SHREDDED LAMB SLIDERS
Lamb, a wonderful special-occasion meat, is a big crowd-pleaser in these delicious sliders. I served up about 1,500 in two days when I made them for the Great American Beer Fest, using every little bit to satisfy the very last customer. -Craig Kuczek, Aurora, Colorado

Steps:
- Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat; brown meat. Transfer meat to a 6- or 7-qt. slow cooker. In the same skillet, cook and stir carrots, shallots and garlic until crisp-tender, about 4 minutes. Add stock, stirring to loosen browned bits from pan. Pour over lamb. Cook, covered, on low until lamb is tender, 6-8 hours., Meanwhile for pesto, place mint, basil, pine nuts and salt in a food processor; pulse until chopped. Continue processing while gradually adding oil in a steady stream. Add Parmesan and Asiago cheeses; pulse just until blended., When cool enough to handle, remove meat from bones; discard bones. Shred meat with 2 forks. Strain cooking juices, adding vegetables to shredded meat; skim fat. Return cooking juices and meat to slow cooker. Heat through. Serve on buns with pesto and feta.

SAVORY LAMB SLIDERS

Steps:
- Form the lamb sliders: In a large bowl, add the lamb, shallots, mint, parsley, salt, pepper, cumin, paprika and garlic. Gently combine, making sure not to overmix. Divide the mixture into 9 equal portions. Using a ring mold about 3 inches in diameter, press each portion into the mold to form a slider, or just form the patties with your hands. Transfer the patties to a baking sheet lined with parchment paper and cover with plastic wrap. Refrigerate the patties for about 30 minutes.
- Make the tzatziki: In a medium bowl, combine the yogurt, cucumber, dill, mint, lemon juice, salt and pepper. Refrigerate until serving time.
- Cook the lamb sliders: Heat a grill pan or grill to high heat and cook the slider patties, 2 to 3 minutes. Flip the patties, then sprinkle with salt and pepper and continue to grill until cooked through (130 to 135 degrees F), another 2 to 3 minutes.
- To serve: Top the bun bottoms with lettuce, tzatziki and feta. Top the bun tops with the tzatziki and Pickled Onions. Place the slider patties on the bun bottoms. Place the tops of the buns on the sliders and serve.
- Combine the vinegar, sugar, salt, pickling spice and 1 cup water in a medium saucepan. Bring to a simmer over medium-high heat. Add the onions to the pan and stir to combine. Bring back to a simmer, then turn off the heat and allow to cool to room temperature. Transfer to a resealable container and refrigerate overnight or up to 2 weeks.
LAMB SLIDERS
Quick, easy, and fun way to get acquainted with lamb! This recipe is best if domestic lamb is used, as it is much more mild and flavorful than imported lamb. The spices are the typical spices used in Mediterranean cooking of lamb. Makes 2-ounce patties.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix garlic, cumin, coriander, allspice, salt, and pepper together in a bowl; add lamb and mix well. Form mixture into 2-ounce patties.
- Grill patties on the preheated grill until cooked through, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Place rolls on the grill and heat until toasted, 1 to 2 minutes.
- Layer spinach, tzatziki sauce, lamb patty, red onion, and feta cheese in each roll, creating a slider.

SPICED LAMB BURGERS
This recipe came from a revelation in the '70s, when my friend Semeon Tsalbins introduced me to the lamb burger. It is ground lamb - shoulder is best - highly seasoned and grilled rare. Because lamb is the most full-flavored of the everyday meats, it makes a more delicious plain burger than beef. Cooked with nothing but salt, it's fantastic. Cooked with a variety of spices, as it is here, it's a game-changer. You can also stuff the burger, as Mr. Tsalbins does on occasion, with smoked mozzarella.

- If grilling or broiling, heat should be medium-high and rack about 4 inches from fire. Put lamb and onion into a food processor (in batches if your machine is small) and pulse until coarsely ground. Put in a bowl with chili, coriander, cumin and turmeric, and sprinkle with salt and pepper. Mix, handling the meat as little as possible, until combined. Taste and adjust seasonings. Handling meat as lightly as possible to avoid compressing it, shape it into 4 or more burgers.
- To broil or grill, cook about 3 minutes on each side for rare and another minute per side for each increasing stage of doneness. For stovetop, heat a large skillet over medium heat for 2 or 3 minutes, then add patties; cook, undisturbed, for about 2 minutes, then rotate them so they brown evenly. Turn once and cook for a total of about 6 minutes for rare.
- Garnish with diced mango, green and red pepper, red onion and scallion, and with shredded carrot and lettuce.

Seasoned ground lamb with a delicious Feta sauce, great for parties or light snacks! My version of the best Gyro ever

Steps:
- In a food processor, combine shallots garlic and mint leaves and pulse until very finely shopped.
- Combine beef and lamb on a cutting board until well mixed. Form into a large rectangle patty.
- layer on the mint shallots and garlic.
- Sprinkle on cinnamon allspice cumin, cayenne and salt and pepper and half the grated lemon zest. With your hands fold the large patty again and again until the meat has evenly incorporated all of the herbs and spices. Wrap and refrigerate over night.
- In a food processor, add the feta cheese, mayonnaise, cream cheese, olive oil, with the other half of the cayenne pepper and lemon zest. Process until smooth. Add chopped green onion and refrigerate over night. Bring to room temperature before serving.
- Form meat into 24 small patties around 1.25 ounces each. Brush each with a little canola oil on both sides and grill over medium heat 2-3 minutes per side.
- To serve, put one patty in 1/2 tortilla with one or two teaspoons of the Feta sauce and garnish with a half slice of tomato.

STUFFED SLIDERS YOUR WAY
Treat this recipe as a basic template from which to have a blast mixing and matching different meats with different cheeses. The Parmesan is a must and not an option to switch out; it's the magic ingredient that will make the meat more savory and any cheese you stuff in your slider taste cheesier. The recipe can be halved or doubled easily, so if there are a lot of kids in your crowd, you might want to cut back on the number you make. If a bunch of your drinking buddies are on their way over, however, you'll likely want to do 1 1/2 times the recipe, or even double it. We've given you suggestions for toppers and meat-and-cheese combinations, but those are just ideas to get your imagination going. If the weather is cooperative, fire up your grill, but if you are grill-less, the broiler does a fine job. Any which way you do it, you can't help but have fun!

- Gently combine meat, eggs, cheese, parsley, garlic, 1 teaspoon salt and 1/2 teaspoon pepper with your hands. (Do not overmix).
- Form scant 1/4 cupfuls of meat mixture into about 30 meatballs. Push a cheese cube into center of each ball and encase meat around cheese, then slightly flatten each ball to a 2-inch diameter.
- Broiler directions:
- Preheat broiler. Put half of sliders on an oiled rack of a broiler pan and broil, turning over once, until just cooked through (no longer pink), 4 to 8 minutes total. Repeat with remaining sliders.
- Grill directions:
- For easy entertaining, go with a gas grill. Preheat all burners on high, covered, 10 minutes, then adjust heat to medium-high. Grill sliders, in batches if necessary, turning once, until just cooked through, 4 to 8 minutes total.
- Make sliders with toppings and rolls.

- To make watercress pesto simply combine a clove of garlic (roughly chopped) and about a one-inch square of parmesan or reggiano also roughly chopped in the bowl of a food processesor. Process about ten seconds then add a bunch of watercress (about a cup and a half, trimmed of its largest stems and about a tablespoon of extra virgin olive oil. Process other five or so seconds and then add 2-3 T of roasted pine nuts (optional) and process until smooth.
- To assemble the sandwiches cut the flat bread into two inch squares and then split them for sandwiches.
- Slather the bottom half with goat cheese and thinly coat the top half with harissa. Add the lamb, top with a generous amount of watercress, and complete assembly.
