Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.
- Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
- Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes.
- Makes 6 large tortillas; may be cut in half to serve 12.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the chili, salsa and green chilies. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Spoon about 1/2 cupful beef mixture off center on each tortilla. Top each with a slice of cheese; roll up. Serve with taco sauce and lettuce if desired.

- Place apple slices and water in a microwave-safe bowl and cover tightly with plastic wrap. Microwave on high power until apple slices are soft, about 3 minutes.
- Mix butter, brown sugar, and cinnamon in another microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until melted and the consistency is of a thick liquid. Spread on tortilla and lay apple down the middle. Place in the refrigerator until cool, about 15 minutes.
- Remove from the refrigerator and place ice cream on top of apples. Wrap tortilla as you would wrap a burrito.

CHIPOTLE-INSPIRED VEGETARIAN BURRITO BOWL
This homemade take on Chipotle's sofritas is made from crumbled tofu simmered in a spicy poblano sauce. It's not just for vegetarians-even the meat lovers in your life will find this dish hard to resist. We serve the mixture in bowl form with brown rice, black beans, pico de gallo and lettuce, but it's also great as a taco or burrito filling.

- Preheat the oven to broil.
- Place the onion wedges and poblano on a rimmed baking sheet and rub with 1 tablespoon of the olive oil. Broil, turning several times with tongs, until the poblano has collapsed in on itself and the vegetables are charred, 6 to 8 minutes. Remove from the oven. When the poblano is cool enough to handle, remove and discard the skin, stem and seeds.
- Transfer the poblano to a blender. Add the charred onion wedges, chipotle pepper and adobo sauce, garlic, soy sauce, tomato paste, chili powder, vinegar, cumin, 1/2 cup water, 3/4 teaspoon salt and a few grinds of pepper. Blend until smooth, then set the poblano mixture aside.
- Cut the tofu crosswise into 1/4-inch-thick planks, then press the pieces between a couple paper towels to remove as much moisture as possible. Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat. Add the tofu and cook until well browned, about 5 minutes per side. Transfer to a plate to cool.
- Heat the remaining 1 tablespoon olive oil in the same skillet, then add the diced onions and cook, stirring occasionally, until tender, about 6 minutes. Using your hands, tear and crumble the tofu into very small pieces and add to the skillet. Cook, stirring to combine, until warmed through, about 2 minutes.
- Add the poblano mixture and 1/2 cup water to the skillet and cook until it's bubbling all over and the tofu has absorbed some of the sauce, about 5 minutes. Add 1 to 2 more tablespoons water if the mixture gets too dry (it should be saucy). Taste and add more salt and pepper, if needed.
- Serve over rice and beans and top with lettuce and pico de gallo.
CARAMEL APPLE BURRITOS

- Preheat oven to 350 degrees.
- Using a 9X13 inch cake pan, lightly grease or spray with nonstick cooking spray.
- Spread approximately 1/4 cup of pie filling on each tortilla and roll up the same as enchiladas.
- Lay each side by side in pan.
- In medium saucepan, combine water, sugar, margarine, nutmeg, cinnamon and vanilla.
- Heat over med to high heat until margarine is melted and sugar is dissolved.
- Pour this sauce over the burritos.

- Peel, core, and quarter the apples. Then cut the quarters crosswise into thin slices and combine them with the orange and lemon juices in a medium-size saucepan. With the pan partially covered, bring the mixture to a boil. Then reduce the heat slightly and cook the fruit at a gentle boil for 5 minutes.
- Stir in the brown sugar, cinnamon, and cloves and continue cooking the filling uncovered, stirring occasionally, for 2 to 3 minutes.
- Blend the cornstarch and water in a small bowl and pour it into the apple mixture. Bring the mixture back to a boil, stirring continuously. Let the filling cook for 1 minute and then remove it from the heat and stir in the nuts. Transfer the mixture to a bowl to cool.
- Heat the oven to 375 degrees. Line a medium-size baking sheet with parchment paper or lightly greased aluminum foil.
- Working with 1 tortilla at a time, spoon a quarter of the apple filling down the center, leaving a generous 1-inch border at each end. Fold the ends over the filling, then fold over one of the sides to enclose the filling. Moisten the other edge of the tortilla with a pastry brush dipped in water, then continue to fold the tortilla so it rests on the moistened section. Place it on the baking sheet, seam down. Repeat for the other tortillas.
- Brush each tortilla generously with melted butter, then sprinkle on sugar. Bake for 20 to 25 minutes, until the tortillas turn a rich golden brown. Transfer the baking sheet to a wire rack and let the burritos cool for at least 20 minutes before serving. Cut each one diagonally into halves to serve.

I got this recipe from my son-in-laws mother. She is Hispanic and makes all kinds of wonderful meals. This is so good, I've actually have had it for breakfast!! Now, if I could just make her rice and beans the way she does, I'd be golden,lol.

- Heat oven to 350. Spray a baking dish lightly w/ cooking spray. Spoon 1/3 cup pie filling onto each tortilla and rool up. Place, seam-side down in baking dish.
- In saucepan, combine apple cider, sugar and butter. Bring to a boil, stirring often. reserve 1/2 cup sauce. Pour remaining sauce over tortillas.
- Bake tortillas, covered, for 30 mins. Uncover and bake for 20 mins, or until tortillas are lightly browne. Serve w/ reserved sauce. I also serve w/ a little dollop of whipped cream.

- 1. Mix apples and sugar in a saucepan. Add water to cover. Simmer until tender.
- 2. Blend corn starch, 2 Tbsp water, and spices in a small bowl.
- 3. Stir into apples. Cook until thickened, stirring constantly. If using apple pie filling, just heat in pot on top of stove until warm.
- 4. Soften tortillas 1 at a time in butter in skillet for several seconds on each side.
- 5. Spoon 1/4 cup apples on each.
- 6. Roll to enclose filling.
- 7. Place seam side down on ovenproof serving plate or baking pan. Sprinkle with cinnamon sugar.
- 8. Broil until light brown. Serve with sour cream, yogurt, or a scoop of ice cream when serving for dessert.

- Add the small diced granny smith apples to a sauce pan along with the maple syrup, lemon juice, cinnamon and nutmeg. Bring to a slow boil.
- Allow the apples to cook for about ten minutes or until softened but can still hold their shape. You do not want them mushy. Once they are softened, mix the tapioca starch and water together and pour into the apple mixture. The mixture will start to thicken. Once thick, remove from the heat and allow to cool for a moment.
- While the apple pie filling is cooling, preheat the oven to 350 degrees and line a baking tray with parchment paper.
- Once the apples are cooled slightly, lay one of the NUCO Coconut Wraps on the counter and scoop 1/2 cup of the apple pie filling in the middle. Fold the left and right side of the wrap towards the middle and then bring the bottom of the wrap to the middle and roll. See the pictures above for guidance. Place the burrito on the baking tray with the edge of the wrap on the bottom so it does not come unfolded. Continue with the remaining wraps.
