WONDERFUL MEATLOAF
This is my all time favorite recipe for meatloaf. You can substitute the ketchup for barbecue sauce.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

ANNE ROSENZWEIG'S OLD-FASHIONED MEAT-AND-RICE LOAF WITH SPICED CARROTS

Steps:
- Blanch the carrots for 3 minutes to soften; drain but do not cool. Combine the chili oil, vinegar and curry powder. Toss the warm carrots in this mixture and marinate for 2 hours. Drain and set aside.
- To make the meatloaf, preheat the oven to 350 degrees. Place the onion, garlic and fresh ginger in a food processor and puree. Warm the butter over medium-high heat and saute the onion mixture until soft, about 5 minutes, stirring to avoid sticking. Remove from the heat and cool.
- In a large mixing bowl, combine the sauteed vegetables with the veal, sirloin, rice, egg, pistachio nuts and salt and pepper by hand, taking care to mush the meat as little as possible.
- Place half this mixture in a nonstick loaf pan. Top with an even layer of marinated carrots and then the rest of the meat. Press to make a solid loaf and bake for 1 hour. Allow to rest at room temperature for 20 minutes before slicing and serving with steamed rice or couscous.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

Steps:
- Place the bread in a small bowl, pour the milk over the bread, and let soak for 5 minutes.
- Put the meat in a large mixing bowl and add the remaining ingredients, including the milk-soaked bread.
- Do not squeeze the moisture out of the bread.
- Using clean hands or a large spoon, stir the mixture together until the ingredients are thoroughly blended.
- Form the mixture into a loaf about 6 inches long and e inches wide and tall.
- Set aside while you mix the sauce ingredients, or cover and refrigerate for up to 24 hours.
- Stir together all the sauce ingredients in the insert of a 5- to 7-quart slow cooker and set the meat loaf in the sauce.
- Spoon some of the sauce over the top of the meat loaf to coat it.
- Cook the meat loaf on HIGH for 1 hour.
- Decrease heat to LOW and cook until an instant-read thermometer inserted in the center of the meat loaf registers 165 degrees, 5-6 hours.
- Using two long, wide spatulas, remove the meat loaf from the slow cooker, cover with foil, and allow to rest for 15 minutes.
- Season the sauce with salt and pepper.
- Cut the meat loaf into ½ inch thick slices with a serrated knife.
- Serve with some of the sauce.

ANN'S OLD FASHIONED MEATLOAF

Steps:
- Saute vegetables in oil until carrots are soft.
- Add garlic and saute about 1-2 minutes longer.
- Remove from heat and set aside to cool.
- In a large bowl, combine beef, bread crumbs, and cooled vegetables.
- In another bowl, whisk together the eggs, salt, pepper, thyme, parsley, Worcestershire sauce and catsup until combined.
- Pour egg mixture over beef and mix with hands, handling just enough to combine evenly.
- Do not overmix, or it will be too dry.
- Pat mixture gently into greased loaf pan, but do not press down too firmly.
- Pour 1/2 cup tomato sauce evenly over the top and bake at 350 degrees for approximately 1-1/4 hours.
- Place on a wire rack and cool for 10 minutes before serving.
- Cut into thick slices and serve warm or cold with extra tomato sauce, if desired.
- I use crushed, canned tomatoes sometimes and that is very good too.
