MASHED SWEET POTATOES, PORK CHOP WITH CIDER GRAVY, SAUTEED APPLES AND ONIONS

- In a medium pot add sweet potatoes and cover with salted water. Bring to a boil, lower the heat and simmer until fork tender, 15 to 18 minutes.
- Season chops with salt and pepper. Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a large skillet over medium-high heat. Cook pork 5 minutes on the first side until deeply golden, turn and cook 3 to 4 minutes more with a loose foil tent over the pan. Remove cooked chops to a plate and cover to keep warm. Add another turn of the pan of olive oil, add the onions and apples. Season with salt, pepper and thyme and cook until just tender, 5 to 6 minutes. Douse with juice of a lemon and remove onions and apples to a bowl; keep warm.
- Add 2 tablespoons butter to the skillet, melt then whisk in flour, cook 1 minute then whisk in cider and 1 cup of stock. Season the gravy with salt and pepper. Thicken 4 to 5 minutes over medium-low heat.
- Drain cooked sweet potatoes and return pan to stove. Melt 2 tablespoons butter and combine with marmalade and 1 cup stock. Add potatoes and mash, season with salt and pepper.
- Serve chop covered with apples and onions, gravy poured down over top, sweet potatoes alongside.
CIDER-GLAZED SWEET POTATOES WITH CRANBERRIES
Though I am not diabetic, the emphasis on lower sugar and higer fiber recipes suits my own tastes. This is an adaptation of a recipe from dlife.com (which obtained it from the American Cancer Research Institute) with changes that do not alter the exchanges. I am planning to try this for Christmas but want it here for safekeeping. Most likely, I will try this with the Splenda brown sugar blend which will actually reduce the carb count. (Dietary Exchanges: 1-1/2 Starch; 1 Fruit; 1 Fat)

Steps:
- Cook sweet potatoes in a large pot of boiling salted water until halfway cooked, (a knife inserted into center will face some snap), about 5 minutes. Drain and cool. (You can do this a day in advance and store the cubes in the icebox in a covered container.).
- Combine cider, sugar, butter, nutmeg and allspice in a large non-stick skillet over medium-high heat. Bring to a boil, stirring often. Add potatoes and reduce heat so liquid is simmering.
- Cook 5 minutes, stirring occasionally. Add cranberries and continue cooking until liquid is reduced to a syrupy glaze and potatoes are tender, about 10 minutes. (If the glaze becomes very thick before potatoes become tender, thin it with a small amount of cider or a water).
- When potatoes are tender, add salt and pepper to taste.

APPLE CIDER GLAZED "DOUBLE CUT" PORK CHOP WITH SWEET POTATO HASH, TOMATO JAM AND SOUTHERN GREENS
Steps:
- Preheat grill to medium. Remove the chops from the Marinade and wipe off any excess Marinade. Grill chops, basting with Apple Cider Glaze until desired temperature. Medium temperature is 15 to 18 minutes. Present chops with a base of Sweet Potato Hash with pork chop placed on top and garnish with a rosemary sprig.
- Marinate the pork chops for 2 to 3 hours. In the meantime make hash and glaze.
- Saute onions and garlic in the olive oil over medium heat in saucepan until translucent. Add andouille sausage and stir well to combine. Once some of the fat begins to render from the sausage and the diced sweet potato and cook for stirring frequently for 10 minutes. Add chicken stock until evaporated then add cream and reduce until gone. Season with salt and pepper and keep warm.
- Caramelize the honey and brown sugar in a pan over medium heat, stirring constantly. Combine the apple cider, vinegar and garlic and add to sugar, bring to boil over high heat. Lower the heat to medium and simmer for 30 minutes. Strain into a small saucepan and add thyme, sage, and pepper and cook over medium heat for 15 minutes. Remove herbs and reserve for pork chops.

- Cut sweet potatoes into 1/4 to 1/2 inch thick slices and place slices in the crock pot.
- Whisk together the brown sugar, maple syrup and apple cider, pour over potatoes and stir to coat.

- Boil the potatoes until they are tender and remove skins and cut into slices.
- Peel the apples and remove the core and slice into rings.

- Heat oven to 350 degrees. Spray an 8X8 baking dish with olive oil or coconut oil cooking spray.
- Before you start layering your sweet potatoes and apples in your dish, make a layer in the bottom of your dish with your largest pieces of sweet potato (the ones that look the nicest) now take them out and set them aside, they will be your top layer.
- Ok, now you can start layering, starting and ending with the sweet potatoes (if they overlap a little that's fine). Don't forget about using your pretty potatoes for your top layer! You should have 4 layers of potato and 3 layers of apple. They will likely be slightly higher than your dish, that's ok, they cook down quite a bit. Set aside while you make your sauce (potatoes may slightly brown in some spots, no big deal, they're going to brown in the oven anyway!)
- In a small sauce pot, melt the butter. Once melted, whisk in the flour, letting the flour cook for a minute or two. Whisk in the cider, salt and maple syrup, continue cooking until thickened. Turn off heat. Carefully spoon all of the sauce over the potatoes and into the crevices between. Cover tightly with a piece of foil sprayed with cooking spray and bake in the oven for 1 hour.
