ANGELINE'S CHICKEN NUGGETS
this recipe is very easy it turned out the first time i made it , its my very own recipe so enjoy. when i eat these they go well with my semi- home made baked beans

Steps:
- Cut skinless, boneless, chicken breast into 1 inch cubes set aside
- prepare buttermilk biscuit mix with seasonings in a medium to large bowl
- put a few cubes of chicken in flour mixture making sure that they are completely covered
- place on plate and repeat step 3 til all chicken cubes are covered well
- in frying pan heat small amount of vegetale oil on medium to medium high on top of stove
- when oil is hot place chicken cubes in pan leaving room to turn chicken pieces (dont allow oil to boil over)
- when chicken pieces are golden brown turn pieces til all sides are golden brown, dont allow the chicken to stick to pan (adding vegetable oil as needed)
- place in bowl with cover so that when you finish the remaining pieces your nuggets stay warm

- Pulse 2 1/2 cups corn flakes in a food processor until fine crumbs form (or take a rolling pin to them in a large zip-loc bag). In a shallow bowl, stir together 3/4 cup crumbs and 1/4 cup finely grated parmesan.
- In the bowl of your clean food processor or high powered blender, combine 1 lb chicken pieces, 1 Tbsp potato flakes, 1/3 cup water, 1 tsp garlic salt, and 1/8 tsp black pepper. Pulse until chicken is finely chopped.
- With wet hands, roll and flatten chicken into small nugget patties, using about 1 Tbsp of the meat mixture for each nugget. Roll the nugget into bread crumbs, pressing gently for crumbs to adhere. (Freezing Tip: You can freeze them once they are breaded; freeze them flat for 1 hour, then transfer to ziploc bags and store up to 3 months. When ready to bake them, bake frozen nuggets as directed in step 4).

- Cut the chicken into bite-sized pieces. Put the pieces on a layer of cling film, cover with another layer of cling film, then use a rolling pin to bash the pieces until around 2-3mm thick and uniform.
- You can either cook the chicken nuggets in a frying pan or in the oven. If you're not pan-frying, heat the oven to 220C/200C fan/gas 7 and lightly oil two baking trays.
- Tip the flour onto a plate and mix with a pinch of salt. Put the beaten egg in a bowl, and tip the breadcrumbs into another bowl.
- Dip each chicken piece in the flour, then into the egg (shaking off the excess), and finally toss in the breadcrumbs and transfer to the lightly oiled baking tray.
- If cooking the nuggets in the oven, bake for 10-15 mins, turning halfway through. If pan-frying, heat the oil in a large frying pan over a high heat and cook the nuggets in two or three batches for 3-4 mins on each side until golden.
