SPAGHETTI SAUCE

5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

2 pounds potatoes
2 sticks unsalted butter (melted)
salt and pepper (to taste)
parsley (chopped to garnish)

Steps:

  • You will also need a well seasoned 9-inch non-stick or cast iron skillet, kitchen Mitts, a spatula and a hot oven.
  • You have already selected some nice uniform potatoes for this dish. They will need to be sliced carefully into ¼ inch slices. If you have access to a mandolin, this would be a great time to use it.
  • Hold the potatoes in cold water until time to assemble the casserole. They will need to be dried before assembly.
  • When done, this potato dish will be inverted (served with the bottom facing up) for service and presentation, so we will carefully select the most uniform pieces for the first layer.
  • About the butter, we will only be using the clear (clarified) part of the butter. You can go through the process of clarifying your butter or you can just slowly melt the butter and skim off and use the clear part, leaving the milky solids in the bottom of your pan.
  • Preheat your oven to 450° F.
  • To begin, heat the pan on the stove until it is warm and ladle in an ounce or so of the butter.
  • Using the most uniform potato slices, begin the circles in the center of the pan, slightly overlapping each slice.
  • Once a circle is complete, repeat but reverse direction of each circle until the surface of the pan is covered, about four circles depending on the diameter of your potatoes.
  • Season the first layer of potatoes with salt and pepper and either brush the top of the layer with or ladle some more butter on the potatoes.
  • Repeat the process until done, about four layers or so of potatoes. There will appear to be too much butter for your liking. Don't worry, you will drain that off before service and it can be used again.
  • Put the pan on the stove over medium heat for 4 or so minutes until you hear the pan sizzling. Shake the pan slightly a time or two to make sure the potatoes are not sticking.
  • Cover the pan with foil and put into the preheated oven for about 40-45 minutes, or until the potatoes are fork tended in the center. Remove the foil and cook for an additional 10 minutes uncovered.
  • Prepare a heatproof receptacle for the hot butter, maybe a clean tin can or glass dish. Holding the pan in one hand and holding the potatoes in place with a flat spatula, carefully tilt the pan over the receptacle and drain off the butter.
  • Now you will need a serving plate for presentation or a cutting board if you intend to cut into portions and serve at once.
  • Loosen the edges of the potatoes if necessary with a spatula if necessary, then hold the plate or cutting board over the skillet and quickly invert it, being conscious of the possibility of hot butter running out. (I always do this over a sink wearing Kitchen Mitts).
  • If a potato or two sticks to your pan, remove it with the spatula and place it on the mound of potatoes.
  • To serve portions, cut into wedges like a pizza and garnish with a little chopped parsley.

Here is my family spaghetti sauce recipe passed down from my grandmother in Italy - it is the best one you will ever cook - don't trust me - try it!

2 TSBP olive oil
1/2 onion (finely chopped)
4 cloves of garlic (minced)
3 28 oz. cans of Crushed Tomatoes
1 Tbsp Salt
4 Tbsp Basil
1 tsp Black pepper
1 Tbsp Sugar (optional)
1/3 cup Grated Parmesan or Romano Cheese

Steps:

  • Heat the olive oil in a 5+ qt. pot over medium heat, and add the onion.
  • Saute for 10 minutes or so, stirring often and being careful not to burn it.
  • Add the chopped or pressed garlic.
  • Heat for another one to two minutes, making sure not to burn the garlic, then add all the tomatoes, salt, black pepper, basil, and sugar. Stirring often, bring to a low boil.
  • Reduce heat to low and simmer for 2-3 hours stirring often.
  • For the first half of the simmer time, do so with the pot uncovered, then cover.
  • Add the cheese, stir in and simmer for an additional 5 minutes or so.
  • This will make the equivalent of 4-5 jars of sauce, and the cost is probably about half (and it tastes way better).

  • In a large bowl, combine the first eight ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-3/4-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake at 350° for 25-30 minutes or until a thermometer reads 160°; drain., Meanwhile, in a large saucepan, saute onion and garlic in oil until tender. Stir in the tomatoes, tomato sauce and paste, water, parsley, sugar, basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. , Add meatballs to sauce; simmer 5 minutes longer or until heated through. Serve with spaghetti.

1 large onion, finely diced

9 cups canned crushed tomatoes (plain pureed tomato sauce, no salt or flavour added)

Steps:

  • Heat a large dutch oven pot over medium high heat.
  • Add the ground beef and cook until almost completely browned, breaking it up with a wooden spoon.
  • Turn the heat to medium and add the onions, garlic, salt and pepper (to taste), parsley, basil, oregano and thyme. Saute with the beef until the onions are soft and translucent.
  • Add the wine and allow the liquid to evaporate while stirring the mixture regularly so the meat absorbs the flavour of the wine.
  • When the wine has almost evaporated, add the crushed tomatoes and stir to combine.
  • Cover and let simmer on medium-low heat for at least 30 minutes, or up to 2 hours (turn the heat to low if you plan to simmer for a long time). Stir regularly to ensure the sauce cooks evenly.
  • Prepare the pasta according to the package directions, cooking it in salted water for best results.
  • Serve the sauce over the pasta with a sprinkling of fresh parsley (if desired) and freshly grated parmesan cheese.

3/4 pound (about 2-1/2 cups) cherry tomatoes, very ripe and sweet
12 large fresh basil leaves
1/3 cup of whole almonds, lightly toasted
1 plump garlic clove, crushed and peeled
1/4 teaspoon peperoncino or to taste
1 tablespoon and 1/2 teaspoon salt
1/2 teaspoon coarse sea salt or kosher salt, or to taste, plus more for the pasta
1/2 cup extra-virgin olive oil
1 pound spaghetti
1/2 cup freshly grated Parmigiano-Reggiano or Grana Padano

Steps:

  • Rinse the cherry tomatoes and basil leaves and pat them dry.
  • Drop the tomatoes into the blender jar or food processor bowl followed by the garlic clove, the almonds, basil leaves, peperoncino and 1/2 tsp salt. Blend for a minute or more to a fine puree; scrape down the bowl and blend again if any large bits or pieces have survived.
  • With the machine still running, pour in the olive oil in a steady stream, emulsifying the puree into a thick pesto. Taste and adjust seasoning. (If you're going dress the pasta within a couple of hours, leave the pesto at room temperature. Refrigerate if you'll use it longer storage, up to 2 days, but let it return to room temperature before cooking the pasta.)
  • To cook the spaghetti, heat 6 quarts of water with 1 tablespoon salt, to the boil in the large pot. Scrape all the pesto into a big warm bowl.
  • Cook the spaghetti al dente, lift it from the cooking pot, drain briefly, and drop onto the pesto. Toss quickly to coat the spaghetti, sprinkle the cheese all over, and toss again. Serve immediately in warm bowls.

AUTHENTIC BOLOGNESE SAUCE

This delicious Authentic Bolognese Sauce or Ragu alla Bolognese is made with few ingredients and lots of patience. A true Bolognese takes time, but it is so worth it.

2 tablespoons olive oil
1 small/medium carrot
1 small celery stalk
1 small onion
10 1/2 ounces ground beef (not too lean)
10 1/2 ounces ground pork
1/2 cup dry red wine
2 tablespoons tomato paste
2 1/4 cups tomato puree (passata)
2-3 pinches salt
2 dashes pepper
1-2 whole bay leaves
1/3 cup milk (2 % or whole milk)

Steps:

  • Cut the carrot, celery and onion very fine (must not too much that it becomes pulpy when cooked).
  • In a medium to large heavy pot add the olive oil and chopped vegetables, cook covered on low heat (stirring occasionally) until onion is transparent.
  • Increase the heat to medium and add the ground beef and pork. Stirring as the meat is cooking to break up the pieces. Once the meat has browned turned the heat up to high and add the wine.
  • Cook until the alcohol has evaporated (about 20-30 seconds) and the liquid has evaporated. Decrease the heat to medium/low and add the tomato paste, puree, salt, pepper and bay leaf. Gradually decrease the heat to the lowest setting cover and let simmer for three hours (the mixture should not boil). Stir occasionally.
  • After the time has passed remove the bay leaf and add the milk, heat thoroughly for a couple of minutes. Serve over cooked pasta. Enjoy!
