to soften, 3 to 4 minutes. Pour in apple cider vinegar and cook, scraping up any browned bits, until liquid is nearly evaporated, 4 to 5 minutes.
  • Pour shallot mixture over pork shoulder in the slow cooker. Add apple cider, garlic cloves, and bay leaf. Cover, set slow cooker to Low, and cook until fork-tender but not falling apart, about 6 hours. Turn pork over every 1 to 2 hours. Remove pork roast to a plate and cover loosely with foil.
  • Pour remaining liquid from the slow cooker through a fine mesh strainer into a large saucepan; place over high heat. Discard bay leaf and other solids. Bring sauce mixture to a boil, decrease heat and cook, skimming fat from the top, until reduced to 1/4 of the original volume, about 10 minutes.
  • Remove sauce from heat and stir in Dijon mustard and cayenne pepper. Slowly whisk in cold butter until incorporated. Sprinkle in fresh herbs and season with salt and black pepper to taste.
  • Cut pork into 1/4-thick slices and serve with sauce poured over the top.

1 cup sparkling apple cider, or more as needed
¼ cup brown sugar
1 teaspoon ground cinnamon
1 (18 ounce) bottle honey barbecue sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Place pork into the bottom of a slow cooker and pour cider over the meat until it is covered. Add brown sugar and cinnamon, making sure they're in the cider and not on the sides of the slow cooker.
  • Cover and cook on Low until pork shreds easily, 7 to 12 hours.
  • Transfer pork carefully to a plate or bowl, being careful it doesn't fall apart in the cider. Shred using 2 forks. Stir in barbecue sauce.

1 apple, peeled and roughly chopped
3 cloves garlic
2 cups apple cider
1 ½ cups water

1 (3 pound) pork loin roast
2 teaspoons vegetable oil
1 stalk celery, roughly chopped
4 large carrots, roughly chopped

Steps:

  • Combine 1/4 of the onion, 1/2 of the apple, and the garlic in the bowl of a food processor. Process until smooth. Transfer to slow cooker along with the apple cider and water.
  • Season the roast with salt and pepper. Combine the ginger and flour in a shallow container. Gently press the roast onto the flour mixture to coat all sides. Brush off any excess flour. Heat the oil in a large, heavy skillet. Brown the pork in the hot oil, turning until golden on all sides. Place the browned roast in the slow cooker and scatter the celery and the remaining onion and apple on top. Cook on low for 4 hours, then add carrots. Cook for an additional 3 hours.
  • Remove the cooked roast and carrots to a heated platter. If desired, thicken the cooking juices from the slow cooker to make a gravy.

This homemade cider couldn't be easier: Cut a dozen of your favorite apples into wedges -- skins, seeds, stems and all -- and add to a slow cooker with some spices and water. A bonus: your house will smell delicious too!

6 large tart apples, such as Granny Smith (about 2 pounds)
6 large sweet apples, such as Gala (about 2 pounds)
12 whole cloves
6 cinnamon sticks
1/2 to 1 cup packed light brown sugar

Steps:

  • Thoroughly wash and dry the apples. Cut each apple into 8 wedges (skins, seeds and stems included) and transfer to a 7-quart slow cooker. Add the cloves, cinnamon sticks and 12 cups water. Cook on high, covered, for 4 hours.
  • Remove the lid and carefully crush the apples with a potato masher. Cover again and cook on high for another 2 hours.
  • Set a large, fine-mesh strainer over a large stockpot. In batches, ladle the apple mixture into the strainer and use the back of the ladle to press down on the apple pulp to extract the liquid. Discard the pulp. Stir in 1/2 cup of the brown sugar until completely dissolved. Taste and add additional sugar if needed.
  • Serve the apple cider hot or allow it to cool fully, then serve it chilled over ice.

CROCK POT NORMANDY PORK WITH APPLES, SHALLOTS & CIDER



Crock Pot Normandy Pork With Apples, Shallots & Cider image

A lovely slow cooked or crock pot recipe for tender chunks of pork cooked in cider with apples, shallots, creme fraiche & calvados. My own recipe devised for our Chambres d'Hotes here in France - and ALWAYS a firm favourite with guests, family & friends alike! It is my daughter's first night request when she comes home from university! You can use any cut of pork, but I usually use shoulder, neck, collar or blade of Pork - there are numerous names for that cut. It's sweeter and inclined to be more tender than Pork leg, which I feel is better roasted. You can also use Pork chops if you wish. If you have difficulty getting hold of cider or don't want to use alcohol, apple juice is just as good, for that appley zing! There is no duplicate for calvados, so just leave it out if you cannot obtain it, or use brandy or cognac instead. This makes a lovely pie filling if you have leftovers and as with most slow cooked recipes, it's very well behaved when re-heated! It goes extremely well with Recipe #191313 & mashed potatoes. N.B. I have given amounts for 8-10 people; the recipe can be halved or increased with ease!

3 lbs pork shoulder, trimmed of fat & cubed
4 -6 apples, cored & halved
1 1/2 lbs shallots, peeled
1 tablespoon balsamic vinegar
2 ounces butter
1 fluid ounce olive oil
1/2 pint sweet apple cider
2 tablespoons apple cider vinegar
6 ounces creme fraiche or 6 ounces sour cream
1/4 pint chicken stock, thickened
fresh thyme or 2 teaspoons dried thyme
salt
black pepper
1 -2 tablespoon calvados or 1 -2 tablespoon brandy

Steps:

  • Trim the pork of any thick fat. Cut into large cubes of about 4" square or even bigger - it shrinks with cooking & works better with larger pieces of meat.
  • Peel the shallots and set to one side.
  • Halve & core the apples and set to one side with the shallots.
  • Turn the crockpot onto High. Mix the cider, cider apple vinegar, creme fraiche, salt & pepper, thyme & thickened chicken stock together in a large pouring jug & pour into the crockpot.(If using fresh thyme - leave to last.) Add the cored and halved apples and replace the lid whilst you brown the pork & shallots.
  • Heat up half the butter & half of the olive oil in a large skillet or wok-type pan, one with fairly high sides.
  • As soon as it is smoking but not burning, brown the shallots in batches - you want a deep caramelised colour & the shallots just softened on the outside. When all the shallots have been done, put them all back into the pan - turn up the heat & add the balsamic vinegar and stir briskly making sure all the shallots are well coated.
  • Add the shallots & Balsamic vinegar mixture to the crockpot.
  • Heat up the remaining butter and oil, adding more if necessary & start to brown the pork pieces, again do not overcrowd the pan - they need to be well coloured & seared to seal in the juices. As the pork pieces are browned, add them to the crockpot.
  • When all the pork is browned & added to the crockpot, give all the ingredients a good mix around in the crockpot with a wooden spoon. If using fresh thyme, pick about 4 large sprigs and place on top of the Normandy Pork - the leaves fall off during cooking & leave the bare branches for throwing away!
  • Cook on high for between 6 - 10 hours.
  • Just before serving, pour in Calvados and mix through. Serve each person with 2 -3 pieces of pork, a cooked apple half & 1 or 2 shallots; add a dollop of creme fraiche on the side & garnish with Thyme & a fresh Apple sliver if desired. Decant the excess sauce into a gravy boat for extra saucy bits!
  • Great with spiced red cabbage, fluffy mashed potatoes or pommes Dauphinoise.
  • To cook in an conventional oven, follow recipe as above, but cook in a La Creuset type oven proof dish; pre-heat oven to 175 C or 350 F and cook slowly for about 6 hours, checking after 4 hours. It will cook quite happily for up to 8 hours if this helps in your time management, you may have to turn the oven down to about 125 C, 250 F after 4 hours for a long slow 8 hour cooking time.

1/2 teaspoon ground mustard
1/2 teaspoon paprika

1 boneless pork shoulder butt roast (3 pounds)

Steps:

  • Mix first 5 ingredients. Place apples, onion, celery and cider in a 5-qt. slow cooker; top with roast. Sprinkle roast with seasoning mixture. Cook, covered, on low until tender, 6-8 hours., Remove roast; shred with 2 forks. Skim fat from cooking juices. Mix cornstarch and water; stir into cooking juices. Cook, covered, on high until thickened, 10-15 minutes; stir in pork. Serve on buns. If desired, top with apple slices. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

1 teaspoon baking soda

3 ½ teaspoons ground cinnamon, divided
3 large eggs
1 cup firmly packed light brown sugar
1 cup canola oil
½ cup whole buttermilk
¼ cup apple butter
2 teaspoons vanilla extract
1 cup white sugar, divided
1 medium Honeycrisp apple, peeled and grated
¼ cup unsalted butter, melted

Steps:

  • Pour apple cider into a medium saucepan and bring to a boil over high heat. Cook, without stirring, until reduced to about 1/2 cup, 12 to 15 minutes. Remove from heat and set aside.
  • While cider reduces, preheat the oven to 350 degrees F (175 degrees C). Generously rub shortening all over the inside of a 12-cup Bundt pan. Sprinkle some flour all over inside of pan over shortening and tap around to completely cover in flour. Tap out excess flour and set pan aside.
  • Whisk together flour, baking powder, baking soda, salt, nutmeg, cloves, and 2 teaspoons of the cinnamon in a medium bowl.
  • Whisk together eggs, brown sugar, oil, buttermilk, apple butter, vanilla, 2/3 cup of the granulated sugar, and reduced apple cider in a large bowl. Add half of flour mixture to egg mixture and stir to combine. Add remaining half of flour mixture and grated apple and stir until just incorporated, but some lumps still remain, and making sure apples are evenly incorporated (you may need to use a fork to separate apple pieces). Pour into the prepared pan.
  • Bake in the preheated oven until golden brown and a toothpick inserted in center of cake comes out clean, 50 to 55 minutes. Cool cake in the pan on a wire rack for 15 minutes. Remove cake from pan to a wire rack to cool completely, about 1 hour.
  • Stir together remaining 1/3 cup granulated sugar and 1 1/2 teaspoons cinnamon in a small bowl. Brush melted butter evenly over outside and center ring of cake. Sprinkle top and sides of cake with cinnamon-sugar. Serve.

4 teaspoons vegetable oil
2 onions, chopped medium
3 garlic cloves, minced
1 cup dry white wine
2 cups low sodium chicken broth
1 cup apple cider
1 cup pitted prunes
2 bay leaves
2 tablespoons minced fresh thyme (or 2 t. dried)
1 lb carrot, peeled and cut into 1-inch pieces
1/2 cup all-purpose flour
1 cup heavy cream
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1/4 cup minced fresh parsley

Steps:

  • Dry the roast with paper towels, then season with salt and pepper.
  • Heat 2 teaspoons oil in a 12-inch skillet over med-high heat until just smoking.
  • Brown the roast on all sides, reducing the heat if the fat begins to smoke, about 10 minutes; add the rost to the slow cooker.
  • Add the remaining 2 teaspoons oil to the skillet and heat over medium heat until shimmering.
  • Add the onions and 1/4 teaspoon salt; cook until softened, about 5 minutes.
  • Stir in the garlic and cook for about 15 seconds.
  • Stir in the wine, scraping up any browned bits.
  • Simmer until the wine has reduced by half, about 3 minutes, then pour into the slow cooker.
  • Add the broth, cider, prunes, bay leaves, and thyme to the slow cooker.
  • Nestle the carrots into the slow cooker around the edges.
  • Cover and cook on LOW 5--6 hours, until the roast is tender and reads 165-175° on an instant-read thermometer.
  • Transfer the pork to a carving board and tent loosely with foil.
  • Let the cooking liquid settle for 5 minutes, then use a wide spoon to skim the fat off the surface.
  • Discard the bay leaves.
  • Set the slow cooker to high.
  • Whisk the flour with the cream until smooth, then stir into the slow cooker.
  • Continue to cook until the sauce is thickened and no longer tastes of flour, 15-30 minutes longer.
  • Stir in the mustard, lemon juice, and parsley and season with salt and pepper to taste.
  • Untie the roast and slice 1/2 inch thick.
  • Arrange the meat on a warmed serving platter and pour about 1 cup of the sauce over the top.
  • Serve passing the remaining sauce separately.

True comfort food for chilly winter evenings, this slow-cooker recipe combines meltingly tender pork, smoked bacon and cider

2 tbsp rapeseed oil or olive oil
600g pork shoulder or pork cheeks, fat and sinew trimmed, cut into chunky pieces
1 large onion, chopped
2 carrots, cut into chunky pieces
2 celery sticks, cut into chunky pieces
200g pack smoked bacon lardons
250ml dry cider (or use 100ml apple juice mixed with 3 tbsp cider vinegar and 100ml water)
2 eating apples (we used Braeburn), cored and cut into chunky pieces
1 chicken stock cube
1 bay leaf
3-4 thyme sprigs, plus extra to serve (optional)
140g crème fraîche
1-2 tbsp Dijon mustard, plus extra to serve (optional)
1-2 tsp cornflour, optional
mashed potato and greens, to serve

Steps:

  • Heat half the oil in a large pan and brown the meat in batches. Don't overcrowd the pan, and only turn the meat when it has a deep brown crust on the underside, as this will add lots of flavour to the stew. When one batch is cooked, tip it into the slow cooker and continue with the next batch, adding more oil as you need it.
  • When all the meat has been transferred to the slow cooker, add the onion, carrots and celery to the pan and cook for 5-10 mins to just soften, scraping any meaty bits up from the bottom of the pan. Tip the veg into the slow cooker. Add the lardons to the pan and fry until crispy. Pour in the cider, bubble for 1 min, again scraping the bottom of the pan, then tip the cider and lardons into the slow cooker too. Add the apples, stock cube and herbs to the slow cooker, pour in 400ml water, season well and turn the heat to Low. Cover with the lid and cook for 6-8 hrs until the meat is very tender. (If you don't have a slow cooker, tip all the ingredients back into the pan, cover with a lid and cook for 3 hrs over a low heat, stirring every now and then to prevent it from catching on the bottom. You may have to add a splash of water during cooking if the sauce looks dry.)
  • Turn your slow cooker up to High. Add the crème fraîche and mustard to the stew and check the seasoning. If the sauce is thin, you can thicken it with the cornflour - ladle 2 spoonfuls of the sauce into a pan and bring to a simmer, mix the cornflour with 1-2 tsp cold water to make a paste, then stir it into the sauce. Once thickened, return the sauce to the slow cooker and cook for 10 mins more on High, stirring occasionally (or for 5 mins on the hob). Serve with mashed potato, greens and extra mustard and thyme, if you like.

  • In a small bowl, mix the salt, pepper, paprika and mustard. Using pieces of cotton kitchen twine, truss the pork along it's length, leaving about 2” between each section. Spread the rub over the pork evenly, coating all sides.
  • Spread the onions over the bottom of the slow cooker, top the onions with the thyme and garlic, then pour the apple cider and apple cider vinegar over the onions. Nestle the seasoned pork shoulder on top of the onions. Cover and cook on low for 8 hours.
  • Using scissors, cut the kitchen twine and gently remove it from the pork. Using two forks, gently shred the pork directly in the pot into large chunks. With tongs, toss the pork with the onions and the sauce.
  • Alternatively, remove the pork from the crock pot with tongs and set aside. Strain the liquid into a sauce pot and bring to a boil over high heat. Reduce heat to low and simmer until the sauce is reduced by half. While the sauce is reducing, shred the pork and return it to the crock pot with the cooked onions. Pour the reduced sauce over the onions and pork, and toss to combine.
