These Apple and Banana flavoured paniyaram (crispy dumplings made from leftover dosa or idli batter) can be made sweet or savoury. This easy-to-make recipe make a healthy substitute to street momos with dubious meat ingredients.

1/2 cup banana finely chopped
1/2 cup apple grated
1/2 teaspoon cinnamon
1 tablespoon mint chopped
1 1/2 tablespoon honey
2 cup dosa batter
1/2 teaspoon green cardamom powdered
1 tablespoon walnuts chopped
1 tablespoon powdered jaggery

Steps:

  • Make 2 different stuffings for dumplings, one from banana and another from apple.
  • For apple, mix grated apple with cinnamon, mint and jaggery.
  • For banana, mix chopped banana with walnuts, cardamom powder, mint and ½ tablespoon honey.
  • Heat an appa kadai or paniyaram pan (a special pan used for this dish to give it that shape.)
  • Add a teaspoon of banana and apple filling in different sections of the kadai. Now top these up with a spoon of dosa batter. Soon it will start to cook and swell up.
  • Once it swells up, quickly toss the dumpling on the other side so that both sides cook evenly. When they come out of the pan, coat these hot dumplings with a little honey and serve hot.

2 sticks (1 cup) salted butter, plus more for greasing the pan
2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough
1 1/2 cups sugar
1 teaspoon vanilla extract
8 ounces citrus-flavored soda, such as Mountain Dew (two-thirds of a 12-ounce can)
Cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

2 cups all-purpose flour, plus more for dusting
Pinch salt
3/4 cup lard, softened
4 tablespoons unsalted butter, softened
1/2 cup water
6 Granny Smith apples
1 cup brown sugar
4 tablespoons unsalted butter, cut into 12 pieces
Ground cinnamon, for sprinkling
3 cups water
2 cups granulated sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract

Steps:

  • For the pastry dough: Mix together the flour and salt in a large bowl. Add the lard and butter and mix with your hands until crumbly. Slowly add the water and mix until the dough comes together, then coat with flour to prevent sticking. Refrigerate the dough for a minimum of 2 hours and preferably overnight.
  • Preheat the oven to 375 degrees F. Roll out the dough into a 1/8-inch-thick square on a lightly floured surface, then cut the into six 7-by-7-inch squares.
  • For the apple filling: Peel and core the apples. Place an apple in the center of each dough square. Put 1 piece of butter into the center of each apple. Push some brown sugar down on top of the butter until packed tight. Put a second piece of butter on top of the sugar. Sprinkle cinnamon liberally across the dough and the filled apples. Fold opposite corners of the dough up around each apple, and then turn over and mold the rest of the dough over the apples, being careful not to leave any parts of the apples exposed. Tear off any excess dough on the bottom of each apple.
  • Place the apples in a 9-by-13-inch baking dish.
  • For the dumpling sauce: Combine the water, granulated sugar, butter and vanilla in a small saucepan and bring to a boil over high heat.
  • Ladle 1/2 cup of the dumpling sauce over each dumpling and pour the excess sauce into the baking dish. Bake until the crust is golden brown and the fruit is tender, about 35 minutes. Serve warm.

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

1 (8 ounce) can refrigerated crescent rolls
⅛ teaspoon ground cinnamon

  • Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.

75g butter
250g light brown soft sugar
3 tbsp golden syrup
6 dessert apples (about 750g), peeled, cored and sliced
double or clotted cream , to serve
200g self-raising flour
1 tsp baking powder
2 tbsp caster sugar
pinch ground cinnamon
100g cold butter , cubed
6 tbsp milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Melt the butter, sugar and golden syrup in a pan with 100ml water. Bring to a simmer, add the apples and cook for 10-15 mins until they're starting to soften - it will be quite saucy. Add a generous pinch of salt, taste and check the balance, adding more if you like. If your pan isn't ovenproof, pour into a baking dish about 20 x 30cm, or two smaller ones.
  • Tip the flour into a bowl. Mix with the baking powder, sugar, cinnamon and a pinch of salt. Rub the butter into the mixture with your fingertips until it resembles damp sand. Add the milk, stir with a cutlery knife until it starts to clump together, then use your hands to bring the dough together, picking up any flaky bits. Don't overwork it or your dumplings will be heavy. Divide into 12 golf ball-sized pieces and roll into dumplings. Arrange over the apples, leaving little gaps here and there. Sprinkle with a little extra sugar (brown or caster) and bake for 25 mins until the dumplings are puffed up and golden. Let rest for a few mins and serve with plenty of cold cream.

1 teaspoon vanilla
1/2 cup vegetable oil
2 eggs

2 teaspoons baking soda
1 teaspoon salt

2 bananas, peeled and sliced in thick circular pieces
1 cup flour
1 cup milk
1 1/2 teaspoons sugar
1 egg
1 teaspoon baking powder
2 tablespoons vegetable oil

Steps:

  • Peel and slice your bananas in small pieces.
  • In a bowl, mix flour, milk, sugar, beaten egg, baking powder and oil as directed.
  • Mix well until you get a thick mixture.
  • Slide all your chopped banana pieces into this mixture.
  • Take a deep frying saucepan or wok. Make sure you heat about half a cup of oil to the saucepan so the dumplings fry well.
  • Keep the stove on medium to high heat.
  • Using a tablespoon or wooden spoon, pick each banana piece from the bowl and pour directly into the hot oil. A little bit of the mixture will spread around the banana piece and that's good.
  • Turn each dumpling after 1-2 minutes of deep frying so both sides are done well.
  • As soon as the dumplings are golden brown, drain them on paper towel and serve hot with tea or coffee!
