For the apples, use preferably jonagold, spartan, or melrose, cored and cut in 1/2-inch slices.

Steps:
- PREHEAT THE OVEN to 350°F
- Lightly grease a 9- by 13-inch baking dish.
- CRUMBLE THE BREAD into coarse crumbs, using your hands.
- Sprinkle two-thirds of the crumbs into the prepared baking dish.
- Arrange the apple wedges over the bread in rows, overlapping them slightly.
- COMBINE THE EGGS, half-and-half, 1 cup of the sugar, 2 teaspoons of the cinnamon, and the nutmeg and cloves in a large bowl.
- Beat well, then pour the mixture over the apples and bread.
- In another bowl, combine the ground hazelnuts with the remaining bread crumbs, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon.
- Sprinkle this mixture over the apples and press down gently so it soaks up some of the liquid.
- Bake until the pudding is lightly browned and a knife inserted in the center comes out clean, 60 to 70 minutes.
- MAKE THE SAUCE while the bread pudding is baking.
- Combine the butter and honey in a deep, medium-sized saucepan (the mixture will expand when it boils) and heat over medium-low heat until both are melted and smooth.
- Bring to a boil without stirring and simmer for 5 minutes.
- Reduce the heat and carefully stir in the cream and brandy.
- Cook 1 minute longer.
- Set aside and keep warm until needed.
- LET THE BREAD PUDDING sit for a few minutes before cutting into serving pieces.
- Drizzle a little of the brandy butterscotch sauce over each serving, passing the extra sauce separately.

- Microwave caramels and 1 cup milk in large microwaveable bowl on HIGH 1 to 2 min. or until caramels are completely melted, stirring after 1 min. Add apple pie filling, cream, eggs, cinnamon and 1 cup of the remaining milk; mix well. Stir in bread.
- Pour into slow cooker sprayed with cooking spray; cover with lid. Cook on LOW 4 to 5 hours.
- Beat pudding mix and remaining milk in microwaveable bowl with whisk 2 min. just before serving the pudding. Microwave 2 min., stirring after each minute. Spoon over individual servings of warm pudding.

APPLE BREAD PUDDING WITH CARAMEL DESSERT SAUCE

- Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, whisk together the heavy cream, whole milk, brown sugar, cinnamon, salt, vanilla and egg yolks and set aside.
- Add the cubed apples, pecans and cubed bread to the prepared baking dish and toss to combine. Pour the custard over the bread and apple pieces. Carefully toss to coat, making sure that the cubed bread is submerged in the custard, and let stand to allow the bread to soak up the custard, 10 to 15 minutes.
- Bake until the center has set, about 45 minutes. Let cool for 5 minutes. Drizzle Caramel Dessert Sauce over the bread pudding. Serve with extra sauce and vanilla ice cream.
- In a heavy-bottomed saucepan, combine the sugar, butter, buttermilk and corn syrup. Bring to a boil over medium-high heat and cook for 1 minute. Remove from the heat and slowly add the baking soda (it will foam up), followed by the vanilla and cinnamon. The sauce will thicken as it cools. Serve warm.

- Peel, core and cut the apple in wedges and than in thin slices, sprinkle and mix with lemon juice and cinnamon. Heat up butter in a shallow pan over medium heat and sauté apple for 2-3 minutes to soften. Set aside.
- In a large bowl, whisk the eggs and honey granules until well combined. Whisk in the half-and-half, orange zest, and vanilla. Add the bread cubes and cranberries and mix well. Let stand for 15 minutes so the bread can soak up the custard then add the cooled down apples.
- Preheat oven to 325. Put your mixture into a buttered souffle pan. Place souffle pan into a roasting pan. Place both pans into the oven and fill the roasting pan with boiling water 1/2 way up the outside of the souffle pan. Bake for about 1 hour.

- Preheat oven to 160 degree celsius (140 degrees for fan forced).
- Grease deep 1.5 litre (6 cup ovenproof dish).
- Peel, core and quarter apples, cut each quarter into 3mm slices.
- Dissolve brown sugar in the water in medium frying pan over low heat, add apples; simmer, uncovered, about 5 minutes or until tender, stirring occasionally.
- Combine milk and vanilla bean in medium saucepan; bring to a boil.
- Remove from heat; stand, covered, 5 minutes.
- Discard vanilla bean.
- Meanwhile (while milk stands) cut bread slices into quarters.
- Arrange bread and apple in alternate layers (finishing with bread) in dish.
- Whisk eggs, cinnamon and nutmeg in medium bowl.
- Gradually whisk hot milk mixture into egg mixture.
- Pour egg mixture carefully over bread and apple.
- Place dish in a large baking dish; add enough boiling water to baking dish to come halfway up side of pudding dish.
- Bake uncovered about 1 hour or until set.
- Serve with low fat ice cream or cream, if desired.

- In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.

- Butter a 6 to 8 cup souffle dish or other baking dish.
- Preheat oven to 325°F.
- Melt 2 tablespoons butter in a large skillet over medium-high heat.
- Add the apples and sauté about 5 minutes, until the apples start to brown.
- Add 3 tablespoons sugar and sauté a minute or two until the sugar caramelizes.
- Remove from heat, transfer to a bowl and add one half of the Calvados.
- Melt the remaining 4 tablespoons of butter in the pan over low heat and add the bread, tossing for a few minutes until the bread is coated with the butter.
- Spoon half the apples into the souffle dish and top with half the bread.
- Repeat with the other half of the apples and the other half of the bread.
- Put some water on to heat while you fix the cream.
- Place the half-and-half in a saucepan with the vanilla bean and scald and stir in 1/2 cup of sugar, stirring until sugar is dissolved.
- Remove from heat and whisk a little of the cream mixture into the beaten eggs then slowly whisk the eggs into the cream mixture.
- Strain the liquid into the souffle dish and then dust the top of the pudding with the grated nutmeg.
- Place the souffle dish on top of a kitchen towel in a roasting pan in the oven.
- Pour the simmering water into the roasting pan to come halfway up the sides of the souffle dish.
- Bake 40 minutes, until just set.
- Meanwhile, boil the cider until it is reduced by half.
- Sift the remaining sugar with the cornstarch and whisk this mixture into the cider.
- Simmer until thickened, then remove from heat and add remaining Calvados.
- Serve the sauce warm on the pudding.
