2 cups sugar
2 eggs
1 1/2 teaspoons vanilla
2 cups applesauce
4 cups flour
2 teaspoons baking soda

1 cup chopped walnuts

Steps:

  • Cream butter and sugar, add eggs and vanilla, mix well.
  • Stir in applesauce.
  • Mix flour, baking soda and spices.
  • Stir into creamed mixture.
  • Fold in nuts.
  • Fill greased or paper lined muffin cups 3/4 full.
  • Bake at 350* for 25 minutes, or until muffins test done.

2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg, beaten
1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.
  • Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.

1 ¼ cups all-purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda

1 egg white

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
  • Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. Cool at least 10 minutes before serving.

3/4 cup plus 2 tablespoons packed brown sugar

1 cup whole wheat pastry flour

1/2 teaspoon fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 teaspoon vanilla extract
3/4 cup low fat buttermilk
1 Golden Delicious apple, peeled, cored and cut into 1/4-inch pieces

Steps:

  • Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
  • In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
  • In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
  • In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
  • Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.

2 tbsp milk of choice
2 tsp pure vanilla extract

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. 2 large eggs, at room temperature
1/3 cup (80ml) melted coconut oil (or use vegetable oil or melted butter)

1/3 cup (80ml) milk (dairy or non dairy), at room temperature
1 teaspoon pure vanilla extract
3/4 cup (110g) raisins*

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners. If using cupcake liners, spray the liners because when warm, these muffins stick.
  • Whisk the flour, oats, cinnamon, baking soda, baking powder, and salt together in a large bowl until combined. Set aside. In a medium bowl, whisk the applesauce, eggs, oil, maple syrup, milk, and vanilla together until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the raisins. Fold everything together gently just until combined and no flour pockets remain.

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease 10 wells in a standard 12-cup muffin tin with nonstick spray or line with paper liners.
  • In a large bowl, mix together the applesauce, honey, eggs, coconut oil, and vanilla. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
  • Add the flour mixture to the bowl with the wet ingredients and stir just until combined. The batter will be a little lumpy. Gently stir in the rolled oats and any other desired mix-ins.
  • Divide evenly among the muffin cups, filling each almost to the top. Sprinkle the tops with coarse sugar, if desired. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and place the muffin tin on a wire rack to cool for 10 minutes, then gently remove the muffins from the pan (run a butter knife around the edges if the muffins are sticking) and let them cool completely on the wire rack.

Steps:

  • In a large bowl, whisk the eggs and remaining 3/4 cup/150 grams sugar until light and foamy.
  • Add the applesauce, oil, remaining 1 1/2 teaspoons cinnamon, nutmeg and salt, and whisk to combine.
  • Add the all-purpose flour, whole-wheat flour, baking powder and baking soda to the bowl. Fold until a few streaks of flour remain, then add two-thirds of the walnuts and all of the chopped apple, if using. Fold until well combined and no streaks of flour remain.
  • Divide the mixture among the 12 liners; they will be almost full to the top. Sprinkle with the remaining one-third of the walnuts and reserved cinnamon sugar.
  • Bake until muffin tops are puffed and golden, and a skewer inserted into the center comes out clean, 15 to 22 minutes. Let cool slightly before removing from the pan. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let the muffins cool completely, then transfer to an airtight container and freeze.

Steps:

  • Preheat oven to 350ºF. Prepare a muffin pan by spraying the cavities with cooking spray or lining them with parchment paper liners. Set aside.

  • Make a well in the center of the dry ingredients. Add wet ingredients to the center (eggs, honey, applesauce, olive oil and vanilla). Mix wet ingredients together and then combine all ingredients. Stir only until just combined.
