Provided by Chuck Hughes

Time 6h40m

Yield s: 8 to 10 servings

Number Of Ingredients 16

5 pounds Macintosh apples, scrubbed and quartered (not peeled)
4 cups apple juice
2 cups brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
Juice of 1 lemon
1 (10-pound) ham
1 carrot, chopped
1 celery stalk, chopped
1 leek, chopped
1 onion, chopped
1 garlic head, halved
1 cup apple butter
1/2 cup honey
1/4 cup Dijon mustard
4 cups water

Steps:

  • For the apple butter: In a large stockpot, combine the apples with the apple juice. Cook on low heat until the apples are tender, about 45 minutes. Remove from heat and pass through a fine sieve. Pour the puree back in the stockpot. Bring to a simmer and add the brown sugar, cinnamon, nutmeg, and lemon juice. Cook on low heat for about 1 1/2 hours until it's reduced by half and thickens up, stirring regularly and skimming the surface if necessary. Remove from heat and let cool.
  • For the ham: Put the ham, carrot, celery, leek, onion, and garlic in a large stockpot and cover with water. Bring to a boil and let simmer for 2 hours. Drain and place into a roasting pan.
  • Preheat the oven at 350 degrees F.
  • In a bowl, combine the apple butter, honey, and Dijon mustard. Peel off the skin of the ham and brush it with apple butter mixture. Pour the water in the bottom of the pan. Place in the oven and cook for 1 1/2 hours, making sure to baste it with the sauce every 15 minutes during cooking process. Remove the ham from the grill and let sit for 10 minutes before carving.

Apple Butter Mustard Glaze image

Provided by Food Network

Time 25m

Yield 2 servings

Number Of Ingredients 7

2 tablespoons neutral oil
2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

SUNNY'S APPLE-BOURBON HAM GLAZE

Sunny's Apple-Bourbon Ham Glaze image

Provided by Sunny Anderson

Categories     main-dish

Time 4h20m

Yield 10 to 12 servings

Number Of Ingredients 8

1 cup apple cider
1 cup packed dark brown sugar
1/2 cup bourbon
2 teaspoons pumpkin pie spice
Teeny tiny pinch of ground cloves
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
One 7- to 10-pound precooked spiral ham

Steps:

  • Preheat the oven to 325 degrees F.
  • To make the glaze, add the apple cider, brown sugar, bourbon, pumpkin pie spice and cloves to a large pot. Turn the heat to medium high and cook, while stirring, until the liquid reduces and becomes slightly thickened like a glaze, 10 to 15 minutes. Add the butter and stir to melt. Taste and season with salt and pepper.
  • Lay out plenty of aluminum foil to wrap the ham in and create a bed for it. Place the ham in the center of the aluminum foil and pull the sides up around it, leaving the top exposed. Pour over half the glaze, getting it into the spirals. Finish tightly wrapping the ham and place it on a rack in a roasting pan. Fill the pan with water, but do not let it touch the bottom of the ham.
  • Cook until the internal temperature reaches about 140 degrees F (gauge 15 to 20 minutes per pound). Remember, it is already cooked, so you just need to bring it to temperature without drying it out.
  • Remove the ham and raise the oven temperature to 400 degrees F. Pull back the aluminum foil (watch out--it's steamy and hot!!). With a brush and the remaining glaze, slather the top of the ham, allowing the glaze to get into any creases of the spiral you see. Place back in the oven uncovered but still sitting in the foil and roasting pan, an additional 10 to 15 minutes. Remove and rest 10 minutes before serving.

APPLE BUTTER GLAZED HAM

Apple Butter Glazed Ham image

I found this recipe on Mr. Food Everyday Diabetic Recipes. My husband and I made it for Easter 2014. We liked it so much we made it again for Christmas. This will be the only glaze we will use on our hams from now on. It surpasses any purchased glaze.

Provided by Judy Haluzak

Categories     Pork

Time 1h30m

Number Of Ingredients 7

1 6-10 lb. bone in smoked ham
3/4 c apple butter
1/4 c dijon mustard
1/4 c light brown sugar, lightly packed
1/4 c sugar-free maple syrup
1/4 tsp ground cloves
1/4 tsp salt

Steps:

  • 1. Preheat oven to 325°F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat side up, in a large roasting pan. Bake 1 hour.
  • 2. Whisk the apple butter, mustard, brown sugar, syrup and cloves in a bowl until smooth. At this point you could put in small sauce pan and heat to melt the flavors together. Brush the ham with half the glaze and bake for 15 more minutes.
  • 3. Brush remaining glaze over ham and bake another 15 minutes or until ham is heated through. NOTE: At this time you may add sliced pineapple and maraschino cherries, using tooth picks to keep in place.
  • 4. Let rest for 15 minutes before carving.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE

Baked Ham With Brown Sugar and Apple Glaze image

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

Sprinkle with salt and pepper. Add 1 tablespoon of the oil; toss to coat. Spread vegetables in a single layer in the prepared pan. Roast, uncovered, for 20 to 22 minutes or until tender and lightly browned, stirring once.
  • Meanwhile, for vinaigrette, in a screw-top jar combine apple butter, vinegar, and the remaining 1 tablespoon oil. Cover and shake well. Set aside 2 tablespoons of the vinaigrette. Toss the remaining vinaigrette with roasted vegetables; cover to keep warm.
  • Heat a grill pan over medium-high heat. Add ham slice to hot pan; cook about 8 minutes or until browned and heated through, turning once. Drizzle the 2 tablespoons reserved vinaigrette over ham. Serve with vegetables, and, if desired, baguette slices.

  • Preheat the oven to 325°F. You can use a roasting rack or not, but you will need a roasting PAN either way. If you are using the roasting rack, situate it in the pan and lay the ham on its side. If you are not using the roasting rack just lay the ham on its side in the pan while you prep it.
  • Whisk together the apple butter, apple juice (or orange juice), and spicy mustard. Reserve a 1/2 cup for serving with the ham. Pour the remaining glaze over the ham and use a brush or your hands to separate the slices just a little so the glaze can penetrate between the slices. Cover as much of the outside of the ham that you can with it on its side.
  • If you are not using a roasting rack, place the cut side down in the pan and then cover the pan tightly with foil. If you are using a rack, leave the ham on its side in the rack. Add about an inch of water to the bottom of the pan and THEN cover the pan tightly with foil.
  • Bake the ham for 12-15 minutes per pound, or about 2 hours. You want the internal temperature to read 140°F.
