ANISE WAFFLE COOKIES

This is a waffle cookie seasoned with anise seed and anise oil. It is baked on a waffle iron. It is not a really sweet cookie, but it was sent to soldiers during WWII because they keep well and the flavor seems to get better with each passing day. Lasts about 2 weeks unrefrigerated. Handed down from my German-Swiss grandmother. You can also use lemon or vanilla flavoring instead of the anise seed and oil; of course, it changes the flavor completely, but if you're looking for a nice 'not too sweet' cookie, this recipe is a good place to start. My children love making these - it's fun, it's easy.

3 cups all-purpose flour, or as needed
1 tablespoon anise seed
½ teaspoon salt
½ cup shortening
½ cup white sugar
2 tablespoons white sugar
3 small eggs
1 drop anise oil
½ cup confectioners' sugar, or as needed

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Whisk together flour, anise seed, and salt in a bowl.
  • In a separate bowl, mash the shortening until creamy, and stir with all of the sugar, eggs, and anise oil until thoroughly mixed. Stir the flour mixture into the wet ingredients to form a dough. Break off about 1 tablespoon of dough per cookie, and roll into 1-inch balls.
  • Spray the waffle iron with cooking spray. Place dough balls onto the iron, close the lid, and bake until the iron stops emitting steam and the cookies are lightly golden brown, 1 to 3 minutes. Check after about 1 minute. Remove the cookies from the iron and sprinkle with confectioners' sugar while still warm. Cool on wire rack.

Hailing from the Abruzzo region of central Italy, these wafer cookies get their intricate shape by cooking a waffle-like batter between two hot iron plates. Martha flavors hers with toasted anise seeds and anise extract.

1 1/4 teaspoons anise seeds
1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 large eggs
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon pure anise extract
5 tablespoons unsalted butter, melted and cooled
Confectioners' sugar (optional)

Steps:

  • Heat a nonstick pizzelle iron. In a small skillet, toast anise seeds over high heat, stirring, until fragrant, about 1 minute. Transfer seeds to a spice grinder, let cool, and finely grind. Scrape into a medium bowl; whisk together with flour, baking powder, and salt.
  • In a large bowl, whisk together eggs and granulated sugar until well combined. Whisk in vanilla and anise extracts. Slowly add cooled butter in a steady stream, whisking continuously, until batter is smooth. Stir in flour mixture until just combined (do not overmix).
  • Transfer batter to a piping bag fitted with a 1/2-inch round tip. Pipe about 2 tablespoons batter in a circle around the center of each pattern on the heated pizzelle iron. Close and seal with clasp. Cook until golden brown, about 45 seconds. Using a small spatula, release and remove cookie. Using kitchen shears or a 4 1/2-inch ring mold, trim any ragged edges, if desired. Transfer cookie to a wire rack to cool. Repeat with remaining batter. Dust cooled cookies with confectioners' sugar, if desired.

This recipe is from Great Nana. She said it was originally from her best friend, Jean, and tastes exactly like the ones her mother-in-law always made, so it became her preferred version. You need a pizelle maker in order to make this recipe. I accidentally added almond extract and thought it tasted great, but Nana did not use it.

6 large eggs, beaten
2 cups granulated sugar
1/2 cup margarine, melted (not butter)
1/2 cup canola oil
1 teaspoon vanilla, to taste
1 teaspoon almond extract, to taste (optional)
3 tablespoons anise extract (one whole 1 ounce bottle)
4 cups all-purpose white flour
4 teaspoons baking powder
powdered sugar, to dust cookies (optional)

Steps:

  • Prepare pizelle iron according to manufacture's instructions.
  • Beat eggs well with sugar, then blend in the slightly cooled melted margarine.
  • Add oil, extracts, baking powder, and flour (add this 1 cup at a time, mixing in slowly).
  • Pour small ladlefuls of batter onto your heated pizelle iron and cook for just 30 seconds to 1 minute or according to the directions on your pizelle iron.
  • They will be lightly golden when cooked, but still soft -- remove quickly with tongs to a cooling rack.
  • As the next cookie is baking, the first cookie will cool and get crisp -- dust both sides withpowderd sugar, and remove to plate.
  • Serve with coffee.

1 cup shortening
1 cup white sugar
6 eggs
1 ½ teaspoons anise extract
4 cups all-purpose flour
4 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the shortening, sugar and eggs until smooth. Stir in the anise extract. Combine the flour and baking powder; stir into the wet ingredients. Scoop out spoonfuls and roll into balls. Place balls 2 inches apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Frost when cool if desired.

1 cup butter or 1 cup margarine
1 cup sugar
1 tablespoon vanilla
1/2 teaspoon salt
2 eggs (or equivalent)
2 1/4 cups flour

Steps:

  • Preheat waffle maker.
  • Place butter and sugar in a large mixing bowl.
  • Cream together on med-low.
  • Add vanilla and salt, increase speed to medium.
  • Add eggs and mix until smooth.
  • Decrease speed to low, add flour and mix well.
  • Divide batter into 4 3/4 cup portions.
  • Using one portion, drop batter on each corner of the grids.
  • Close waffle maker and bake until steam no longer escapes (about 3-5 min).
  • Carefully remove waffle from maker and allow to cool.
  • Serve plain or with your favorite fruit filling and whipped cream.

  • Melt the palm fat in a pot. Place it into a bowl and leave it to cool down at room temperature. Now place the star anis seeds into a frying pan without any fat, and roast them until they are light yellow. Leave them to cool and then crumble them to a fine powder with a pestle and mortar. Mix the flour, corn flour, baking powder and anis seeds.
  • With an electric hand mixer mix in the sugar, vanilla flavouring, 1 pinch of salt and palm fat. Add the eggs one by one. Now add the flour mixture and mix to a smooth though.
  • Heat up your waffle maker and brush it with a little oil. Scoop our about 1/5 of the dough and bake them golden brown. Let them cool on a plate. Now produce more waffles with the rest of the though. Break the waffles into heart shaped pieces, and keep them in a biscuit tin until you are ready to eat them.
