SLOW COOKER BREAD
Although this dough has no color, it is light and airy, like the soft inside of a loaf of French bread. The other surprising part is there's no need to let it rise. You can go directly from making the dough to baking with no waiting around. Magic.

- Butter a 6-by-3-inch round pan and set aside.
- Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
- Transfer the dough to the prepared pan, transfer the pan to a 6- to 8-quart slow cooker and cover with the lid. Cook on high until the internal temperature of the bread registers 200 degrees F, about 2 hours. Let cool in the pan for 5 minutes, then turn out onto a rack and let cool completely.

- Using an electric mixer with a bread hook, place the warm water (just barely over luke-warm, too hot will kill the yeast) and sugar in the mixing bowl. Sprinkle the yeast over the water and let it foam for 10 minutes. Then turn on the mixer and add the apple butter, egg and salt. Slowly add the flour. Once all the flour is in the bowl, add the melted butter. "Knead" the dough with the bread hook for 5-8 minutes. The dough will be smooth, but very tacky. Dump it out onto a floured work surface. Using a floured knife, cut the dough into 4 quarters. Then cut each quarter into 6 equal pieces, to make 24 small dough segments. Turn the ends of each dough segment under to create little balls. Then place a large piece of parchment paper in a 6 quart slow cooker, and press down. Arrange 12 dough balls in the slow cooker. Then carefully lift the parchment paper out, and repeat with the remaining dough balls and another piece of parchment, creating two separate batches. Place the lid on the crockpot and cover the additional dough balls on the counter, with plastic wrap. Allow them to rise for 1 hour at room temperature. *At this point the dough balls could be put in the fridge for up to a week, until ready to bake. Sprinkle the rolls with a little brown sugar. Turn the slow cooker on high and "bake" for 60-90 minutes, depending on your crockpot. To test, touch the top of the rolls. If they feel slightly firm and are no longer tacky, the rolls are ready. Repeat with the second batch of dough balls. Each batch will cook for 60-90 minutes, 3 hrs total.
APPLE YEAST BREAD
This is one of the recipes I included in a cookbook I put together after my grown children kept calling home to ask how to make some of their favorite dishes. What a wonderful experience that was, gathering my mother's and my own recipes plus those from friends and family. My daughters and some of their friends did some artwork for it, and we now have a book we are proud to share!

- Pour butter into a 9-in. square baking pan. Mix sugar and cinnamon; sprinkle over butter. Arrange apple slices in pan. Sprinkle with raisins. , In a bowl, combine yeast, water, sugar, salt and 1 cup flour; beat for 1-2 minutes. Add egg, shortening and remaining flour. Beat for 1 minute. Drop dough by spoonfuls over apples. Cover and let rise in a warm place until almost doubled, about 1 hour. , Bake at 350° for 30-35 minutes or until done. Invert pan on a serving platter.

AWARD-WINNING CROCK POT APPLE BUTTER
I like this recipe for the taste and because it all fits into my 4 quart crock pot (packed). After the batch is done, I can them into jars for home use and gifts. To make it easier on myself, I use my spiral apple peeler/corer.

Steps:
- Place apples in slow cooker in thirds, layering sugar between each layer.
- Add rest of ingredients on top and pack them down as well as you can.
- Cover and cook on high for 1 hour.
- Reduce heat to low. Open and give it a stir. Keep covered and cook 8 hours or until thick and dark brown, stirring occasionally. (You can do this overnight and can in the morning).
- Uncover and cook for the last hour on low.
- If a smoother apple butter is desired, you may puree in blender or food mill.
- Place in sterile jars with lids and process for 10 minutes in hot water bath or you can freeze.

BUTTERY YEAST ROLLS
These are the absolute best dinner rolls. They are light and fluffy and buttery. The dough can also be shaped in many other ways, so use your imagination. Makes awesome cinnamon rolls too!

Steps:
- Place all ingredients except the 1/4 cup butter into bread machine in the order recommended by the manufacturer.
- Select the dough cycle and start machine.
- Shape dough into 20 to 24 balls and place in buttered pan (s).
- Melt the 1/4 cup butter and brush it over the tops of rolls, saving the excess for brushing on after baking.
- Cover and let rise in a warm place about 1 hour, or until double in bulk.
- Bake at 375 degrees F for 15 to 18 minutes.
- Brush baked rolls with remaining butter.
- NOTE: This dough can also be divided into two portions and each rolled into a 12-inch circle; spread each circle with softened butter, cut into 8 wedges and roll up starting with wide end, to make crescents OR use this dough for cinnamon rolls or sticky buns.
APPLE BUTTER BREAD
I found this through my electric co-op magazine and boy am I ever glad I did. Truly a nice moist quick bread. The key to this bread is obtaining a dark, rich apple butter - the darker the better for flavor. I used White House Apple Butter which was wonderful and outside of my mom's fresh homemade apple butter it is the best I've tried. I hope you enjoy this recipe as much as my family.

- In a mixing bowl, combine the apple butter, cinnamon and cloves.
- Whisk in the water, then oil, then brown sugar, then the eggs (not all together). Mix until smooth.
- Sift together (important so you don't get white lumps in your dark bread), flour, baking soda and salt. Then combine with the apple butter mixture and mix until smooth.
- Pour into a greased 9-inch loaf pan or 3 to 4 mini-loaf pans.
- Bake at 350F for 65-70 minutes for the 9-inch pan or 45-50 minutes for the mini-loaves.
- Let stand for 10-15 minutes to cool slightly before removing from the pans and letting cool completely on a wire rack.
