A simple yet stunning recipe that combines well known flavours to create an exquisite dish

1 tbsp sunflower oil
2 red onions , roots trimmed and cut into eighths
2 large pears , quartered and cored (leave the skin on)
few sprigs rosemary , leaves roughly chopped
4 pork steaks, about 175g/6oz each, trimmed of excess fat
50g blue cheese , cubed

Steps:

  • Heat the oil in a roasting tin on the hob (use 2 rings), then add the onions, pears, most of the rosemary and seasoning. Fry for 5 mins or until just starting to caramelise.
  • Heat grill to high. Season the pork, then arrange among the veg and fry for 5 mins, turning halfway until golden and cooked through. Scatter with the remaining rosemary and the cheese, grill until the cheese starts to melt, then serve.

Roast pork belly with pear cider, bay leaves and pears for an autumnal main course. It's perfect for a special Sunday lunch for family and friends

1½kg pork belly, skin scored
rapeseed oil, for drizzling
1 carrot, roughly chopped
1 celery stick, roughly chopped
1 white onion or 4 shallots, roughly chopped
1 star anise
3 bay leaves
2 pears, cored and quartered
200ml dry pear cider
1 tbsp plain flour
roast potatoes and steamed greens, to serve (optional)
3 tsp sea salt flakes
1 tsp fennel seeds
1 tsp white peppercorns

Steps:

  • To make the rub, put the ingredients in a pestle and mortar and crush together. Reserve ½ tsp of the rub and set aside. Cut some slashes into the underside of the pork using a sharp knife, then pat the rub all over the flesh, avoiding the skin. Put on a plate, skin-side up, and leave to cure in the fridge for at least 3 hrs.
  • Remove the pork from the fridge at least 30 mins before cooking so it comes to room temperature. Heat the oven to 180C/160C fan/gas 4. Pat the reserved rub over the pork skin, and rub a little rapeseed oil all over. Put the carrot, celery, onion, star anise and bay leaves in a large flameproof roasting tin. Pour over a small glass of water, then place the pork on top, skin-side up. Roast for 1 hr 30 mins. Arrange the pears in the tin around the pork, coating them in the juices, and pour the cider into the tin, avoiding the pork skin (if the skin gets wet, you won't end up with crisp crackling). Turn the oven up to 220C/200C fan/gas 7 and roast for a further 15-20 mins. The pork skin should be crisp, and the pears glazed in the juices. Remove the pork from the tin. Leave to rest for 45 mins.
  • Transfer the pork to a serving platter. Gently lift the pears out of the tin and arrange next to the pork. Discard the carrot, celery, onion and bay, then skim some of the fat from the surface of the juices (you can transfer this fat to a jar and use it for cooking roast potatoes, or making rillettes, and more).
  • Put the roasting tin with the skimmed juices on the hob over a medium heat. Sprinkle in the flour and whisk it into the juices until smooth and thickened. Add a splash of hot water if it becomes too thick. Pour the gravy into a warm jug. Cut the pork into portions with a sharp knife, then serve with the roasted pear quarters, the gravy, and some roast potatoes and steamed greens, if you like.

3 tablespoons unsalted butter
3 Bosc pears, peeled, cored and quartered
1 pound pork tenderloin, trimmed, sliced into twelve 1-inch thick medallions, seasoned
1/2 cup all-purpose flour
1 cup chicken broth (I didn't use this, and it turned out fine)
1/2 cup hard apple cider (or fresh apple cider)
1/2 cup white wine
1/3 cup heavy cream
1 vanilla bean, split lengthwise and scraped
Salt & pepper to taste

Steps:

  • I like to cut my medallions in 2-inch thickness, cover it with plastic and flatten them with a mallet (or a very heavy skillet). Season the flour with salt & pepper and whisk together. Dredge the pork in the flour. Set aside. In a large skillet (not nonstick), melt butter over medium-high heat. Add pears and sauté until lightly browned on all sides; remove from pan. Add a little bit of olive oil (1 to 2 tablespoons) to the pan and heat to medium high. Add pork medallions to the same pan, sautéing for 2 to 3 minutes on each side; turn over when golden brown and cook for 2 to 3 minutes more; remove from pan. Deglaze the pan by adding the white wine, on a medium high heat (or use broth instead of wine). Add cider and cream; add to the pan and bring to a boil, then add vanilla pod and seeds. You can also use vanilla paste instead, which is more cost effective. Boil the sauce until reduced by half, about 4 minutes. Return pears and pork to the pan (pork on the bottom) along with any accumulated juices. Boil until thicker, about 4 to 6 minutes. (The sauce will also thicken a bit when it's removed from the heat.) Season with salt and pepper before serving.

VANILLA SCENTED PEARS

1 can (15 1/4 ounces) sliced pears in honey syrup, drained and syrup reserved (recommended: Del Monte)
2 tablespoons pear brandy
1 vanilla bean, scraped
1 (4-pack) vanilla pudding (recommended: Hunt's Snack Pack)
1 package (4 ounces) store bought prepared crepes

Steps:

  • In a medium saucepan add pear syrup, pear brandy, and vanilla bean. Turn heat to high and reduce pear syrup to a thick consistency, about 10 minutes.
  • Reduce to a simmer and add pear slices. Heat thoroughly. Remove whole vanilla bean.
  • Take 2 crepes and spread pudding evenly between them. Fold crepes into quarters. Top with pears and syrup. Serve warm.

CREAMY PORK & PEAR CASSOULET

2 tbsp vegetable oil
400g pork loin steak, cut into strips
2 medium onions, sliced
2 garlic cloves, crushed
small pack sage leaves, chopped
2 tbsp plain flour
500ml bottle apple or pear cider
2 medium pears, cored and each cut into 8 slices
100ml double cream
crusty bread, to serve

Steps:

  • Heat half the oil in a medium saucepan or flameproof casserole over a high heat. Season the pork and fry for 3-4 mins, then transfer to a plate. Reduce the heat to medium and add the remaining oil and onion. Soften for 8 mins, then add the garlic and fry for another 2 mins.
  • Add the sage and flour, stir and cook for 1 min. Increase the heat, then pour in the cider and bubble for 4 mins. Return the pork and juices to the pan, season, then reduce to a simmer and cover. Cook for 10 mins.
  • Add the pear slices, stir and cook for another 10 mins. Stir through the cream, season, then divide between bowls and serve with crusty bread.

4 pears, firm, cored and peeled (D'Anjou or Bosc)
2 quarts apple cider, organic
1 vanilla bean, split and quartered
2 oranges, organic, juiced, peeled, chopped (pith removed)
4 ounces bittersweet chocolate

Steps:

  • Cut pears in half lengthwise and place them in one layer in a pan.
  • Cover with cider (start with 3 cups).
  • Add vanilla bean and bring to a simmer over medium-high heat.
  • Reduce heat to low and cook until barely tender (8 to 10 minutes- time will vary depending on ripeness of pears)- test with wooden skewer.
  • Allow pears to cool in the cider (refrigerate overnight if you wish).
  • Thinly slice orange peel, removing all white pith.
  • Melt chocolate in a double boiler or microwave over low heat, stir in peel and stir to coat.
  • Arrange to dry on a rack or plate.
  • At serving time, serve each pear in a bowl with fresh orange juice and a sprinkle of candied peel.

4 pork chops or 4 pork steaks
1 tablespoon oil or 1 tablespoon shortening
fresh ground pepper, to taste
freshly ground salt, to taste
8 pear halves in natural juice (well drained if canned)
2 tablespoons orange juice
1/4 cup firmly packed brown sugar
1/4 teaspoon cinnamon
1/4 cup dry sherry or 1/4 cup orange juice
1 tablespoon butter
1 teaspoon cornstarch
1 tablespoon cold water

Steps:

  • In a large frying pan, brown the pork chops in hot oil; drain.
  • Transfer the pork chops to a shallow baking pan and season with salt and pepper.
  • Arrange the pear halves around the chops.
  • Drizzle orange juice over all.
  • Sprinkle with brown sugar and cinnamon.
  • Pour sherry over all.
  • Place butter in the hollow of pears.
  • Cover and bake at 350°F for 20 minutes.
  • Uncover and continue baking for 20 minutes, until meat is tender.
  • Place the pears and pork chops on a platter.
  • Dissolve cornstarch in water, stir into sauce mixture and cook until thickened.
  • Pour over pork chops and pears.
  • Enjoy!

ROAST PORK WITH PEAR SAUCE

2kg loin of pork , on the bone
2 tbsp sunflower oil
25g butter
4 ripe pears , peeled, cored and chopped into chunks
1 tbsp fennel seeds
150ml perry or dry cider
2 tbsp golden caster sugar

Steps:

  • Heat oven to 240C/fan 220C/gas 9. Dry the skin of the pork with kitchen paper, then rub with the oil and season generously with sea salt. Sit the pork in a roasting tin, then roast for 20 mins. Reduce the heat to 190C/fan 170C/gas 5 and continue to roast the pork for 1 hr 20 mins until cooked and skin has turned to crisp crackling. If the skin isn't crisp enough, turn the oven back up to 240C/fan 220C/gas 9 for a further 10 mins.
  • While the pork is roasting, make the pear sauce. Heat the butter in a saucepan and sizzle the pear chunks and fennel seeds together until they start to brown. Add the perry or cider and sugar. Bubble everything down until the perry is reduced and has become sticky and caramelised, and the pear is tender and starting to collapse. If the pears don't break down, use a potato masher to mash into a rough purée. Serve the sauce in a bowl alongside the pork with your favourite side dishes.
