1/4 cup firmly packed brown sugar
1 tablespoon Land O Lakes® Butter
1 ( ) large (2 cups) tart apple, sliced 1/8 inch
1/4 cup sweetened dried cranberries
4 (7-inch) low fat whole wheat tortillas, warmed
4 (3/4-ounce) slices Land O Lakes® Sharp Cheddar American Blend cut in half diagonally

Steps:

  • Combine brown sugar and butter in 10-inch skillet. Cook over medium heat, stirring occasionally, 2-3 minutes or until bubbly. Add apple slices; continue cooking 5-8 minutes or until slices are tender. Stir in dried cranberries. Remove from heat.
  • Heat 10-inch skillet or electric griddle over medium heat.
  • Spray 1 side each tortilla with no-stick cooking spray. Layer each, sprayed-side down, with 1/4 apple mixture and 2 cheese halves. Fold tortillas in half over mixture.
  • Place 2 quesadillas into skillet. Cook, turning once, 3-5 minutes or until golden brown. (If necessary, wipe out skillet with paper towels.) Repeat with remaining tortillas.

Steps:

  • Sprinkle cheese over half of tortilla. Layer on apple slices, barely overlapping. Add more cheese. Fold over other half of tortilla.
  • Liberally spray cooking spray on a skillet over medium high. Add quesadilla. Cook 2-3 minutes per side.
  • Allow apple cheddar quesadilla to cool completely before cutting and storing. (This will prevent quesadilla from getting soggy!) Enjoy warm or cold!

1 large or 2 small apples
6 tortillas
1-1/2 c sharp cheddar cheese, shredded
2 Tbsp butter

Steps:

  • 1. Thinly slice the apples into 24 1/4-inch-thick slices.
  • 2. Sprinkle 2 tablespoons cheese over one half of the tortilla. Place four apple slices, barely overlapping, on top of cheese. Then sprinkle 2 more tablespoons of cheese on top of the apples and fold the tortilla in half. Repeat with remaining tortillas.
  • 3. Heat 1 tablespoon butter in a large skillet over medium-high heat and cook the quesadillas until the cheese melts and the tortillas are golden brown on both sides, about 2 minutes per side. Repeat with the remaining butter and tortillas.

2 medium (2/3 lb.) Granny Smith apples, cored, thinly sliced
2 Tbsp. brown sugar
1/4 cup dry roasted peanuts, chopped, divided
1/4 tsp. ground cinnamon
4 flour tortillas (6 inch)
1/2 cup KRAFT Shredded Sharp Cheddar Cheese
1/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Melt butter in medium skillet on medium-high heat. Add apples; cook 5 to 7 min. or until apples are soft and brown. Add brown sugar; cook 2 min. or until sugar is dissolved. Remove from heat; add 3 Tbsp. of the peanuts and the cinnamon. Spoon evenly onto centers of tortillas; sprinkle with cheese. Fold tortillas over to completely enclose filling.
  • Heat large nonstick skillet on medium-high heat. Add tortillas, two at a time; cook 2 to 3 min. on each side or until lightly browned on both sides. Repeat with remaining tortillas.

1 cup sauerkraut (rinsed)
1/2 cup water
2 tablespoons olive oil
2 large flour tortillas (two 10-inch tortillas)
1 1/3-1 1/2 cups extra-sharp cheddar cheese (freshly grated)
1 small granny smith apples, juicy apple (peeled and very thinly sliced) or 1 small other tart juicy apple (peeled and very thinly sliced)
chopped ham (optional)

Steps:

  • Put sauerkraut and water in a medium nonreactive skillet. Gently heat just until the liquid has evaporated but not so much that the sauerkraut begins to stick to the pan. Remove from the heat.
  • Preheat oven to 425°F.
  • Cover a large cookie sheet with parchment paper.
  • Brush about one tablespoon olive oil onto each large tortilla. Turn tortilla over.
  • On each tortilla, sprinkle 1/3 cup cheese over half of it.
  • Arrange about half the apple slices over the cheese, then top with half the sauerkraut, spreading it evenly.
  • Sprinkle both tortillas with another 1/3 cup cheese.

1 tablespoon plus 1 tsp. fresh lemon juice (from 1 lemon)
.25 teaspoon kosher salt
1 5-oz. pkg. fresh baby spinach
2 avocados, sliced (about 2 cups)

Steps:
