APPLE COFFEE CAKE WITH CRUMBLE TOPPING AND BROWN SUGAR GLAZE
Steps:
- Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
- In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
- To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
- To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

A tasty cake from Taste of the Caribbean. Posted for ZWT III. This cake is nice, but ended up a bit dry when made according to the original recipe - I reduced the amount of flour a bit and baked it for a much shorter time - may have to play around with it a bit more.

- preheat oven to 350.
- grease a 10-inch round cake pan.
- To make crumble topping:.
- mix the sugar, flour, cinnamon and coconut in a bowl, rub in butter with fingertips till mixture resembles bread crumbs. set aside.
- put the butter and sugar in a bowl and cream with an electric mixer till light and fluffy.
- beat in eggs, one at a time, beating well after each addition, adding a little of the flour if mixture begins to curdle.
- sift in half of remaining flour, mix well, then add in rest of flour and stir till smooth.
- Peel and core the apples, then grate them coarsely. Place the grated apples in a bolw and sprinkle with cinnamon, and set aside.
- spread half the cake mixture evenly over the base of the prepared pan.
- spoon the apples on top and sprinkle over half the crumb topping.
- spread the remaining cake mixture over the crumble and finally top with remaining crumble topping.
- bake for 1 hour and 10 minutes, covering cake with foil if it browns too quickly.
- leave in pan for about 5 minutes before turning out onto wire rack. serve when cool.

This recipe is from Every Day Foods. I saw it on TV, and it looked so easy, I had to make it. It's moist and full of tender and chunky apple slices, and has a rich cinnamon spice flavor. I served it still warm with a scoop of vanilla ice cream. Wow! Be sure to serve within the first day or two, as the apples will break down.

- Preheat oven to 350, and prepare the 12 cup bundt pan (grease and flour if you don't have a non-stick).
- In a medium bowl, whisk the flour, cinnamon, baking powder, salt, and baking soda together.
- In a large bowl, melt the butter in the microwave, and add brown sugar and eggs, whisking until smooth.
- Gradually whisk in dry ingredients just until combined- don't overmix.
- Fold in the apples (it will look sort of like peanut butter coated apple slices, but don't worry- the batter bakes up around the apple slices) and spoon batter into the bundt pan, smoothing the top.
- Bake until a tester inserted into the center of the cake comes out clean (about an hour).
- Cool in the pan for about 15 minutes, and invert onto a rack placed over wax paper to cool completely.
- Make the glaze by whisking the water (or apple juice) together with the confectioners' sugar adding just enough liquid to make the glaze thick but pourable.
- Drizzle glaze over completely cooled cake, and let it firm up before serving.

- Generously butter and line a 12 X 8 X 1 inch baking tin. Preheat oven to 180*C/350*F.
- Peel, core and thinly slice the apples and toss in the lemon juice. Set aside.
- Sift the flour and baking powder into a bowl. Add the butter pieces and rub in until the mixture resembles fine crumbs. Stir in the caster sugar and the grated lemon zest.
- Combine the egg and milk, mixing with a fork to break up the egg. Add to the dry ingredients, stirring with a wooden spoon to combine, then beat for 1 minute to get a soft cake batter. Turn the mixture into the prepared tin and spread evenly over the base.
- Brush the cake batter with the melted butter. Top with the apple slices in neat overlapping rows to cover all the batter. Scatter with the pecans, if using. Mix the granulated sugar and cinnamona nd sprikle evenly over the whole surface. Bake for 40 minutes.
- REmove from the oven and allow to cool for 10 to 15 minutes. Cut into squares and serve warm with ice cream.

- First, make your crumb. In a large bowl, whisk together the brown sugar, flour, salt and cinnamon until blended. Pour in the melted butter and stir to combine until moist, large clumps form. Set aside.
- Meanwhile for the cake, in the bowl of a stand mixer, cream together the butter and sugar for about 2 minutes or until light and fluffy. Add in the eggs, one at a time, then add in the vanilla and sour cream. Lastly, add in the flour, baking powder, baking soda, nutmeg and salt until a soft, thick batter forms.
- Spread HALF of the batter into the prepared pan. Batter will be thick, so work with it to spread it out. It'll only be a thin layer. Top with the chopped apples and HALF of the crumb mixture. Top with the remaining cake batter and finish with the remaining crumb mixture.

- Heat the oven to 180°C/160°C fan/gas 4. Toss the bramley apples with the lemon juice in a medium mixing bowl. In a larger mixing bowl, use an electric mixer to cream together the 225g butter, caster sugar and lemon zest until pale and fluffy. Beat in the eggs one at a time, adding a little flour with each.
- Using a large metal spoon, gently fold in the remaining flour and the cinnamon, baking powder and ground almonds. Drain the apple pieces well, pat dry with kitchen paper, then stir into the cake batter (discard any juice left in the bowl). Spoon the batter into the tin, gently level, then bake for 45 minutes.
- As soon as the cake goes in the oven, make the topping. Melt the butter in a frying pan, then add the sliced apples and cook for 2-3 minutes, turning, to caramelise. Leave to cool. In a bowl, rub the butter and flour between your fingertips to a coarse breadcrumb-like mixture. Stir in the sugar, cinnamon and a pinch of salt, then toss with the cooled apple.
- After the cake has had its 45 minutes in the oven, take it out, then sprinkle the crumble over the top and bake for 15-20 minutes. The cake is ready when the crumble topping is evenly golden brown and the cake feels firm to the touch.
