SAUTE OF CHICKEN LIVERS, BACON AND APPLES
My favorite chicken liver recipe. I serve with thin egg noodles. The recipe notes: do not stir the chicken livers around as you saute them; that prevents the development of the crisp, firm outside crust which is an agreeable characteristic of this dish. Recommended side dish: some kind of spinach or other preferred greens.

Steps:
- Pat livers dry.
- Saute the bacon with 1 T butter in a 10-inch skillet, until the bacon fat has rendered out.
- With a slotted spoon, remove the bacon bits and reserve until later. In the remaining bacon fat, saute the chicken livers over medium-high heat (in a couple of batches, if necessary). Remove livers and reserve.
- Remove all but 1 T of the fat in the skillet; in the remaining fat, saute the shallots until soft. Then add the apples, Calvados and heavy cream. With a wooden spoon, scrape up the browned particles in the bottom of the pan and incorporate.
- Return the chicken livers and bacon to the simmering cream and cook them about 3 minutes more, keeping the heat low so they do not toughen.
- Taste and adjust seasonings. Whisk in the last tablespoon of btuter. Dust with parsley. Serve.

CHICKEN LIVER PATE WITH APPLE
This pate can be prepared two days ahead and refrigerated or wrapped tightly and frozen for 2 weeks. Serve this with slices of cocktail rye bread, thinly sliced black or pumpernickle bread, buttered and toasted thinly sliced French bread, buttery crackers, or on sliced Granny Smith apples. - Melt 4 tablespoons butter in large skillet over medium heat.
- Add onions and saute until soft, about 5 minutes.
- Add chopped apple and saute until soft, about 4 minutes; transfer mixture to processor or blended.
- Melt 4 tablespoons butter in same skillet over medium-high heat.
- Add livers and saute until brown on outside but still slightly pink in center, turning occasionally, about 6 minutes.
- Add livers to onion mixture.
- Add port to skillet and boil over high heat until reduced to 2 tablespoons, scraping up any browned bits, about 2 minutes.
- Add Port and cream to livers and puree until smooth;cool.
- Beat 3/4 cup butter in bowl until smooth; beat in liver mixture 1 tablespoon at a time.
- Stir in lemon juice and season with cayenne, salt and pepper.
- Pack pate into a crock or serving bowl.
- Cover with plastic and refrigerate until chilled.

APPLE & CALVADOS CHICKEN LIVER PATE

- Melt half the margarine in a large skillet over medium-high heat. Mix together the apples and sugar and place them in the skillet. Allow the apples to begin caramelizing - do not stir for the first few minutes Once the apples are soft and brown, place them in a bowl and set aside. Melt the other half of the margarine in the skillet and add the shallots, with a pinch of salt and pepper - cook until they are soft and translucent. Add the chicken livers, season with salt and pepper and allow them to cook for a few minutes until the outside is firm but the interior is still red. Remove the skillet from the heat and add the Calvados (please be very careful and keep the skillet away from your face as the alcohol may flame up). Return the skillet to the stove and scrape the bottom of the pan to lift the flavor from any brown bits. Add the cayenne and lemon juice and continue to cook the livers through until the liquid reduces and the interior of the livers is slightly pink (use a scissor or knife to cut a piece open to check). Pour all the contents of the skillet into a blender, allow to cool. Add the apples to the blender and puree the mixture until it is completely smooth. Taste the mixture and, if needed, adjust the seasonings (i.e. add salt and pepper, add cayenne if you like it spicier, add more Calvados if you'd like it a little sweeter and add more lemon juice to balance the acidity). Store the mixture in your serving bowl and place in the refrigerator overnight to allow the mixture to firm up and develop its flavors. Serve at room temperature with toasted slices of baguette or crackers.

- Preheat the oven to 300°. Butter four 1-cup ramekins. In a large skillet, melt the butter. Add the bacon and cook over moderate heat until lightly browned, about 4 minutes. With a slotted spoon, transfer the bacon to a plate. Add the chicken livers to the skillet, season with salt and white pepper and cook over moderate heat until browned, about 2 minutes per side. Transfer to the plate.
- Add the onion, apple and allspice to the skillet and cook over low heat, stirring occasionally, until the onion and apple are softened, about 5 minutes. Add the Calvados and carefully ignite it with a long match. When the flames subside, scrape the apple-onion mixture into a blender and let cool to room temperature.
- Add the bacon and chicken livers to the onion-and-apple mixture in the blender, along with the half-and-half, egg yolks and 1 teaspoon of kosher salt. Blend until very smooth. Pass the mixture through a coarse sieve into a large glass measuring cup. Pour into the prepared ramekins and transfer to a small roasting pan. Add enough hot water to reach halfway up the sides of the ramekins, cover loosely with foil and bake the chicken-liver mousse for about 1 1/2 hours, until an instant-read thermometer inserted in the mousse registers 155°. Remove the ramekins from the water bath and let cool to room temperature.
- Cover and refrigerate the ramekins until the mousse is chilled, preferably overnight. Serve with toasted baguette slices and Pickled Red Onion.

- Preheat the oven to 275°. In a food processor, combine the livers, egg yolks, brandy, Calvados, salt, pepper, allspice and nutmeg and puree until smooth. With the machine on, blend in the softened butter, 1 tablespoon at a time, until all the butter is incorporated and the puree is creamy; if it looks curdled, wrap a hot kitchen towel around the processor bowl and puree until light and creamy.
- Pass the puree through a fine strainer set over a large bowl and stir in the heavy cream until blended. Pour the puree into a 1 1/2-quart enameled cast-iron terrine and set the terrine in a roasting pan. Pour enough boiling water into the roasting pan to reach halfway up the side of the terrine and bake for 1 hour and 10 minutes, or until the mousse is lightly browned on top and a toothpick inserted in the center comes out clean. Remove the terrine from the water bath and let cool, then cover with plastic wrap and aluminum foil and refrigerate overnight.
- To unmold, dip the bottom of the terrine in a pan of hot water for 10 seconds, and run a paring knife around the edge of the mousse. Invert the mousse onto a long platter or rectangular plate. Cut it into 1/2-inch slices and transfer to plates. Serve with baguette toasts and the Sweet-and-Sour Red-Onion Relish.
