BLUSHING ANGEL HAIR PASTA

3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

10 medium tomatoes, chopped
1 onion, chopped
1 bunch fresh basil, thinly sliced, plus extra
fresh basil, for garnish
1/4 cup red wine vinegar
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon sugar
1 (1 lb) package angel hair pasta
8 ounces part-skim mozzarella cheese, grated

Steps:

  • In a large bowl, combine the tomatoes, onion, basil, vinegar, olive oil, garlic, and sugar.
  • Cover the bowl with plastic wrap and let it stand at room temperature for at least 4 hours.
  • When the sauce is ready, cook the pasta according to the package directions, and drain.
  • Transfer the pasta to a large serving bowl, and cover with the sauce and cheese.
  • Gently toss to mix well.

- 1 tbsp. olive oil
- 2 skinless boneless chicken breast halves, cut into 1 inch cubes
- 2 garlic cloves, minced
- 4 tbsp butter
- 2 lbs. tomatoes, 1 1/2 lbs. pureed in blender and 1/2 lb. cut in half
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 12 oz angel hair pasta
- 3/4 cup half and half
- 2 tbsp. choppede fresh basil
- 1/4 cup grated parmesan cheese

Steps:

  • Heat olive oil in skillet over medium heat; add chicken and half of the garlic. Cook, stirring, til chicken is cooked through. Remove from skillet;
  • In another skillet, heat butter over medium heat. Add remaining garlic and cook, stirring for 1 minute. add pureed tomatoes, salt and pepper. Cook til sauce is thickened
  • Meanwhile, cook pasta as pkg. directs. Add half and half and basil to skillet. Add chicken and 1/2 lb. halved tomatoes. Cook for 2 minutes. Pour sauce over pasta and serve. Garnish with Parmesan . Serves 4

29 ounces canned diced tomatoes (Del Monte Basil, Garlic & Oregano)
12 ounces fat-free evaporated milk
2 tablespoons all-purpose flour
2 teaspoons dried basil
2 teaspoons ground red pepper
20 large shrimp
8 ounces uncooked angel hair pasta
8 ounces fresh mushrooms

Steps:

  • Pour olive oil in large non-stick skillet. Add minced garlic, diced onion and quartered fresh mushrooms when onions are translucent adde tomatoes and basil Allow to simmer for about 10 minutes.
  • Boil water for pasta in a separate pot.
  • In a small bowl combine evaporated milk and flour with a small whisk. Add mixture to skillet and allow to simmer for 5-10 minutes until sauce is pink and well combined.
  • Cook pasta while sauce is simmering.
  • Add peeled and deveined shrimp to the sauce mixture and allow to cook for about three minutes or until shrimp is light pink.
  • Drain pasta and serve sauce over angel hair pasta.
