ANYTHING BRANDY CREAM SAUCE
This is yummy (and versatile) sauce to use over steaks, chicken, pork chops, veal, etc. You can even try it on seafood, poached eggs, baked potatoes, or even steamed veggies. A lovely accompaniment to just about any dish.

Steps:
- Melt butter in a 1 quart saucepan over medium-high heat. Add green onion and saute' until tender, about 1-2 minutes. If desired, add mushrooms and saute' 1 more minute.
- Stir in broth and brandy. Cook about 5 minutes or until mixture is reduced (should coat back of spoon).
- Stir in the heavy cream and season with salt and pepper if desired. Serve over just about anything.
CHICKEN NORMANDY
Chicken browned and braised in apple cider and brandy, cooked with apple slices and onions, served with a cream sauce.

- Rub pork with thyme. In a large skillet, brown pork in 1-1/2 teaspoons butter; remove and set aside. In the same skillet, saute onion in remaining butter until tender. Stir in apple; cook and stir for 2 minutes. Add 1-1/2 teaspoons apple juice or brandy; cook and stir 30 seconds longer. Transfer to a bowl. , Add wine or broth and remaining apple juice or brandy to the skillet. Bring to a boil over medium heat; cook for 5 minutes or until liquid is reduced by half. Stir in broth, pork and apple mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until a thermometer reads 160°, turning pork occasionally. Remove pork and keep warm. , In a small bowl, combine the cornstarch, salt and pepper; gradually stir in cream and mustard. Stir into apple mixture. - Melt butter in heavy large skillet over medium-high heat.
- Season chicken with salt and pepper.
- Coat with flour, shaking off excess.
- Add chicken to skillet and cook until brown on both sides and cooked through, about 4 minutes per side.
- Transfer to platter.
- Pour off all but 1 tablespoon butter from skillet.
- Add apples and both brandies; simmer over medium heat until apples are tender and liquid is slightly syrupy, about 7 minutes.
- Using slotted spoon, transfer apples to platter with chicken.
- Add cream to skillet; boil until thickened to sauce consistency, about 5 minutes.
- Season with salt and pepper.
- Return chicken and apples to skillet and heat through, about 2 minutes.
- Arrange chicken on plates.
- Spoon apples and sauce over and serve.
PORK BUTTERFLY STEAKS BAKED IN LEEK AND APPLE BRANDY CREAM SAUCE
Nice served with fresh bread to mop up the sauce. If you have a smallish casserole dish that can be used on stove as well as in oven, I recommend you use that for all the steps. I used a separate casserole simply because I didn't have the right size stove-safe one. I used a home made turkey stock for this dish. I do recommend you use a high quality, or home made stock here, because the flavour of the sauce is all about the stock. After cooking, I had to play with the sauce a bit to thicken it to my taste. How thick you want it is purely a personal matter. Add more or less flour to suit your preference.

Steps:
- Preheat oven to 180 degrees C.
- Chop up the leeks into slices.
- Peel and core the apple, then cut into slices.
- Heat up the olive oil in a deep fry pan or sauce pan, or in the stove top safe casserole.
- Brown the pork steaks then remove and set aside on plate.
- Add the butter and melt.
- Add the leeks and stirfry til soft.
- Add the brandy and cook the alcohol out.
- Add the stock and simmer slowly til reduced by about half.
- Add the paprika.
- Add the dash of cream, parsley and salt and pepper to taste.
- Lay the pork steaks then the sauce over the top in the casserole.
- Lay the apple slices on top and sprinkle with the brown sugar.
- Bake for about 40 mins.
- Remove from oven and place pork steaks with vegetables on the plates.
- Cover with foil to rest meat.
- Either put the stove-safe casserole back on stove, or return sauce to sauce pan and then onto stove on a low-medium heat.
- Mix up the flour with some of the sauce in a separate cup (if you wish to have a thickened sauce. if not, just serve immediately).
- Add flour paste mixture to sauce and stir to thicken.
- Pour sauce over meat and vegetables.

CALVADOS APPLESAUCE

- Peel and core apples, then cut into 1-inch pieces. Bring apples, water, sugar, zest, and cinnamon to a boil in a 2-quart heavy saucepan, stirring occasionally, then reduce heat and simmer, covered, 15 minutes.
- Remove lid and simmer until most of liquid is evaporated, 5 to 10 minutes. Add Calvados and simmer, stirring occasionally, 1 minute. Mash apples with a potato masher or a fork to a coarse sauce, then cool.
GRILLED PORK TENDERLOIN WITH APPLES AND BRANDY CREAM SAUCE

- Mix together all marinade ingredients and pour over pork tenderloin.
- Refrigerate pork in marinade for no more than 24 hours.
- Discard marinade and grill pork until internal temperature reaches 155 degrees.
- When pork is almost done cooking, place apples slices on grill and grill approximately 4 minutes per side.
- Remove from apples and pork from grill, chop green apple slices into small pieces.
- While pork is grilling, prepare sauce: In a medium saucepan, sauté onions in butter.
- Add salt, pepper, apple juice concentrate, cream and brandy and bring to a boil, stirring constantly.
- Reduce heat and simmer until sauce is reduced and thickened.
- Add grilled, chopped green apple and continue to simmer a few more minutes.

- Place pork slices between plastic wrap. Using mallet, pound pork slices to 1/4-inch thickness. (Can be prepared 4 hours ahead. Cover tightly and refrigerate.)
- Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add apples and sugar to skillet and sauté until golden brown, about 6 minutes. Set aside.
- Melt 2 tablespoons butter in another heavy large skillet over high heat. Season pork with salt and pepper. Add pork to skillet and sauté until just cooked through, about 2 minutes per side. Transfer to plate; keep warm.
- Melt 1 tablespoon butter in same skillet over medium heat. Add shallots and thyme and sauté 2 minutes. Add Calvados and boil until reduced to glaze, scraping up any browned bits. Stir in cream and cider; boil until mixture thickens to sauce consistency, about 3 minutes. Season with salt and pepper.
- Reheat apples, if necessary. Arrange a few pork slices on each plate. Spoon sauce over. Top generously with sautéed apple slices and serve.
