SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.

Steps:
- Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
- Serve and enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
- Combine flour, baking soda, cinnamon, and salt in a bowl. Add sugar, oil, eggs, and vanilla extract. Add grated apples and chopped nuts. Mix until combined. Set aside.

- Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. - Peel and core the apples. Use a sharp knife or mandolin to slice the apples into very thin, uniform pieces.
- Preheat the oven to 375 degrees F. Grease a 9x13 inch pan.
- Add the sliced apples to the pan.
- In a medium bowl, combine brown sugar, flour, oats, cinnamon, and nutmeg. Use a fork or pastry cutter to stir in the softened butter.
- Sprinkle the streusel over the apples.
- Bake for 35-40 minutes at 375. It is done when a knife inserted in the center slides in easily (the apples should be fork-tender)
- Let stand for a few minutes before serving hot or room temperature.

STREUSEL APPLE BREAD RECIPE

- Preheat oven to 350°F and grease a 9x5-inch loaf pan with nonstick baking spray. Set aside.
- Grate the apple using the largest holes on a box grater. You should end up with about 1¼ cups of shredded apple.
- Line a fine-mesh sieve with paper towels or cheesecloth and set it over a bowl. Place the shredded apples into the sieve and sprinkle them with a small pinch of salt. Allow them to sit for 15 minutes.
- Squeeze the apples in the paper towels or cheesecloth until all of the liquid has been removed. Discard the liquid-- you should have around ⅓ cup.
- In a large bowl, whisk together the flour, apple pie spice, and baking powder. Set aside.
- In a medium bowl, whisk together the brown sugar, applesauce, milk, egg, and vanilla. Whisk until combined.
- Add the wet ingredients to the dry ingredients and fold them together gently-- you don't want to overmix!
- Once the wet ingredients have been fully incorporated, add the shredded apple and fold it in gently.
- Transfer the batter to the prepared loaf pan.
- Set the pan aside while you make the streusel.
- In a small bowl, combine the flour, brown sugar, and cinnamon. Add the melted butter and mix until the mixture resembles coarse sand.
- Spread the streusel evenly over the top of the apple bread.
- Bake in a preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 5 minutes. Then, run a knife around the edge and turn it out onto a wire rack to cool.

- Preheat oven to 350 degrees F.
- Butter and flour 9×5-inch loaf pan. Set aside.
- In a small bowl mix ½ cup brown sugar, cinnamon and nutmeg. Set aside.
- In a medium bowl, toss apples with 1 tablespoon brown sugar, 1 tablespoon granulated sugar, apple pie spice and walnuts. Set aside.
- In the bowl of a stand mixer with the paddle attachment, cream butter then add 2/3 cup granulated sugar. Beat until light and fluffy, about one minute.
- With mixer running, add one egg at a time and mix. Scrape bowl and mix for one minute on medium until slightly pale in color.
- Add vanilla and mix to combine.
- In a small bowl, mix flour with baking powder and baking soda.
- With mixer running, alternate adding flour mixture and sour cream. Mix just to combine but do not over mix.
- Pour half of the batter into the prepared pan and spread to the sides. Add half the apple mixture but pat and poke the apples down into the batter. Sprinkle with half the sugar mixture.
- Repeat with the rest of the batter, apples and sugar mixture, patting the apples into the batter before topping with the last of the sugar mixture.
- Bake on center rack of oven for 50 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean. (When checking for doneness insert toothpick into center of bread, making sure your tooth pick is going into batter and not an apple to get a true test for doneness. Ours took exactly 60 minutes.)
- While cake is baking, prepare glaze by combining brown sugar, butter and cream in a small sauce pan. Heat to a boil and simmer on medium low for two minutes without stirring.
- Remove from heat and sift in the powdered sugar while you whip. If it lumps, just pass through a small sieve. Let it sit at least ten minutes.
- Once cake is out of the oven, cool in the pan on a rack for 15 minutes.
- Loosen sides and flip out of pan and onto the cooling rack, then place the rack over a sheet pan.
- Drizzle the glaze over the top and let it melt into the warm cake.
- Serve warm or cool completely.
